Evaluation Of A Nutrition Program Targeting Child Care Centers, Kendra Witt

Color Me Healthy (CMH) is an interactive nutrition program designed for preschool aged children in child care settings. The current study examined if CMH increases the consumption of fruit and vegetables. Child care centers were randomly assigned to one of two conditions; children (n=165) in ten centers received CMH and children (n=98) in seven centers acted as controls. Consumption of fruit and vegetable snacks was assessed at baseline, one week post-intervention and 3 months post-intervention. Hierarchical linear modeling determined that group assignment was the only significant predictor of fruit and vegetable consumption. Children who were exposed to the CMH program …

Soft drink vending machines are available in many schools across the nation. Some schools have recently removed soft drink vending machines and replaced them with milk vending machines. The purpose of this study was to investigate high school students’ (n = 84) perceptions of the shift from soft drink vending machines to milk vending machines in schools.
Students in this survey had an understanding of the importance of drinking milk, and students generally felt that purchasing milk from the lunch line was more convenient than from the vending machine. Students felt that the vending machine might contain warm, out of …

Efficacy Of A Nutrition Education Program Designed For Grades K-3 Piloted In Johnson County Schools., Allison Nicole Lowry

The purpose of this study was to increase the nutrition knowledge of elementary school students by implementing nutrition education lessons. The subjects included 49 kindergarten through third grade students in Johnson County, Tennessee during the fall of 2004. Knowledge increase was measured by pretest and posttest scores. The tests were analyzed by paired t-tests. While all students showed an increase in mean score, kindergarten and first grade students did not show a significant increase in posttest scores. However, second and third grade students showed a significant increase in posttest scores, indicating an increase in nutrition knowledge.

The purpose of this study was to increase knowledge of the effects of prenatal substance use and to introduce the special nutritional needs of pregnancy in two counties in a region with high rates of low birth weight and prenatal substance abuse. A comparison of the efficacy of the educational program being delivered by a registered dietitian or by a group of high school students trained by the dietitian was performed. The nutritional knowledge, food choice, and exercise habits of an individual determine his or her overall health and life expectancy. Information on these topics enables nutrition educators to develop strategies to improve knowledge and to tailor educational efforts which affect a large number of persons. Poor health in America today is an ever present reality. Heart disease, cancer, diabetes mellitus, cerebrovascular diseases, renal diseases, and pulmonary diseases are causes of death related in part to lack of nutritional knowledge and poor eating and exercise habits. A few of these diseases are chronic in nature and are the most deadly.
