Food insecurity and malnutrition are significant public health concerns among older adults. Over the past two decades, the number of older adults in the U.S. who are food insecure has more than doubled (Ziliak & Gunderson, 2022). During the first year of the COVID-19 pandemic, deaths among older adults due to malnutrition increased in Minnesota (Olson, 2023). Food insecurity among older adults is associated with numerous health issues, isolation, and increased health costs (ACL, 2021).

Basic Needs Initiative at California State University, Monterey Bay is a department that provides students with food, housing, and wellness resources. Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. This project adds a dietary health section to the department’s website to increase students’ access to nutrition education. It addresses the micro-level agency problem that too few students eat a healthy, balanced diet. College students with high stress levels are more likely to engage in unhealthy behaviors, which may negatively impact their health. During COVID-19, college student’s lives were disrupted on multiple levels. As higher education becomes more attainable to all populations, college students from low-income backgrounds are at an increased risk of food insecurity due to the financial burdens that come with the transition to college. Food insecurity on U.S. college campuses ranges up to 59%, quadrupling the average national household food insecurity rate of 14%. In college students, food insecurity is correlated with unhealthy eating, alcohol use, and mental health issues.

This study examined if there were differences in perceived adult health score, perceived adult diet score, parent-perceived child health score, and parent-perceived child diet score by SNAP usage and food security in a rural, Appalachian Mississippi community. Adults (n=1084) with elementary school- aged children were surveyed in a rural, Appalachian Mississippi school district. Demographic, household adult food security (USDA 10-item measure), and perceived health and dietary data were collected. Objective: The purpose of this case study was to understand the development of a food pantry for students of higher education at a Midwestern university.
Methods: The researchers recruited 11 individuals on the food pantry’s board using a snowball sampling method to participate in a 30-minute interview about the food pantry’s development from conception to implementation. The interviews were transcribed and then qualitatively analyzed by two researchers. The researchers coded interviews separately to identify frequent commonalities between participant responses. The researchers then organized the codes into themes, which were then summarized in the results of this study.

Background: Nut butter-based Ready to Use Supplemental Foods (RUSF) are an effective way to add nutrients and calories to diets of malnourished and food insecure populations. The RUSF formulations have been further modified to add micronutrients including iron and folic acid needed during pregnancy and lactation. Because docosahexaenoic acid (DHA, C22:6 n-3) enhances fetal development and birth outcomes, it has been suggested that perhaps RUSF formulations for pregnancy should also include this Omega 3 fatty acid. Background: Breakfast consumption has declined over the past 40 y and is inversely associated with obesity-related diet and health outcomes. The breakfast pattern of food pantry clients and its association with diet is unknown.

Background: The Neighborhood Produce Market (NPM) is a food distribution model similar to a mobile food pantry. NPM stakeholders observed a lack of community engagement and familiarity with produce offered.
Project Description: The objective was to develop a nutrition education curriculum for NPM volunteers to better engage families and community members by providing food samples, recipes, and nutrition education. A stakeholder steering committee guided the needs assessment, curriculum development, volunteer training, and pilot test. Objective: The purpose of this study was to determine the effects of highlighting healthy food options on consumer food choices in a food bank setting.
Methods: Two community food banks participated in this study. One food bank served as the control, while a second food bank was rearranged so that fresh produce and other healthy products were the first options that shoppers encountered upon entering. After shopping, carts were inventoried for healthy vs non-healthy products. Composition of the carts from the control food bank were then compared to the contents of the carts from the intervention food bank.

Young adults in Appalachia may face poor nutritional status due to low access to healthy food and high mental health symptoms attributed to high stress and the college environment. A cross-sectional design was used to investigate the relationship between diet intake and mental health status of this population via surveys. Participant responses (n = 1956) showed students’ mean number of depressed days over the past 30 days was 9.67 ± 8.80, and of anxious days, 14.1 ± 10.03. Emergency food pantries provide food at no cost to low-resource populations. The purpose of this study was to evaluate single-day dietary intake patterns before and after visiting a food pantry among food-secure and food-insecure pantry clients. This observational cohort study comprised a paired, before-and-after design with a pantry visit as the intervention. Participants (n = 455) completed a demographic and food security assessment, and two 24-h dietary recalls. Adult food security was measured using the U.S. Household Food Security Survey Module. Objective: To examine whether the association between soft drinks consumption and child behaviour problems differs by food security status and sleep patterns in young children.
Design: Cross-sectional observational data from the Fragile Families and Child Wellbeing Study (FFCWS), which collected information on food insecurity, soft drinks consumption, sleep patterns and child behaviour problems. Bivariate and multivariate ordinary least-squares regression analyses predicting child behaviour problems and accounting for socio-economic factors and household characteristics were performed.
Setting: Twenty urban cities in the USA with a population of 200 000 or more.

Objective: To determine the influence of Supplemental Nutrition Assistance Program (SNAP) and participant demographics on nutrition education outcomes.
Methods: At program enrollment (pre) and 1 month later (post), a statewide convenience sample of adults, who participated in the Plan, Shop, Save, and Cook program, completed a 7-item questionnaire to evaluate change in resource management skills (RMS) and running out of food before the end of the month.
Results: Percent of participants (n = 3,744) who reported behavioral improvements in RMS ranged from 38.8%in comparing prices to 54% in reading labels. Female gender and Hispanic ethnicity were positively related to pre–post …

Trends in qualitative community nutrition research demonstrate a powerful, emerging perspective in the midst of a field historically dominated by quantitative methods of inquiry. For this qualitative study, ten key respondents were purposively selected and interviewed using the Community Readiness Model (CRM) to capture community knowledge of food insecurity issues and strategies. Data were analyzed using anchored rating scales, revealing readiness at a stage three, characterized by a vague awareness of local food insecurity. Children in food-insecure households are more likely to experience poorer health function and worse academic achievement. To investigate the relation between economic environmental factors and food insecurity among children, we examined the relation between general and specific food prices (fast food, fruits and vegetables, beverages) and risk of low (LFS) and very low food security (VLFS) status among low-income American households with children. The purpose of this study was to determine if the nutritional needs of high-risk community members are met by supplemental food baskets distributed by charitable groups in northeast Tennessee. Hunger is a real problem among the area's elderly population, as 14.3% of the populations live at or below the poverty level. Data were collected using observation interviews at the food bank. A nutrient analysis tool was used to analyze the nutrient content of food items in a standard food basket. The findings were compared to the recommended dietary allowance for the elderly population.
