Tourist experiences offer anomalous and complex interactions between tourists and tourism places. The study of these experiences is the focus of this doctoral dissertation, which aims to explore subjective aspects of the tourist experience. This exploration involves the conceptualisation of tourist experiences and the development of a multi-phased research design that captures the perceptions of momentary in situ experiences and examines how these perceptions change over time.

This thesis addresses the historical and cultural development of the recreational birdwatching in southern Ontario, 1791-1886, and the efforts of empire and gender on birdwatchers’ identities and ideas about birds. By deconstructing recreational ornithological discourse, I suggest that recreational birdwatching reproduced the imposition of British colonial rule in Canada, together with condescension towards aboriginal peoples and non-British immigrants; and the reinforcement of British, middle-class, gendered identities in southern Ontario. This research therefore shows that recreational ornithological texts provide a medium to deconstruct the impact of birdwatching on people’s lives in their gendered approach to the activity.

Wine tourism is an expanding form of rural tourism which has recently become popular in several wine regions of the world One such area, the Niagara Region in southern Ontario, Canada, is used as a case study for this research. This study examines the role that wine tourism plays in sustainable rural tourism, and determines if wine tourism can be used as a tool for economic development. The purpose of this study was to investigate rural images and perceptions of rural accommodation operators and their visitors, and to explore the contribution of tourism to sustainability in the Waterloo-Wellington region. The natural resources of the Niagara Region of Ontario have played an important role in the success of the tourist industry in the region. The Niagara Region has been developed on an industrial and agricultural base since the nineteenth century. Due to conflicting demands of the manufacturing, agricultural and tourism industries for aesthetic, recreational and waste disposal purposes, the physical environment has deteriorated. Sites become places when people bestow meaning, such as sanctity, upon them. Throughout human history, sacred places have continually emerged within cultural groups. Sacred places commonly focus on heroic figures. A pilgrimage is the visible expression of the sanctity of a place. This thesis examines the motives, meanings and experiences which are associated with the journey to Elvis Presley’s Graceland mansion and grave in Memphis, Tennessee.

The present thesis examines the changes which tourism development has brought to two Canadian communities, Elmira and St. Jacobs, Ontario. They are "communities in transition". The research focusses on the local resident and retailer attitudes toward this development, and the possibility and desirability of further tourism development. Following analysis of the data collected through questionnaires, nine recommendations are presented.
