Food insecurity and malnutrition are significant public health concerns among older adults. Over the past two decades, the number of older adults in the U.S. who are food insecure has more than doubled (Ziliak & Gunderson, 2022). During the first year of the COVID-19 pandemic, deaths among older adults due to malnutrition increased in Minnesota (Olson, 2023). Food insecurity among older adults is associated with numerous health issues, isolation, and increased health costs (ACL, 2021).

Aim: The primary aim of this thesis was to investigate the relationship between nutrition and frailty in Irish older adults. The nutritional status, dietary quality and perceived barriers/motivators to nutrition were also examined, and a frailty intervention protocol was designed. Methods: Cross-sectional study in Irish community-dwelling adults aged ≥65 years. Nutritional status, dietary intake, functional mobility and food choice motivators/healthy eating barriers were assessed using the Mini Nutritional Assessment – Short Form (MNA-SF), a food frequency questionnaire (FFQ), the Timed Up and Go (TUG) test and a custom designed 2-item questionnaire, respectively. The global population, including the United States, is experiencing a demographic shift with the proportion of older adults (aged ≥ 65 years) growing faster than any other age group. This demographic group is at higher risk for developing nutrition-related chronic conditions such as heart disease and diabetes as well as infections such as influenza and pneumonia. As a result, an emphasis on nutrition is instrumental for disease risk reduction. Nutrition is important in all stages of life, especially in the later years. The purpose of this study was to analyze the food offerings from local assisted living facilities on a nutritional basis. Upon collecting weekly food menus, they were evaluated based on the 2015-2020 Dietary Guidelines for Americans (DGAs) in the domains of food groups, food variety, and excess fats, sugars, and salt. Not a single facility met the DGA requirements completely in food groups or food variety. The food groups facilities were most deficient in were fruits and dairy. The purpose of this study was to test the hypothesis that muscular fitness is preserved in older adults who consumed pork daily as a part of the DASH dietary pattern. A controlled feeding pilot study was used to test this. Eight healthy older men and women were randomly assigned to consume either 3 ounces or 6 ounces of pork daily as a part of the DASH diet for a total of 12 weeks. Indicators of muscle mass, strength, and function were assessed at five time points (weeks 0, 3, 6, 9, 12) throughout the 12 weeks. A seven day cyclical …

Color Your Plate Nutrition Intervention: Using Exposure Interventions To Increase Fruit And Vegetable Intake In Older Adults Attending Congregate Meal Sites, Alyson D. Humphrey

The aims of the Color Your Plate nutrition intervention were to increase intake of fruits and vegetables and increase motivators and decrease barriers to consuming fruits and vegetables rich in older-adults who regularly attend congregate meal sites. In this quasiexperimental pilot study, a convenience sample (n=35) of older adults at two intervention and two control sites completed pre- and post-surveys. Following the five-lesson curriculum, intervention participants reported greater intakes of fruits and vegetables (mean change increase of 3.47 ± 2.38 servings/week) and significant increases in days having consumed 4.5 cups or more of fruits and vegetables (p=.0004), incorporation of fruits …

Dietary intake is one of the modifiable factors that may affect older adults’ cognitive function in their later years. Very little research has considered the potential role of dairy products on cognitive function. Purpose: To determine the nutrient adequacy of the diet of older adults living in a retirement community (RC). Methods: Residents were surveyed using a 21-item Health Questionnaire and Three Day Food Records were used to estimate the adequacy of their diets. Food records were analyzed using ESHA Food Processor®; all data were tabulated and analyzed using SPSS version 19 software. Results: Response rate, 28.7%; mean age, 86 ± 8.1 years; mean BMI, 25.6 ± 4.6 kg/m2; polypharmacy, 75%; health conditions (most nutrition-related), 75%; 60% performed between 30-150 min of physical activity/week.
