Abstract: Alzheimer’s Disease (AD) is a complex neurodegenerative disease that requires interprofessional collaboration. Pharmacological options are currently ineffective, increasing the need for preventative strategies to combat the rise of AD. Considerations of gut-targeted interventions have increased as a key component in the prevention of AD, based on the understanding that the state of the gut microbiome can impact cognitive function through the pathway known as the gut-brain axis.

Methods: This scoping review explored information on the gut-brain axis in persons with AD. A comprehensive search was conducted in November 2023. Forty reviews and 13 human studies were analyzed.

This research aimed to explore the roles of food security status (FSS), financial literacy (FL), and nutrition literacy (NL) on the diet quality (DQ) of college students at the University of Maine. This research additionally sought to understand mediational relationships among these factors that could impact DQ.

A cross-sectional convenience sample of college students completed an online questionnaire assessing sociodemographic factors, short healthy eating index (sHEI)-score, FSS, FL, and NL. Breastfeeding rates in America are lower than other high-income countries, with Mississippi having one of the lowest rates. A survey using the Iowa Infant Feeding Attitude Scale (IIFAS) was distributed twice to Mississippi State University students to understand their breastfeeding attitudes. Attitudes were determined by calculating a composite score and conducting statistical tests for significance. Knowledge between health and non-health related majors were explored by using five statements, and attitudes towards the statement “Breastmilk is the ideal food for babies” were compared across demographics. Stakeholders sought to reduce the burden of preventable diabetes among adults in Utah via a “Food as Medicine” webinar series. The “Food as Medicine” webinar series sought to increase awareness of and enrollment in public diabetes programs. Evaluation results from the webinar series indicated an increase in awareness of diabetes programs and nutrition information needed to improve personal diabetes management.

Because FCS agents teach communities about dietary guidelines, it is important that they are aware of the latest nutrition research. This study assessed FCS agents’ knowledge of popular fad diets (low-carbohydrate, intermittent fasting, detoxes and cleanses) and their potential adverse effects, and its relationship among location, certifications, years of experience, professional association memberships, and education. Agents in Louisiana, Texas, Arkansas, and Mississippi were emailed a survey. RDN, DTR, and CHES certifications had significant associations (p = 0.03) with knowledge of adverse effects of fad diets. Agents who hold these credentials may have more knowledge about adverse effects of fad diets.

Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. The purpose of this study is to examine if we can differentiate inflammaging between sarcopenic and non-sarcopenic older adults by exploring if there are differences between biomarkers of inflammation and nutritional status in older adults with distinct differences in skeletal muscle mass, strength, and function, metabolic flexibility, and muscle tissue oxygenation. Twenty-one non-sarcopenic (mean±standard deviation, age = 73.1±6.2 yrs, n=5 males, n=5 females) and sarcopenic (age = 81.2±10.5 yrs, n=6 males, n=5 females) were categorized based on muscle mass and strength criteria according to the European Working Group on Sarcopenia in Older People. One program, Dining with Diabetes (DWD), stands out for its dissemination to multiple states. The nutritional status, dietary quality and perceived barriers/motivators to nutrition were also examined, and a frailty intervention protocol was designed. Objective To investigate the associations between such atherogenic markers and the degree of HL using continuous NHANES data from cycle years 2011-2012 and 2015-2016.

Design, Study, and Participants This observational study used data from two National Health and Nutrition Examination Survey (NHANES) cycle years 2011-2012 and 2015-2016. There is growing evidence of the importance of gut health & the microbiome’s link to several aspects of health, including the immune system, mental health, and metabolic syndrome. As higher education becomes more attainable to all populations, college students from low-income backgrounds are at an increased risk of food insecurity due to the financial burdens that come with the transition to college. Food insecurity on U.S. college campuses ranges up to 59%, quadrupling the average national household food insecurity rate of 14%. In college students, food insecurity is correlated with unhealthy eating, alcohol use, and mental health issues.
