Performance testing is important in the beef cattle industry as an aid to selection for improvement. It is an excellent means for evaluating the genotypic and phenotypic worth of an animal. Since the sire transmits one-half of the genetic material of each calf, an estimate of the genetic potential of each sirs should be made prior to selection if optimum genetic progress is to be accomplished. One of the greatest contributions that could be made in beef cattle evaluation would be a simple and accurate method for estimating cutability in the live animal. If such a method were developed, more rapid improvement in muscling and cutability of beef cattle could follow. The major characteristics which aid in the prediction of cutability possibly have been identified; however, other live animal and carcass characteristics should be researched to determine their value in pre-dicting cutability. Current trends in dairy cattle feeding toward higher levels of grain and corn silage signify the need for more complete information on the effects of vitamin A on lactating cows. Beef cattle feeders have confined steers and heifers in dry lots for fattening and fed high levels of concentrates with corn silage. Hay was often limited or of low vitamin A quality. These cattle have occasionally shown vitamin A deficiencies after a short time in the feedlot even though they had been raised on pasture. The purpose of this study was to evaluate the possibilities of expanding present fireplace wood markets or of developing new markets for such a product. Reference to Table II indicates that total fuelwood consumption and per capita consumption have both declined from 1950 to 1965. A closer look at the data reveals that the decrease in consumption has progressed at a decreasing rate. Since fireplace wood constitutes only a part of the total fuelwood produced and consumed, it is difficult to make valid inferences from Table II. Wide variations exist in the types of beef enterprises in Tennessee. In general, the livestock enterprises being conducted are the ones which make the most efficient use of existing feed resources. The efficiency of an operation is measured by the degree of maximum production obtained under ideal production-cost conditions. Drastic changes in the agricultural economy have taken place during the last two decades. Increased productivity of agricultural labor and declining profit margins for many farm products have contributed to a considerable disparity between farm and nonfarm incomes. The income disparity continues in spite of large net migration of farm family workers and farm operators into nonfarm employment and significant decreases in farm numbers.

The number of farm family workers in Tennessee decreased by 37.3 per cent from 1954 to 1959. The adoption of improved technology, particularly mechanization, has enabled the remaining farm labor force to be used more productively …

Surveys have indicated that consumers prefer high quality lean cuts of pork in preference to those cuts which are excessively fat. A decreased demand for lard, consumer resistance to fatty foods, more specialization in meat marketing and selection for improved production traits have increased the need for improved evaluation techniques in swine breeding and selection.

The advent of swine certification programs created a need and desire for simplified methods of measuring certain conformation and/ or carcass traits on the live animal. Such methods would allow extensive information to be obtained without sacrificing potentially superior breeding animals.

One of the problems most neglected or least understood is that concerning the relationship of various constituents contained in the juice and the finished syrup. On the whole, the literature indicates that earlier investigators made little attempt to correlate composition of the juice and quality of syrup.

Major Campbell Wallace distinguished himself as a railroad leader in Tennessee and Georgia during the middle years of the nineteenth century. From 1853 until 1963 he occupied the presidency of the East Tennessee and Georgia Railroad Company and from 1866 until 1868 was superintendent of the Western and Atlantic Railroad. The flavor enhancing properties of certain 5'-ribonucleotides have been known for some time. In 1913, Kodama (20)* reported on the seasoning effect of inosine-5-phosphate (5’-IMP). This compound was also identified as one of the important beef flavor precursors by Batzer and LandMann (3). Kuninaka (21) found that guanosine-5-phosphate (5'-GMP) and xanthine-5-phosphate (5'-XMP) also had a flavoring effect similar to 5’-IMP. Snake venom (16) and intestional mucosa (6) were known as sources of 5'-phosphodiesterase capable of hydrolyzing the phosphate ester link-ages of ribonucleic acid (RNA) to produce 5'-ribonucleotides. In recent years a marked improvement has been made in the type of hogs going to market. Much of this success can be attributed to the use of swine improvement programs. Testing stations are used (1) to test progeny; (2) as a guide in selecting full or half-sibs of animals being tested; and (3) as an indicator of the tested pig's merit as a potential breeding animal where slaughter is not a requirement of the testing procedure.
