Food waste is an ongoing problem in the complex global food system. College campuses are in a unique position to address food waste through reducing it in their own food systems and by encouraging students to develop behaviors to reduce and divert waste from landfills. In this thesis project I seek to understand how students consider food waste and their attitudes and ideas about reducing it. To this end, I observed student behaviors and waste in University of Louisville’s all-you-care-to-eat dining hall and weighed plate waste there. This research investigates various methods for producing food on the campus of Gettysburg College in order to improve food sustainability. The transportation of food contributes to the increased use of fossil fuels, which in turn leads to global warming and climate change. By producing a larger portion of its food on-campus, Gettysburg College could reduce the amount of food transported to the school, thereby lessening the College’s environmental impact. Urban farming techniques, hydroponics, aquaponics, and greenhouse-based agriculture are explored as viable methods for achieving this goal. Rural Appalachian populations have greater rates of obesity and chronic diseases attributed to lesser consumption of fruits and vegetables (F/V) and physical inactivity. Barriers to F/V consumption and physical activity include poor access and affordability. To help overcome these barriers, a community-initiated walking and farmers market F/V voucher program was implemented.

Participants were encouraged to walk (1.2 miles roundtrip) to the local farmers market to redeem a $10 voucher which could only be spent on F/V. The 16-week program (June – Sept) included 121 participants. Data was analyzed by creating two groups, low-engagers and high-engagers that differed significantly in the …

The purpose of the study was to evaluate the effectiveness of using a video model, graduated exposure (i.e., touch, smell, try, eat), and positive reinforcement to first increase food exploration, and then increase consumption of non-preferred foods in young children that exhibit food selectivity in a school setting. A multiple probe design across behaviors replicated across participants was used to evaluate the effectiveness of a treatment package. The treatment package consisted of a video model of each target behavior (touch, smell, try, eat) and positive reinforcement which included preferred foods and materials. In 2008, Proposition 2 passed, forcing all egg producers in California to provide more room inside of cages to their laying hens. The Humane Society of the United States [HSUS] initiated this battle and won but, less than a decade later decided that still wasn’t enough room for the birds. HSUS is now pushing to have a new measure on the ballot in November 2018 forcing all egg producers in California to produce their eggs cage free.

This article presents a pedagogical approach to teaching technical and professional writing with an eye toward cultivating awareness and generating informed research among undergraduate students about food production and its various, intricate networks between Big Ag and campus cafeterias. Our pedagogy, influenced by interdisciplinary content, is designed to teach students to differentiate between food processes—such as production versus distribution and consumption—by viewing these networks as communicative practices rather than as inevitable chains or simple functions of one another. Social networks play a significant role in adolescent decision making, specifically when it comes to dietary outcomes. This study, granted by the United States Department of Agriculture (USDA), assessed the connectivity of these social networks and the impact they have on fruit and vegetable, added sugar and sugar sweetened beverage consumption. Additionally, the relationship between shopping companionship and dietary choices was studied. Positive and negative associations were found among adolescents who shop with parents or friends. It was also found that those adolescents with greater social network cohesion were found to have more negative dietary outcomes. Divulging further into the …

The purpose of the qualitative study was to explore the relationship between the male elder’s experience of food insecurity and the utilization of food assistance programs. Particular emphasis was placed on the meaning the men ascribe to their experiences in accessing food. In the review of the literature, the determinants of food insecurity, especially for the elder male population, were identified as having important implications for fulfilling food needs. The purpose of this project was to create an empowerment program for children with severe food allergy (SFA) in a residential camp setting. Despite recent advancements in research, there is no cure for SFA, thus there is a need for programs to help children manage their allergies and cope with the ramifications of their condition. Quality of life is a major concern for children with SFA, as the constant fear of exposure to an allergen can lead to high levels of anxiety.
