The use of simulation holds promise for the future of dietetics education for its use as an alternative for up to 30% of the 1,000 supervised practice hours for the training of Registered Dietitian Nutritionists. Even more so, simulation is a teaching tool. When done well, simulation can challenge students in a safe environment where they can receive constructive feedback from expert guides and meaningfully reflect on their learning. This paper examines the food insecurity experiences and coping strategies of West African migrants in Accra, Ghana, across three periods: pre-COVID-19, during the pandemic, and post-COVID-19. Utilizing a survey of 420 migrants, the study explores the interplay between remittances, socioeconomic factors, and food security. The findings reveal that food insecurity was most severe during the pandemic, with remittances—especially food remittances—offering limited mitigation due to underlying vulnerabilities. Coping strategies employed by migrants included reducing meal frequency, relying on less preferred foods, borrowing food, and seeking social support. The COVID-19 pandemic exposed and exacerbated the vulnerabilities of migrants and refugees in secondary cities in Canada, where the restrictive food environment and limited resources heightened challenges related to food security. This study investigates how the intersectionality of immobility, gender, and food insecurity shaped the lived experiences of recently resettled Syrian, Somali and Afghanistan refugees in the Waterloo Region, Canada, during the pandemic. The mixed methods research approach integrates survey and in-depth interview data to examine refugees’ motivations for migration, economic conditions, challenges in accessing culturally appropriate food, and the impact of gender roles. This project documents food access, barriers, production, and suggestions for improvement in the food system across a largely agricultural five-county (Douglas, Grant, Pope, Stevens, and Traverse) region in West-Central Minnesota. A variety of methods, including surveys, interviews, and focus groups, were used to gather data. Secondary (e.g., US Census, USDA Census of Agriculture) and historical (e.g., grocery store directories) data were also used in this project.

Approximately half of household food security survey respondents (N= 283) had in the last year at least worried about there not being enough money for food in their household. Respondents experiencing food insecurity were …

This study delves into the multifaceted challenges of food insecurity and its profound impact on school readiness among children in Ghana. Utilizing data from the Ghana Statistical Service and the Comprehensive Food Security and Vulnerability Analysis, and employing ArcGIS for spatial analysis, the research maps high food insecurity areas and overlays population density to prioritize interventions. Findings reveal a stark concentration of food insecurity in northern Ghana, worsened by adverse weather conditions, underscoring the urgency for targeted interventions. Early-Onset Alzheimer’s Disease (EOAD) is a rare form of Alzheimer’s Disease (AD) that makes up around 5% of AD cases. The Mediterranean-DASH Intervention for Neurodegenerative Delay (MIND) diet, a hybrid diet of the Mediterranean and DASH (dietary approaches to stop hypertension) is an approach that patients with EOAD can adapt to slow down the progression of cognitive decline. Wild rice (mannoomin; Zizania palustris) is an aquatic grain that grows in slow-moving rivers and shallow bays throughout northern Minnesota. In Headquarters Bay on Leech Lake, wild rice has served as a cultural staple for Indigenous communities for centuries. However, its population has declined in recent years due to multiple environmental issues. One potential contributor is Eurasian watermilfoil (Myriophyllum spicatum; EWM), an invasive species that forms dense mats capable of outcompeting native aquatic vegetation, including wild rice. Northern California’s extensive logging history and lack of forest management has altered old-growth coast redwood (Sequoia sempervirens) forests, leaving dense, homogenous second and third-growth forest stands. This has led to the use of modern restoration techniques such as variable density thinning (VDT) which aims to rehabilitate old-growth forest conditions by improving stand heterogeneity and light availability for understory species. This study looked at goal setting in sleep and nutrition on healthy active college students aimed to improve their perceived performance, resting metabolic rate, body composition, and overall well-being. The six-week-long intervention had two groups: a control (n=5) and intervention group (n=6). Both groups received an initial coaching session and guidance for self-motivated online goal setting, completed weekly check-ins asking about their sleep and nutrition quality and quantity, and perceived performance, then they would set small goals aimed at improving their sleep and nutrition. Low-lying deltas worldwide are extremely vulnerable to sea-level rise. As the risks of climate-induced flooding become increasingly clear, the thirst for infrastructure-driven adaptation increases. This highlights a patent need to understand the impacts of engineering adaptation solutions, especially those targeting built structures such as dykes and sluices, on farmers from a bottom-up, farmer-centred perspective. The study addresses this call by examining cases where dyke policies, while successful in some dimensions, have undermined small-scale farmer livelihoods in Ca Mau ― Vietnam’s southernmost rural province. Mercury (Hg), as an environmental pollutant, can have harmful effects on human health. A common way that people are exposed to Hg is through seafood consumption. This project was designed to investigate Hg exposure through seafood consumption and its health effects among adults in 4 Caribbean countries: Barbados (n = 117), Grenada (n = 90), St. Lucia (n = 126), and St. Vincent & the Grenadines (n = 77). We applied a novel, community—based method, which involved recruiting and paying local barbers and hairstylists to collect hair samples from their clients who consented to join the project as participants. This lesson invites students to explore Swedish mushroom hunting as both a cultural and environmental philosophy. Through a mix of mini lectures, storytelling, and outdoor experiential learning, students first learn about Allemansrätten (Sweden’s Right of Public Access) and how mushroom hunting evolved from post-war necessity to modern well-being practice. Students then reconstruct “a day in the forest” to reinforce the lecture’s key points about stewardship, secrecy, and serenity before participating in a quiet “hunt” activity in Pine Park.

Introduction: This project aimed to create a cookbook designed to help individuals receiving food assistance through programs like WIC, FDPIR, TEFAP, SNAP, and local food pantries, utilize beans, peas, and legumes in their meals. The focus was on providing easy, accessible recipes using six different types of beans to improve diet quality.
Methods: The cookbook was developed considering limited cooking skills, equipment, literacy, and time that may be barriers to preparing healthy food for low-income adults. Selected recipes were compiled into an educational cookbook.
