Texas A&M Beef Cattle Short Course: Program Evaluation, Nicola Oosthuizen, Pedro Fontes, Graham C. Lamb, Jason J. Cleere

The Journal of Extension

Survey results (n = 3,748) collected over a period of 7 years from the Texas A&M Beef Cattle Short Course (BCSC) were analyzed to evaluate course demographics and the impact of the course on attendees. Results of this survey demonstrate that attendee demographics of the BCSC are representative of beef cattle producers in the United States and that the BCSC is effective at delivering information that positively impacts beef production in Texas. Extension professionals can make use of these findings to tailor future education programs to better serve the needs of beef cattle producers nation-wide.

Winter feeding systems were evaluated on male Kiko meat goats against the traditional practice of raising goats in the winter months. Forty-Five Kiko bucks were randomly assigned to one of three treatments; Treatment 1, Treatment 2, and Treatment 3 consisted, respectively, of Cosaque Oats, annual Ryegrass, Crimson Clover mix, and 1.0% of BW concentrate supplementation with free choice hay. Forage clippings were analyzed for dry matter, crude protein, and neutral detergent fiber. Body weights were monitored over the grazing period. Abstract

Starting a goat herd with healthy animals prevents expense and effort eliminating infectious diseases. Pre-purchase testing and examinations are worth their cost because of the savings realized through fewer animal illnesses, increased production, lower medication costs, and reduced culling. Key management practices such as hoof trimming, vaccinating, body condition scoring, and assessing parasite loads are needed to maintain herd health. Biosecurity practices must become routine to prevent the introduction and/or spread of contagious diseases. Several goat diseases are contagious to humans, so biosecurity measures must address this concern. Abstract

Boer and Kiko goats were imported in the 1990s to enhance the productivity of the US base population of Spanish meat goats. Successful breed introductions require adaptation to the destination environment. Well-planned, low-input management is a good route to meat goat enterprise profitability using proper goat genetics. Reproduction drives profit more than growth and carcass traits. Results of breed evaluation studies on doe reproductive and health traits, the Boer goat influence tended to be negative compared with Kiko and Spanish goat influences. Feeds provide nutrients to animals. Feeds can be grains, crop by-products or forages. Forages can form the basis of feeds for goats in the southeastern US because year-round forage production is possible. Since goats are classified as browsers, the forage program should consist of browse and pasture. Managing browse species as feed resources is challenging, and there is limited information relative to managing browse species. Internal parasites represent a significant obstacle to a profitable and sustainable US goat industry. In some states, internal parasites are a year-round problem, while in others, they are a more seasonal challenge. Traditionally, parasite control methods relied heavily on antiparasitic drugs called anthelmintics or dewormers. Continued use and misuse of these drugs have resulted in increasingly resistant worm populations, necessitating more holistic or integrated methods of parasite control. One lawful method to dispose of animal carcasses is composting. Mortality composting is a “green” method that provides the producer with valuable soil amendments. Composting sites should be away from water sources and public areas. Some states require a facility and/or permit for carcass composting so producers should contact their State Veterinarian. Animal composting generates little to no odor and generates temperatures high enough to kill pathogens. Mortality composting is an aerobic process and requires a proper C:N ratio achieved by using a high carbon source to envelop the carcass, moisture content of roughly 50%, and available oxygen. The objective of this pilot study was to determine the effect of dietary porcine plasma on circulating insulin-like growth factor 1 (IGF-1) concentrations in gestating sows and characteristics of their litters. Primiparous and multiparous sows were randomly allocated to two treatment groups of sows fed a basal diet or sows fed the basal diet plus 6 g of porcine plasma throughout gestation. Interest in local and regional food production has been growing in the last few years. The study, therefore, assessed consumer attitudes and beliefs regarding local or regional livestock products. Data were obtained from a convenience sample of 384 participants from several counties of Georgia, and were analyzed by descriptive statistics, including chi-square tests. Abstract

In recent years, consumer interest in locally or regionally produced foods has been growing. This study analyzed consumer attitudes and beliefs on local or regional livestock products in Florida. Data were collected from a convenience sample of 404 participants from counties in Florida. They were assessed by descriptive statistics, including chi-square tests. Most participants believed using chemicals in locally or regionally produced beef or goat meat was at minimum a somewhat serious hazard. Thus, many were willing to pay more for meat certified as locally or regionally produced. Moreover, most agreed or strongly agreed with statements on meat attributes. …

The study assessed the impact of using different stocking rates of goats under pine plantation on plant species occurrence and animal productivity. It was conducted on an 11 year-old loblolly pine plantation site in Epes, Alabama from July to October 2011. Thirty-six Kiko crossbred male goat kids of 4 to 5 months of age were assigned to different stocking rates, namely, low (4 goats/acre), medium (8 goats/acre), and high (12 goats/acre) with three replications each. The use of growth-promoting technologies has become a common practice in the beef cattle industry as producers strive for efficient growth and greater lean deposition. Two common technologies include exogenous hormonal implants and beta-adrenergic agonists (β-AA). Combination implants containing estrogen and testosterone increase muscle mass by elevating protein synthesis and/or reducing protein degradation. The increase in protein synthesis allows the animal to produce more lean muscle tissue. Optaflexx (Elanco Animal Health, Greenfield, IN) is a popular β-AA that works as a repartitioning agent to redirect nutrients toward muscle deposition and away from adipose tissue production. Beef tenderness is the most important trait affecting consumer beef eating satisfaction. Cuts from muscles with superior tenderness (tenderloin, ribeye, striploin) are consequently most highly valued, but because of recent record-high beef prices, the need to identify more economical cuts that will meet consumer expectations for tenderness is greater than ever. The eye of round (Semitendinosus) has traditionally been marketed as a lower-value cut, primarily owing to its inherent toughness. Skeletal muscle tissue consists of two main structures that elicit strong influences on cooked meat tenderness: myofibrillar and connective tissues. The myofibrillar component consists of contractile and cytoskeletal proteins that aid in muscle contraction and support. A large portion of meat science literature documents the effects that postmortem aging elicits in terms of weakening the myofibrillar component to improve tenderness. Connective tissue is primarily comprised of collagen, the most abundant protein within the body. In July 1987, a meat inspector found liver fluke (Fasciola hepatica) in a cow at an export abattoir at Waroona. This was the first evidence of the liver fluke completing its life cycle in Western Australia. Fortunately, the Department of Agriculture is reasonably confident that a comprehensive drenching programme has eradicated the liver fluke. The establishment of liver fluke in the south-west coastal areas could cause a serious problem for cattle producers and the small number of sheep producers. Stock would need additional drenching, and if it was not carried out effectively production could be lost or stock could die. …

The idea of integrating the Kimberley cattle industry with that in the south-west of Western Australia is no new, but until recently it had not been critically evaluated.

Over the past eight years the Department of Agriculture's Beef Cattle Branch has been assessing the performance of Kimberley cattle transported south for finishing in the agricultural areas.

This research has show that Kimberley weaners can be finished in the south, and that under the present (December 1988) economic conditions it is more profitable than running breeding cattle in the south-west and comparable with fattening store steers.

For the past few years, the Department of Agriculture has been fattening cattle on the forage shrub leucaena which is grown under irrigation with pangola grass. About 400ha of leucaena is under commercial production in the Kimberley.

Cattle grazing leucaena show promising growth rates but other problems need to be overcome before its use is more widely adopted. Leucaena establishes slowly. It is also costly to transport fattened cattle to southern abbatoirs.

A 1976 survey of more than 48 000 sheep and 25 000 lambs slaughtered at two of Western Australia's export abattoirs has indicated a high rejection rate for W.A. carcasses. Rejections may be for disfiguring, blemishes requiring trimming or for diseases which can lead to condemnation.

Savings that producers can make by simple management changes, could thus save the industry $3.12 million a year. Reduction in other causes of rejection or further reduction in some of those mentioned id feasible but requires more research and may be more difficult to achieve.

The disease annual ryegrass toxicity kills sheep and cattle grazing pastures which contain infected annual ryegrass. In Western Australia the first confirmed outbreak was in 1968 in the Gnowangerup area.

The disease has noe spread over a range of 450 kilometres and with a total area of perhaps 100 000 hectares. because annual ryegrass is the major sown pasture grass in W.A. the disease could spread throughout the South-West.

There are some precautions that can be taken.
