Journal of Community Engagement and Higher Education

Transdisciplinary initiatives offer valuable opportunity for students and faculty members to address community challenges, especially those challenges related to social justice. FUEL NKU is a campus food pantry for students at a metropolitan university, and is uniquely situated to serve the student population while incorporating multifaceted aspects of a macro level project. This paper describes a collaboration among two doctoral students, one faculty member, and one Master of Social Work (MSW) practicum student to address long-term sustainability of a beloved campus program.

Everyone’s Harvest (EH) is a 501(c)(3) non-profit that operates farmers’ markets. In order to reduce hunger in Monterey County, Everyone's Harvest offers several food assistance programs for low-income people including the Market Match (MM) incentive program which matches CalFresh money, modern day food stamps, dollar for dollar. The problem is that in Monterey County 1 in 4 adults and 1 in 3 children are food insecure. Climate change has direct and indirect impacts on human health. One indirect impact is food insecurity, which can lead to malnutrition. In the Sahel region of Cameroon, the population regularly experiences high levels of malnutrition, because harsh climate conditions (including extreme drought) have a negative influence on agriculture. In particular, the extreme drought conditions lead to a reduction in agricultural production, an important parameter of food security.

Food for Harlem is a resource guide for Harlem residents to find local food-focused organizations. It’s a list for you to find where you can get healthy affordable food in your neighborhood. This project was created after the feedback I heard in discussion during my time at a food market in Harlem. The final product includes a complete list of over 70 food-focused organizations in Harlem, an interactive map, some important information about the included resources, and a list of definitions.

The purpose of this descriptive study was to determine the reasons why 38% of the students at the University of Arkansas experience food insecurity, yet only 1% of students have used the Jane B. Gearhart Full Circle Campus Food Pantry, in hopes to provide a guide to the Center for Community Engagement in their endeavors to reduce food insecurity on campus (Lisnic, 2016). This summer will mark the fourth planting season at Sherfy, which was developed in 2013 by Hannah Grose ’13. Food Landscapes: A Case Study Of A Cooking And Art- Focused Program For Teens Living In A Food Desert, Jessica R. Norris

This study constructs themes and propositions about the experiences of youth participants in the fall 2013 Food Landscapes program at the Neighborhood Resource Center in Richmond, Virginia. During the program, youth participated in cooking-based volunteerism with adults with disabilities and created short videos about their experiences. In this study, I analyzed pre- and post-program participant interviews, twice-weekly program observations, and facilitator reflections to understand how Food Landscapes affected youths’ conception of community engagement and communication strategies. In some places in the United States, guns are more accessible than tomatoes. In a nation where food is in relative abundance, how can this be? Food security is the ready availability of nutritious and safe food and the assured ability to obtain it through normal sources (Morris et al 1992).
