Texas A&M Beef Cattle Short Course: Program Evaluation, Nicola Oosthuizen, Pedro Fontes, Graham C. Lamb, Jason J. Cleere

The Journal of Extension

Survey results (n = 3,748) collected over a period of 7 years from the Texas A&M Beef Cattle Short Course (BCSC) were analyzed to evaluate course demographics and the impact of the course on attendees. Results of this survey demonstrate that attendee demographics of the BCSC are representative of beef cattle producers in the United States and that the BCSC is effective at delivering information that positively impacts beef production in Texas. Extension professionals can make use of these findings to tailor future education programs to better serve the needs of beef cattle producers nation-wide.

An important approach to decreasing the transmission of Salmonella into the food chain is to treat raw chicken after processing. This can be, and has been done, by using antibiotics and chemical disinfectants. Using antibiotics is not a viable option due to the issue of antimicrobial resistance. Although some chemical disinfectants have been used effectively, they are restricted due to the amounts that can be used safely, the acceptance of their use and resistance to implementation in various parts of the world. My inquiry was led by the question How common are diseases in commercial swine units and how can they be prevented from a staff personnel standpoint?. I completed my research by gaining knowledge through experience in my internship, as well as a literature review. I could not find an explicit response to how common diseases are, but I did learn about biosecurity and disease prevention.

The purpose of this experiment is to determine the thermal kinetic parameters of Salmonella in moisture-enhanced, reconstructed ground chicken patties as affected by temperatures and salt concentrations. Salmonella is responsible for 35% of the foodborne illnesses associated with poultry products (Batz et al., 2011). Nonintact reconstructed chicken meat is mixed with brine solutions containing various salt and polyphosphate concentrations to increase water-holding capacity, decrease cooking losses, improve sensory tasting scores, and maintain the good quality of completed chicken products (Gill et al., 2004). Winter feeding systems were evaluated on male Kiko meat goats against the traditional practice of raising goats in the winter months. Forty-Five Kiko bucks were randomly assigned to one of three treatments; Treatment 1, Treatment 2, and Treatment 3 consisted, respectively, of Cosaque Oats, annual Ryegrass, Crimson Clover mix, and 1.0% of BW concentrate supplementation with free choice hay. Forage clippings were analyzed for dry matter, crude protein, and neutral detergent fiber. Body weights were monitored over the grazing period. Beef calves are weaned at 6-months of age and enter the stocker phase of beef production. Stocker producers have the primary goal of adding weight inexpensively to increase profit on weaned calves. Whole cottonseed is an inexpensive feed ingredient that is popularly top-dressed within dairy and finishing beef diets and is high in protein and energy. During three periods lasting 50-days (fall 2019, fall 2020, and spring 2020), freshly weaned calves were placed on a finishing ration with the goal of increasing average daily gain. Tenderness is the primary factor to influence consumer palatability in fresh meat. The tenderization of muscle is dependent on proteolytic mechanisms, including calcium dependent, non-lysosomal endogenous enzymes such as calpains and proteasomes. These mechanisms have been indicated alongside apoptosis early postmortem as cascades of apoptotic events promote ideal conditions for postmortem tenderization. Recent literature has identified oxidative stress-mediated events to be linked to apoptotic activity. Oxidative stress is defined as the overwhelming production of reactive species compared to homeostatic, endogenous antioxidants present within muscle systems. Starting a goat herd with healthy animals prevents expense and effort eliminating infectious diseases. Pre-purchase testing and examinations are worth their cost because of the savings realized through fewer animal illnesses, increased production, lower medication costs, and reduced culling. Key management practices such as hoof trimming, vaccinating, body condition scoring, and assessing parasite loads are needed to maintain herd health. Boer and Kiko goats were imported in the 1990s to enhance the productivity of the US base population of Spanish meat goats. Successful breed introductions require adaptation to the destination environment. Well-planned, low-input management is a good route to meat goat enterprise profitability using proper goat genetics. Reproduction drives profit more than growth and carcass traits. Results of breed evaluation studies on doe reproductive and health traits, the Boer goat influence tended to be negative compared with Kiko and Spanish goat influences. Internal parasites represent a significant obstacle to a profitable and sustainable US goat industry. In some states, internal parasites are a year-round problem, while in others, they are a more seasonal challenge. Traditionally, parasite control methods relied heavily on antiparasitic drugs called anthelmintics or dewormers. Continued use and misuse of these drugs have resulted in increasingly resistant worm populations, necessitating more holistic or integrated methods of parasite control. One lawful method to dispose of animal carcasses is composting. Mortality composting is a “green” method that provides the producer with valuable soil amendments. Composting sites should be away from water sources and public areas. Some states require a facility and/or permit for carcass composting so producers should contact their State Veterinarian. Animal composting generates little to no odor and generates temperatures high enough to kill pathogens. Mortality composting is an aerobic process and requires a proper C:N ratio achieved by using a high carbon source to envelop the carcass, moisture content of roughly 50%, and available oxygen.
