Rates of food insecurity in Canada’s northern Indigenous communities are at levels that should constitute an emergency. Dominant explanations for these high rates of food insecurity often ignore the ongoing impacts of colonization and over-emphasize individual choices and nutritional guidelines developed by outsiders. The importance of holistic community health is ignored, along with the cultural and social values and practices that support community health and well-being, including traditional food systems. The 2020 pandemic and economic crisis showcased the fragility of the American food system. In the months of quarantine and lockdowns, a growing number of Americans searched for ways to feed themselves and their families. Community-based and volunteer-supported feeding programs worked to bridge the divide between the hungry and their next meal. In many cases, these programs rely on an unpaid workforce and donations – of time, food, and facilities. With limited resources, volunteer-led programs often lack centralized training options; this guidebook seeks to fill that void. The Double Your Dollar (DYD) Program is a program that gives Supplemental Nutrition Assistance Program (SNAP) beneficiaries and Senior Farmers’ Market Nutrition Program (SFMNP) participants match dollars to spend at local farmers markets. Users are able to spend these dollars on fruits, vegetables, eggs, meats, dairy, jam/jelly, honey and food producing plants. DYD’s goal is to incentivize healthy eating among individuals of low income, promote local purchases, and increase spending at farmers markets. The venture began as a "community-led" effort in partnership with Janus Youth Programs and Home Forward. More than 4%, 26%, and 70% of children with protein malnutrition live in Latin America/the Caribbean, Africa, and Asia, respectively. The objective of this research was to develop a novel snack made with millet, black eye bean (from Niger Republic), and rice flour fortified with soybean meal protein using extrusion technology. The purpose of this study was to assess the demographics and spending behavior of attendees at San Luis Obispo’s downtown Farmers’ Market. With the current 2011 economic recession in America, this study evaluated its affect on the Farmers’ Market attendee demographics and purchasing motivations. Using a questionnaire distributed to 200 participants at Farmers’ Market, this study concluded that most people are motivated by price when shopping for produce and the majority of Farmers’ Market attendees’ spending behaviors have been affected by the economic recession.
