Evaluation Of The Performance Of Tn Integrated Food Safety Center Of Excellence Online Training Courses, Amal S. Humidat

Masters Theses

Foodborne disease outbreaks are still a challenge in the United States even with the improvements that are continuously made to the food integrity system. The Center for Agriculture and Food Security and Preparedness (CAFSP), in conjunction with the Tennessee Integrated Food Safety Center of Excellence, has developed two web-based courses to support investigation of foodborne illnesses. These courses are entitled as “Foodborne Outbreak Investigation and Response Team Roles and Responsibilities, Part A and B” respectively. Farm-To-Preschool In East Tennessee: Evaluation Of A Small-Scale Farmer’S Market At A Childcare Center On Household Fruit And Vegetable Availability And Preschoolers’ Consumption Of Fruits And Vegetables, Jade Morgan Parry Aug 2016

Farm-To-Preschool In East Tennessee: Evaluation Of A Small-Scale Farmer’S Market At A Childcare Center On Household Fruit And Vegetable Availability And Preschoolers’ Consumption Of Fruits And Vegetables, Jade Morgan Parry

Masters Theses

Background: Most preschool-aged children do not consume an adequate amount of fruits and vegetables (F&V). Accessibility to F&V and parental influence are important factors in determining fruit and vegetable consumption in preschool-aged children. The incorporation of farmer’s markets at childcare centers as part of a farm-to-preschool program provides an opportunity to increase access to F&V and engage parents in supporting positive changes in their children’s dietary behaviors. Gaps in the farm-to-preschool literature include a lack of well-designed intervention trials that include a control group and rigorous evaluation tools.

Methods: This was a pilot study with a quasi-experimental, pre-test, post-test …

Antidepressant Use And Risk Of Colorectal Cancer In The Women's Health Initative, Jenna F. Kiridly Jul 2016

Antidepressant Use And Risk Of Colorectal Cancer In The Women's Health Initative, Jenna F. Kiridly

Masters Theses

Colorectal cancer is the third most common cancer among U.S. women; 63,610 new cases were estimated to have occurred in 2015. Prior studies found a reduced risk of colorectal cancer among antidepressant (AD) users, however, none adjusted for depression, which is itself linked to increased colorectal cancer risk and could confound this relationship. We assessed the relationship between ADs and AD drug classes with risk of colorectal cancer in a prospective cohort of 145,190 women between the ages of 50-79 without a previous history of cancer at enrollment. Current AD use was assessed at baseline. Over an average follow-up of …

The Adoption Of Harm Reduction By Abstinence Program Staff: A Qualitative Analysis, Morgan Coe Jul 2016

The Adoption Of Harm Reduction By Abstinence Program Staff: A Qualitative Analysis, Morgan Coe

Masters Theses

Opioid overdose fatalities have quadrupled in the United States since the turn of the century, and are becoming increasingly recognized as a nationwide epidemic. While naloxone (narcan) has long been the standard treatment for overdose in clinical settings, it has not been issued to opioid users or their family members in the U.S. until relatively recently. As naloxone distribution and overdose training become more widespread, they are being incorporated into more and more abstinence-oriented settings including detoxes, halfway houses, and outpatient methadone and suboxone treatment programs. This qualitative study explored whether the staff at such programs found that training their …

Do Increases In Fruit Intake Lead To Substitutive Eating Patterns And Decreases In Overall Energy Intake In Normal Weight Adults?, Shireen Amanda Sobhani Aug 2015

Do Increases In Fruit Intake Lead To Substitutive Eating Patterns And Decreases In Overall Energy Intake In Normal Weight Adults?, Shireen Amanda Sobhani

Masters Theses

Background: It is suggested that increasing intake of fruits and vegetables may lead to decreased energy intake via substitution of higher energy-dense foods, such as snack foods (SF; i.e. candy, chips, cookies). This study investigated the impact of increasing fruit (F; grapes) intake, via increased portion size, on SF (potato chips) intake during a meal and whether increases in F intake affected total meal energy intake, via reducing SF intake (substitutive eating), in normal-weight adults. A secondary objective investigated whether the relative reinforcing value (RRV) of SF was a moderator of the substitutive relationship between F and SF.

Methods: Using …

Organizational Cultural Competence Assessment Of Health-Related Academic Units, Alviony Febrina Pangloli May 2012

Organizational Cultural Competence Assessment Of Health-Related Academic Units, Alviony Febrina Pangloli

Masters Theses

The US is increasingly becoming more diverse; however, racial and ethnic minorities are more likely to experience health disparities and poor health outcomes. To better respond to the needs of diverse populations, cultural competence training for future health professionals is needed. Important to the cultural competence of individuals is organizational cultural competence. Models and recommendations have been developed to apply cultural competence education and training formally in government agencies, health care organizations, and academia. An increasing number of high schools in the United States have begun to use the "Baby Think It Over" doll as part of their curriculum in certain classes. This study examined the effectiveness of this doll on influencing 46 male and female adolescents' attitudes and behaviors regarding pregnancy, sexual activity, and contraceptives. Five specific subscales were developed to measure the teens' contraceptive attitudes and behaviors before and after using the doll regarding their feelings about becoming pregnant, understanding/comprehension of the responsibilities of child-rearing, appreciation of the impact of child-bearing on their lives/future, and attitudes toward premarital sex. Also, a qualitative …
