The following support document includes demographic data from my dissertation research, disaggregated to preserve the anonymity of respondents. It also includes two separate interview schedules for semi-structured interviews I conducted with trans women who were either currently parents (the first guide) or who want to be parents in the future (the second guide). My dissertation examines how race, class, and gender shape trans women’s parenting journeys. This chapter focuses on the role of the child life specialist working with families affected by incarceration. Children and families are at increased risk due to trauma exacerbated by arrests, incarceration, and re-entry. This chapter will focus on the ways a child life specialist working in jails, prisons, detention centers, and in communities with schools, non-profits, and faith-based organizations can provide developmentally appropriate explanations, preparation, play, expressive arts, and coping, facilitating opportunities that foster relationships and understanding while promoting resilience.

Researchers tested several vegan egg replacements in cookies to find one that resulted in product most similar to a cookie with eggs. It was hypothesized that flaxseed would be the best overall scoring egg replacement for vegan, egg-free chocolate chip cookies. Each egg replacement was tested in a controlled environment while recording the times and temperatures of each baking trial. The flaxseed egg replacement cookie scored closest to the control cookie after being evaluated.

The purpose of this study was to create a completely low-carb alternative to a conventional pizza crust, lower the sugars/carbs, provide nutritional value, and still produce an acceptable and palatable result. The target population is people who want to live a whole food driven diet, those who are plant-based, and for those who have high cholesterol and heart disease.

The Standard American Diet includes high intakes of processed foods and saturated fat. The Standard American Diet has been implicated in contributing to the health challenges experienced in the United States such as obesity and chronic pain. The goal of this experiment is to reduce the fat content of cream sauce and receive similar scores among a group of panelists/taste testers in flavor, texture, appearance, and overall likeability to a full fat sauce. There are diaries from three individuals from the Cuthbertson Family: Mary Kirkwood; Jessie Smith Cuthbertson; and William C. Cuthbertson.

Mary Kirkwood (1858-1945) was born in Illinois in 1858 to native Scots, Matthew J. Kirkwood and his wife, Janet Craig Kirkwood. At an unknown date, the family moved to Girard, Kansas in southeast Kansas. Mary Kirkwood married Andrew W. Smith, and their daughter, Jessie Smith, was born in 1889 in Kansas. Felitti et al., (1985; 1998) developed Adverse Childhood Experiences test (ACEs), after researching adults suffering from obesity and addictive overeating. Positive correlations were linked with traumatic childhood experiences, such as severe physical, sexual and mental abuse with those participants struggling with obesity. ACEs is widely accepted in the field of psychology, proving individuals with higher ACEs scores indicate higher probability for mental illness and high risk deviant like substance abuse and felony crime. Lactose intolerance is due to the deficiency of an enzyme (i.e. lactase) that breaks down the milk sugar called lactose. Lactose is commonly found in milk, cheese, yogurt, etc.

Diabetes is a chronic medical condition in which sugar, or glucose, levels build up in your bloodstream. Controlling blood sugar levels can be especially difficult, specifically adjusting to new eating habits and limiting sugar intake. The hypothesis of this study is that by replacing sugar with sugar substitutes, an acceptable angel food cake can be made with an improved nutritional profile (lower carbohydrate and lower sugar content) for the diabetic population.  The researchers feel they met their goal based upon scorecard data and overall outcome.

Celiac Disease is an autoimmune disorder where the body attacks the lining of the small intestine after the ingestion of gluten. A gluten-free diet is the most effective form of treatment for those with Celiac Disease, gluten-allergy, or gluten sensitivity. Gluten is a protein found in wheat, barley, and rye.

CCIDS staff worked with a parent organization to develop a plan for evaluation of a residential alternative for their adult children that included pre-post quantitative and qualitative measures of resident quality of life and a review of planning documents. A quality of life survey was administered separately to residents and parents shortly before their move into the new residence and about one year after their move. CCIDS also provided training for agency staff, parents, and residents on authentic person-centered planning and facilitating community connections.
