Investigations of how past human societies managed during times of major climate change can inform our understanding of potential human responses to ongoing environmental change. In this study, we evaluate the impact of environmental variation on human communities over the last four millennia in the southern Lake Titicaca basin of the Andes, known as Lake Wiñaymarka. Refined paleoenvironmental reconstructions from new diatom-based reconstructions of lake level together with archaeological evidence of animal and plant resource use from sites on the Taraco Peninsula, Bolivia, reveal frequent climate and lake-level changes within major cultural phases. Traditional foodways of Indigenous people around the world are being changed by human-caused climate change, environmental policy, and land management. For Indigenous people in interior Alaska and Montana, culture and survival are tied tightly to hunted and gathered food. Economic insecurity exists whenever income sources are uncertain, and this is a failure of a fundamental human right. The Covid-19 pandemic has presented unprecedented disruptions to the US economy and has created unparalleled food insufficiency and economic hardships. Before the pandemic, household food insufficiency existed but downplayed in the political arena. In 2019, 10.5 percent of households in the US lived in extreme poverty and were food insecure, the lowest since 1959, but the pandemic has had devastating effects on household food insufficiency. In a world increasingly driven by neoliberalism, agricultural markets have been incentivized to industrialize, globalize, and consolidate. Preliminary research from a related VCU faculty team indicated that roughly ⅓ of all VCU students experience some level of food insecurity. Inventions to remedy this dire situation will require a more complete picture of the campus food environment. This project documented aspects of that environment. Our research team surveyed vending machines within Monroe Park buildings and facilities, along with nearby corner stores that were easily accessible to the university. Our team employed two instruments from the nationally recognized Nutritional Environment Measure Survey (NEMS), a toolkit created by Penn State University, to determine the nutritional quality of the campus food …

According to the Centers for Disease Control and Prevention, 48 million people get sick, 128,000 are hospitalized and 3,000 die each year from foodborne illness. The Food Safety Modernization Act (FSMA) shifted the focus of the Food and Drug Administration from response, to prevention of foodborne illness. The FSMA identified seven rules related to food safety prevention measures, including inspection and compliance, response and enhanced partnerships to ensure food safety along the food system, and employee-training compliance measures. Plasma-generated compounds (PGCs) such as plasma-processed air (PPA) or plasma-treated water (PTW) offer an increasingly important alternative for the treatment of microorganisms in hard-to-reach areas found in several industrial applications including the food industry. To this end, we studied the antimicrobial capacity of plasma-treated water on the vitality and biolm formation of Listeria monocytogenes, a common food spoilage microorganism. Northern Canada has struggled with various systemic challenges based on Eurocentric ideologies, policies, and practices. A major challenge Indigenous communities face North of the 60th parallel is their food security and sovereignty. Inuit, First Nation and Métis populations across the North experience 5 to 6 times higher levels of food insecurity compared to the National average (Food Secure Canada, 2020). Our local and regional food systems are predominately modeled on a failed capitalist market-based economy.
