The notion of care refers to activities that satisfy the basic needs of existence and reproduction. Within rural communities, care work such as the production and preparation of food contributes to food security at the household level. Care work supports the paid workforce, allowing workers to focus on commercial productive activities that generate economic income in rural communities. Women perform 6.3 to 29.5 more hours per week than men in unpaid care work, reducing their time for income-generating activities and personal nutrition management. Within the last decade, research has identified wide-ranging disparities in access to basic needs among university students. These differences, such as a lack of adequate food and housing during university, provide a negative environmental experience with potential to limit one’s optimism or hope for the future. This research explores how basic needs insecurity and social vulnerabilities among college students are related to subjective assessments of their prospects for the future. Prices of a market basket of 149 foods that could be combined to meet the 2005 Dietary Guidelines for Americans (DGA) were surveyed in 29 stores in an eight parish area of Southeast (SE) Louisiana. Two-week cycle menus and recipes were planned to meet the 2005 DGA in a culturally acceptable way. Linear Programming (LP) analysis was also performed on the market basket to determine the cost-minimizing combination of foods that will sufficiently meet the 2005 DGA. Purchase and consumption of energy-dense nutrient poor [EDNP] foods by low-income individuals contributes to the lower diet quality and increased risk of chronic disease (e.g. obesity, type 2 diabetes) in this population. Food purchasing behaviors, dietary energy density [ED], perceived health status, and perceived nutrition knowledge were assessed in 22 female food stamp recipients in Southeast Louisiana. Two 24-hour recalls (at the beginning and at the end of the month) and food expenditure receipts were collected; participants also completed several questionnaires. Nutrition education has the potential not only to increase nutrition knowledge and, potentially, healthy behaviors, among the elderly, but also to reduce the need for health and social services. The nutrition component described herein is part of an overall wellness program that focuses on increasing physical activity and healthy dietary behaviors among participants. We completed a four month nutrition intervention in a group of 33 low income elderly at the Leo Butler Center (LBC) (n=20) and Catholic Presbyterian Apartments (CPA) (n=13) in the fall of 2005 in Baton Rouge, LA. Diets are typically poorer and risk of chronic disease (e.g. obesity) is greatest in low-income populations. Food security status, nutrient intake, and Body Mass Index were assessed in 64 female food stamp recipients in Southeast Louisiana. One 24-hour dietary recall was collected at the beginning of the month (Day 1) and one at the end of the month (Day 2). Food security status was: 29 food secure (FS), 26 food insecure (FIS), and nine food insecure with hunger (FISH). Sixty-two % (n=39) of our study participants were obese. Food security, nutritional adequacy, and anthropometrics were assessed in 30 low-income women living in rural Louisiana. For food stamp recipients, a 24-hour-diet recall was collected at the beginning (Day 1) and another at the end (Day 2) of their monthly resource cycle; for non-food stamp recipients, the first 24-hour diet recall was collected at a time that was specified by participants (Day 1) and the second was collected approximately 31/2 weeks later. Twenty-one of the 30 participants received food stamps. Ten of the 30 participants were food insecure. Of the 10 food insecure participants, seven received foods stamps. As a …
