Inflammaging: Inflammatory Biomarkers Associated With Nutrition, Metabolism And Muscle Tissue Oxygenation Relative To Sarcopenic Status In Older Adults, Marni Elise Shoemaker
Open Access Theses & Dissertations
The purpose of this study is to examine if we can differentiate inflammaging between sarcopenic and non-sarcopenic older adults by exploring if there are differences between biomarkers of inflammation and nutritional status in older adults with distinct differences in skeletal muscle mass, strength, and function, metabolic flexibility, and muscle tissue oxygenation. Twenty-one non-sarcopenic (mean±standard deviation, age = 73.1±6.2 yrs, n=5 males, n=5 females) and sarcopenic (age = 81.2±10.5 yrs, n=6 males, n=5 females) were categorized based on muscle mass and strength criteria according to the European Working Group on Sarcopenia in Older People. Body composition, handgrip and leg extension strength, …
Determination Of Perceived Calorie Content Of Common Foods, Sarah Leticia Ruiz
Determination Of Perceived Calorie Content Of Common Foods, Sarah Leticia Ruiz
Open Access Theses & Dissertations
Currently, dietary weight-loss interventions focus on recommended caloric intake aimed at creating an energy deficit through the use of calorie-based education. This approach assumes individuals can accurately estimate caloric content of foods and beverages, yet little is known about the validity of such assumptions. This study assessed the accuracy of perceptions of calorie content for individual food items and mixed meals and determined its association with education level, nutrition background, body composition, fruit and vegetable intake, and the domains of eating (emotional eating, uncontrolled eating, and cognitive restraint). A cross-sectional survey assessed calorie perceptions using both visual food displays and …

Background. Movimiento Saludable (MOVS), a component of Ciudadanos Comprometidos con la Paz (CCOMPAZ) in Ciudad Juarez, MX is an after-school lifestyle program that was implemented at five schools during 2016 - 2017. The purpose of the MOVS program is to prevent chronic diseases such as obesity and diabetes in children. The MOVS curriculum includes two components: a) physical conditioning through dance, body expression, and free play, and b) nutrition education and healthy meals to increase fruit and vegetable (F/V) intake. The Paso del Norte Institute for Healthy Living (IHL) at UTEP collected the data to conduct an evaluation of the …
Evaluation Of A Nutrition Education Program Targeting Home-Based Child Care Centers, Cassandra Nicole Urrutia
Evaluation Of A Nutrition Education Program Targeting Home-Based Child Care Centers, Cassandra Nicole Urrutia
Open Access Theses & Dissertations
Background: The development of a highly obesogenic culture promoting sedentary behavior and the consumption of calorie-dense foods has led to increased levels of overweight and obesity globally. While children and adults are both at increased risk of developing obesity, the risk is even higher in minority and low socioeconomic populations. Changes in familial structure and an increase in mothers of younger children (below the age of 6) entering the workforce have created a new demand for child care services. Although some studies have researched the effectiveness of nutrition programs to increase healthy eating within the child care setting, few have …
Nutrition Knowledge Among A Predominantly Hispanic College Population, Heather Sandford
Nutrition Knowledge Among A Predominantly Hispanic College Population, Heather Sandford
Open Access Theses & Dissertations
ABSTRACT
Many chronic diseases such as Type 2 diabetes, cardiovascular disease and some types of cancer are prevalent and have been associated with unhealthy eating patterns. At the same time overweight and obesity are contributing factors to the development of these conditions. There are multiple factors contributing to overweight and obesity. Some of these include a frequent consumption of unhealthy or high energy-dense foods combined with the lack of physical activity. A true understanding and foundation of proper nutrition allows people to make healthy eating choices. It has been documented that among the population, college students have a limited nutrition …
The Mediating Role Of Dietary Patterns On The Relation Between Acculturation, Psychosocial Factors, And Cardiovascular Disease Risk Factors In The U.S. - Mexico Border, Ximena Burgos
Open Access Theses & Dissertations
Chronic diseases affect both, developed and developing countries around the world. In the U.S., cardiovascular diseases (CVD) are the leading cause of death for all groups including Hispanics (Heron, 2009). Hispanics are disproportionally affected by CVD and experience risk factors at higher rates than non-Hispanic whites (Swenson, 2002). Although CVD are among the most expensive and widespread health problems, they are among the most preventable. Evidence shows that diet plays a very important role in the development of chronic diseases; current dietary changes are partially responsible for the increasing epidemic of chronic diseases worldwide. It is well established that the …

The diet of adolescents is typically high in calories, fat, and saturated fat and often fails to meet the daily recommended amounts of fruits, vegetables, and calcium-rich foods. The frequent consumption of unhealthy diets in combination with the lack of physical activity has resulted in a high prevalence of obesity worldwide. Approximately 17% of adolescents in the United States are obese. Obesity is a common risk factor for the development of chronic disease such as heart disease and diabetes. In the last few decades and along with a high prevalence of obesity there has also been an increased prevalence of …

Comparison Of Four Methods Of Dietary Assessment: Food Records Vs. Combined Food Records With Digital Photography, Sara Lynne Peidle
Open Access Theses & Dissertations
Methods for collecting dietary intakes of free-living individuals have been studied over the past century and there are many limitations. Collection of dietary intakes from individuals is best done in food diary format and researchers have investigated both written and photographic records. The purpose of this study was to add to the body of literature on studies of collecting dietary intakes by comparing written food records (FR), digital food records (DP), written and digital food records combined (FRDP), and digital food records with limited documentation (DPR) to one another and to a known, criterion value. This study included 50 Registered …

INTRODUCTION: After-school activities provide valuable opportunities for health promotion activities that do not interfere with the regular school day, especially in minority populations with higher rates of obesity and type 2 diabetes. The current study is an evaluation of an after-school health education and physical activity program conducted in nine elementary schools in 2008 in El Paso, Texas. METHODS: The intervention consisted of a 10-12 week (twice a week) after school program consisting of a pilot (with two experimental schools) and main intervention (six schools each including a control and experimental group). The main outcome variables were Body Mass Index, …

Color Me Healthy (CMH) is an interactive nutrition program designed for preschool aged children in child care settings. The current study examined if CMH increases the consumption of fruit and vegetables. Child care centers were randomly assigned to one of two conditions; children (n=165) in ten centers received CMH and children (n=98) in seven centers acted as controls. Consumption of fruit and vegetable snacks was assessed at baseline, one week post-intervention and 3 months post-intervention. Hierarchical linear modeling determined that group assignment was the only significant predictor of fruit and vegetable consumption. Children who were exposed to the CMH program …
