How sustainable is our food system? An investigation of diet choices and their environmental impacts

Food is often thought of as a commodity, when fundamentally it is our nourishment and foundation of life. In the United States, it appears as if we have a functional food system, but in reality what we have is an unsustainable system of industrialized agriculture perpetuated by a disproportionate allocation of resources. Current consumer behavior within our food system is detrimental to future environmental and human well being, ultimately exacerbating the timing and magnitude of global climate change.

Between 1600 and 1800, the promise of fresh food attracted more than seven hundred English, French, and Dutch vessels to Madagascar. Throughout this period, European ships spent months at sea in the Atlantic and Indian Oceans, but until now scholars have not fully examined how crews were fed during these long voyages. Without sustenance from Madagascar, European traders would have struggled to transport silver to Asia and spices back to Europe. Colonies in Mozambique, Mauritius, and at the Cape relied upon frequent imports from Madagascar to feed settlers and slaves.

This dissertation consists of three essays that investigate consumers’ response to technologies that mitigate food safety risks: cattle vaccines against E. coli and direct-fed microbials.

The first essay examines the influence of information framing and issue involvement on perceptions of the two food safety technologies. This essay also examines the role of issue involvement on food safety perceptions. A hypothetical survey which includes six information treatments was developed, and targeted a representative, random sample of U.S consumers. This study uses a narrative approach to explore the role of soup kitchens in the predominantly Coloured and English-speaking Wentworth community. Many of the community’s churches1 and non-profit organizations host soup kitchens regularly, rotating so that there is a meal available each day of the week.

Qualitative data was gathered through volunteering with the soup kitchens as a participant observer and having conversations and open-ended interviews with soup kitchen guests and hosts. Agriculture is an essential function of contemporary human life that is bound by nature. Therefore, economic, social, and environmental perspectives must be examined to identify the most sustainable agricultural systems. This thesis argues that agriculture should be divorced from capitalist economic principles regarding specialization, trade, and production scale. Such principles have supported industrialized growing methods, which have been economically, socially, and environmentally unsustainable. In order for agriculture to be sustainable and equitable, food systems need to be de-commoditized and removed from the capitalist market. Overharvesting, habitat alterations, and pollution are the major contributors to the depletion of the mussel resource, upon which the shell industry is based. A history of unconcern by shell harvesters and weak conservation enforcement by governmental agencies, has left the major waterways of the United States nearly void of commercial clams.
