The Impact Of Nutrition On The Mental And Physical Health Of Young Adults, Dareena El-Far
The Impact Of Nutrition On The Mental And Physical Health Of Young Adults, Dareena El-Far
WRIT: Journal of First-Year Writing
Upon close examination by nutritional professionals, concern has arisen regarding the typical contents of a young adult diet. In terms of the rate at which young adults choose to consume nutritionally-dense food items, the rate at which nutrition-deficient junk food items are chosen over the former is significantly higher. Among further examinations of this issue by researchers, it has become evident that the nutritional decisions made by young adults are increasingly associated with several social, commercial, mental, educational, and economic influences. As a consequence of these factors, research has uncovered a connection between the consumption of a poor diet and …

Care For Some Lunch? It’S More Than Just Food! Care, Commensality And Pedagogic Meals In Irish Primary Schools, Caroline Mcgowan
Care For Some Lunch? It’S More Than Just Food! Care, Commensality And Pedagogic Meals In Irish Primary Schools, Caroline Mcgowan
Level 3
This expository article addresses a lacuna in policy and practice literature around using primary school lunches as both a pedagogical opportunity and a space to expose children to social and cultural ‘rituals’ that model both care and food sharing as commensality. The article argues that policy literature in this space broadly tends to be concerned with a medicalised paradigm of nutrition, physical and cognitive development, and disease prevention, with scant regard for the impact that natural ‘everyday’ practices of eating and caring can have on enhancing encultured commensality, care and learning.
Investigation Of Anti-Inflammatory And Antioxidants Properties Of Phenolic Compounds From Inonotus Obliquus Using Different Extraction Methods, Weaam A.A. Alhallaf
Investigation Of Anti-Inflammatory And Antioxidants Properties Of Phenolic Compounds From Inonotus Obliquus Using Different Extraction Methods, Weaam A.A. Alhallaf
Electronic Theses and Dissertations
Inonotus obliquus, commonly known as Chaga, is a fungal pathogen of birch trees, known to synthesize a range of phenolic compounds with remarkable health benefits. These presumed medicinal properties have generated increased interest in Chaga consumption. Prior research has demonstrated the diverse chemical composition of Chaga sourced from a variety of geographical locations. However, to our knowledge, there is currently no available literature regarding the extraction of bioactive compounds from Chaga grown in the United States. Additionally, the effect of the extraction method on the antioxidant and anti-inflammation properties specifically, has yet to be validated. Therefore, the present study was …
Nutritional Strategies For Nurses In A Fast Paced Occupation, Zachary Christman
Nutritional Strategies For Nurses In A Fast Paced Occupation, Zachary Christman
Department of Agronomy and Horticulture: Dissertations, Theses, and Student Research
The foundation of the medical system are the nurses and certified medical assistants. Their personal health condition affects how well diseases and other medical conditions are handled. This article will begin with an overview of the eating behavior of nurses. Three different interventions which have been shown effective in a fast paced workplace are presented in order to improve the health of nurses and certified medical assistants. The first intervention is organizational changes that would increase the amount of time nursing staff have to eat. The second is the use of a messenger bag delivery system to provide needed food, …

Electronic Theses and Dissertations
Background:The Expanded Food and Nutrition Education Program (EFNEP) is a federally funded program through the United States Department of Agriculture that offers nutrition education to low income families across the U.S.
Purpose:This study assessed the effectiveness of Maine EFNEP on food-related behavior change and diet quality as measured by the Healthy Eating Index-2005 (HEI). This study also explored the relationship between the results on the HEI and participation in food assistance programs such as Supplemental Nutrition Assistance Program (SNAP) and Women, Infants, and Children (WIC), as well as the number of hours spent in the program.
Methodology:This study was a …
Food Availability, Including Traditional Foods, In Grocery And Convenience Stores In 6 High Obese Counties In South Dakota, Including Native American Reservations, Francesca Willard
Food Availability, Including Traditional Foods, In Grocery And Convenience Stores In 6 High Obese Counties In South Dakota, Including Native American Reservations, Francesca Willard
Electronic Theses and Dissertations
Native American populations are disproportionately affected by obesity and its associated chronic diseases. Rural areas are also disproportionately affected by obesity and face significant challenges related to their food environment, food security, and food availability. The combination of these barriers make it challenging for rural, NA reservations to combat these health disparities and have opportunities to make healthy food choices. The lack of access to healthy and traditional foods in these areas is of great concern. The purpose of this study is to determine the food availability, including traditional foods, in grocery and convenience stores in six high obese counties …

Department of Nutrition and Health Sciences: Faculty Publications
Natural stable isotope ratios (δ15N) of humans can be used for nutritional analyses and dietary reconstruction of modern and historic individuals and populations. Information about an individual’s metabolic state can be obtained by comparison of tissue and dietary δ15N. Different methods have been used to estimate dietary δ15N in the past; however, the validity of such predictions has not been compared to experimental values. For a total of 56 meals and 21 samples of 24-h diets, predicted and experimental δ15N values were compared. The δ15N values were predicted from self-recorded food intake …
Children's Picky Eating And The Role Of Family Environments, Maureen Lyons
Children's Picky Eating And The Role Of Family Environments, Maureen Lyons
Journal of Undergraduate Research at Minnesota State University, Mankato
Picky eating is often seen as a temporary phase that children go through in the developmental process. While some children never exhibit picky eating behaviors, others seem to get stuck in the tendency of judging foods, which they have never tried, based upon a pretense that the food might not meet with their satisfaction. Learning more about children’s preferred food groups and types of foods, along with the family environmental factors experienced by these children may help to understand ways to support children who struggle with picky eating. Introducing children to new foods within a positive atmosphere, where they are …

Infant Feeding Practices Of Emirati Women In The Rapidly Developing City Of Abu Dhabi, United Arab Emirates, Hazel Gardner, Katherine Green, Andrew Gardner
Research outputs 2014 to 2021
Rapid economic and cultural transition in the United Arab Emirates (UAE) has been accompanied by new challenges to public health; most notably a rapid rise in chronic disease. Breastfeeding is known to improve health outcomes in adulthood, is associated with reduced risk of developing chronic disease, and is therefore an important public health issue for this rapidly increasing population. Factors associated with infant feeding practices were examined in a cohort of 125 Emirati women and their infants, with data collected at birth and 3, 6 and 15 months postpartum by questionnaires and interviews. Participants were recruited in the Corniche Hospital, …

Mori, Lawrence J. Beilin, Wendy H. Oddy, Alexandra P. Bremner, Therese A. O'Sullivan
Research outputs 2014 to 2021
Almost all previous studies examining the associations between glycaemic load (GL) and metabolic syndrome risk have used a daily GL value. The daily value does not distinguish between peaks of GL intake over the day, which may be more closely associated with the risk of the metabolic syndrome. The aim of the present study was to investigate the cross-sectional associations between daily and mealtime measures of GL and metabolic syndrome risk, including metabolic syndrome components, in adolescents. Adolescents participating in the 14-year follow-up of the Western Australian Pregnancy Cohort (Raine) Study completed 3 d food records and metabolic assessments. Breakfast …

Plant Calcium Content: Ready To Remodel, Jian Yang, Tracy Punshon, Mary Lou Guerinot, Kendal D. Hirschi
Dartmouth Scholarship
By identifying the relationship between calcium location in the plant cell and nutrient bioavailability, the plant characteristics leading to maximal calcium absorption by humans can be identified. Knowledge of plant cellular and molecular targets controlling calcium location in plants is emerging. These insights should allow for better strategies for increasing the nutritional content of foods. In particular, the use of preparation-free elemental imaging technologies such as synchrotron X-ray fluorescence (SXRF) microscopy in plant biology may allow researchers to understand the relationship between subcellular location and nutrient bioavailability. These approaches may lead to better strategies for altering the location of calcium …

The Food Pantry Dilemma: Understanding The Need For Nutritional Value In Emergency Food Provided In A Down Economy, Amy Anderson
The Food Pantry Dilemma: Understanding The Need For Nutritional Value In Emergency Food Provided In A Down Economy, Amy Anderson
Undergraduate Review
The purpose of this project was to determine if there are viable nutritional options available to the patrons of suburban food pantries located in Norton, Easton and Bridgewater, Massachusetts. The goal was to establish the existing practices of the pantries, how the food received is utilized, the needs of the patrons, and how corporate establishments work in conjunction with the food pantries. Providing nutritional options in a down economy is a difficult task if there is not a strong system currently in place or if the facility is unable to store and distribute fresh fruits, vegetables and dairy to the …
