Commensality (the act of eating together) has been shown to increase psychosocial wellbeing. As culture differs, so do the ways commensality occurs. This thesis uses established literature to compare the commensality between two countries, the United States and Italy, and conclude how those behaviors impact psychosocial wellbeing. After exploration and drawing connections, the hope is that this thesis encourages a call for change on the way we view eating and how we can gather more often to improve overall psychosocial wellbeing.

What began as a Swiss development project in the 1950s has now grown into a full-fledged industry, providing jobs, creative outlets, and cultural expression for many. Food insecurity among college and university students has increased in the past decade. The COVID-19 pandemic has presented unique public health challenges, including increased food insecurity. In a cross-sectional survey of students at a private university in the midwestern U.S. (N=253) we examined how student food security status changed during the pandemic and what relation-ships exist between changes in food security and various aspects of student identities. Twenty-nine percent of responding students indicated that they became less food secure during the pandemic, and the overall reported food insecurity rate increased by 130.77%. The COVID-19 outbreak led to major disruptions in food systems across the globe. In the United States’ Chicago region, the outbreak created immediate concerns around increased hunger, food insecurity, supply chain disruptions, and loss of local livelihoods. This was especially evident in communities of color, which faced disproportionate impacts from the pandemic. In March 2020, the Chicago Food Policy Action Council (CFPAC) coordinated a Rapid Response Effort that convened people in working groups related to emergency food assistance, local food producers, small businesses, and food system workers to address urgent needs that arose due to the pandemic. This paper raises questions about the implications of migration for inclusive social development in Kingston, Jamaica. This is based on an assessment of the relationship between remittances and food security at the household level. Emphasis is placed on whether remittances have made a difference in reducing the food insecurity associated with poverty and thus could contribute to inclusive social development. A city-wide survey of Kingston based on a sample of households in communities spanning different socioeconomic sectors was conducted to provide the data. Background: Digital interventions may help address low vegetable intake in adults, however there is limited understanding of the features that make them effective. We systematically reviewed digital interventions to increase vegetable intake to 1) describe the effectiveness of the interventions; 2) examine links between effectiveness and use of co-design, personalisation, behavioural theories, and/or a policy framework; and 3) identify other features that contribute to effectiveness. A significant portion of the food loss in agricultural supply chains occurs at the farm level and has been linked to high cosmetic standards adopted by retailers regarding the size, color, and shape of the produce. We examine the economic incentives for retailers to adopt such high standards and their impact on food loss. We build a sequential game between a retailer and a farmer, where the retailer signs a contract with the farmer specifying both the wholesale price and cosmetic quality standard. Setting a high standard allows the retailer to sell the products at a price premium but increases …

Effective irrigation management is critical for future food supplies and the prosperity of producers engaged in irrigation production. Through a deficit irrigation field experiment, we determine the financial impact on producers caused by changing irrigation costs, corn prices, extreme weather events, and restricting irrigation levels. Results suggest that the optimal economic strategy within our constrained optimization model is to fully irrigate, with the economic impact highly dependent on commodity prices, restriction level, and irrigation costs. The greatest economic losses caused by irrigation restrictions come from decreases in yield. Some simulations resulted in negative profits, indicating that a switch to alternative …

In fact, Faunalytics’ study of current and former veg*ns (2014) found that the number of lapsed (former) vegans and vegetarians in the United States far surpasses the number of current veg*ns, and most who lapse do so within a year. This paper presents a synthetic reading of the food regime and gender regime concepts to consider current trends in deagrarianization. Its underlying goal is to articulate a research agenda for studying the food regime through the lens of gender and labor relations. There is a lack of tools and training to assist in salary and benefit (S&B) negotiations within the nutrition profession. This study is the first to analyze thoughts, feelings, and experiences with S&B negotiations among nutrition and dietetics professionals. The 32-item, web-based, cross-sectional survey study was completed by English-speaking individuals of any gender who identified as a “nutrition and dietetics professional,” were 18 years of age or older in the United States or US Territory. Abstract: The purpose of this collective case study was to explore the diffusion of interprofessional education (IPE) in response to specific Future Education Model (FEM) Graduate Program accreditation standards and performance indicators. Data were collected via semi-structured interviews with a purposive sample of 12 FEM program directors from geographically diverse US states. The impact of the COVID-19 pandemic on urban households in the Global South has not yet been adequately explored, despite an emerging consensus that impacts of the pandemic were more severe in urban than rural Africa. This paper addresses the knowledge gap by examining the relationship between pandemic precarity and food insecurity in Ghana’s urban areas during the pandemic in 2020. The data comes from the World Bank (WB) and Ghana Statistical Service (GSS) COVID-19 High-Frequency Phone Survey.
