This dissertation consists of three chapters that evaluate how a change in the redemption of Supplemental Nutrition Assistance Program benefits impacted grocery purchasing behavior and food consumption to provide some of the first estimates of the impacts from the pilot. The SNAP Online Purchasing Pilot (OPP) allowed recipients to use their benefits online for participating retailers which was initially planned for 8 participating pilot states with a few participating retailers but massively expanded during the COVID-19 pandemic. High temperatures caused by climate change significantly impact society, including child nutrition. Our research focuses on the impact of high temperatures on the anthropometric outcomes of children aged 1 to 5 in 54 countries worldwide. We analyze the historical climate and anthropometric data to evaluate the effect of high temperature on weight-for-age (WAZ) and weight-for-height (WHZ) in children. Results indicate that high temperatures negatively affect child nutrition, particularly in areas above 20°C, and children in rural areas are more vulnerable. The impact of monthly temperature on child anthropometric outcomes varies across countries, regions, and cultural practices. Economic status alone is …

This dissertation is composed of two essays on agricultural trade and food security. The first chapter is entitled “Decomposing the GMO regulation impact on bilateral trade.” The essay analyses the complex impact of GMO regulations among countries on bilateral trade with a focus on GMO approvals. Three effects impact bilateral trade flows between trade partners: productivity enhancements in the source country, sorting cost from bilateral dissimilarity in regulations, and stringency impact on import demand. We argue that most research collaboration today is based on interactions between closely related disciplines, in which researchers share data, methods, and insights within a common framework or problem. According to the Food and Agriculture Organization of the United Nations, 14.5 percent of all global anthropogenic GHG emissions are estimated to be represented by livestock (FAO), and cattle, raised for beef and milk, are the largest animal species responsible for emissions, comprising over 60 percent of the livestock sector’s emissions. This study aims to analyze the demand for food among Indonesian households, consisting of foods prepared at home (FPAH) and food away from home (FAFH). Utilizing longitudinal data from the National Socioeconomic Survey 2011-2013, combined with the Village Potential Statistics, the study estimates the demand with the Linear Approximated Almost Ideal Demand System (LA/AIDS). The results show that both FPAH and FAFH are normal goods, but FAFH is more elastic than FPAH. Additionally, in terms of income elasticity, we found that households show stronger responses in consumption on FAFH, compared to FPAH. We also present heterogeneity analysis on different types …

In this thesis I argue that improving diet in communities depends on building nutritional knowledge. In examining the role of community level organizations, I look specifically at how knowledge is conveyed through agriculture and gastronomy. This project analyzes how civil society organizations work to reintegrate individuals into food systems, compelling consumers to take agency over their diets and pursue better livelihoods. The industrialization of food systems has fundamentally changed the way humans connect with food and diet. This paper studies the response of agricultural production to rural labor loss during the process of urbanization. Using household microdata from India and exogenous variation in migration induced by urban income shocks interacted with distance to cities, we document sharp declines in crop production among migrant-sending households residing near cities. Households with migration opportunities do not substitute agricultural labour with capital, nor do they adopt new agricultural machinery. Instead, they divest from agriculture altogether and cultivate less land. We use a two-sector general equilibrium model with crop and land markets to trace the ensuing spatial reorganization of agriculture. Other non-migrant …

The health condition of the Indonesian from life expectancy at birth tends to increase, but not all years are in a healthy. The health conditions can be influenced by food insecurity, food aid and health insurance. This study aims to study the effects of food insecurity, food assistance and health insurance on health complaints. Indonesian Socio-Economic Survey (Susenas) data were analyzed using multinomial logistic regression. The results show that food insecure individu are risky health complaints and are disrupted more than twice than food secure individu. Utilizing global coffee commodity prices as an exogenous variable on households' consumption, I examine how global coffee commodity price fluctuations affect the well-being of households in the third-largest coffee-producing nation, Colombia. The results show that rural regions and regions designated as part of the "Coffee Axis" are most affected by fluctuations in prices. While results on other regional distinctions are not significant, the size of a household's farming operation dictates how increases in consumption are affected. The purpose of this quasi-experimental study was to evaluate the effects of two farm-to-school programs, specifically the Field-to-Fork Multi-visit Program (N  =  264) and the Field-to-Fork After-school Club (N  =  56), on nutritional outcomes of elementary school students (third to fifth grade) from urban, diverse, and lower-income communities. Data were collected via self-report surveys measuring: (a) knowledge of recommendations for daily fruit and vegetable intake; (b) fruit and vegetable consumption; (c) knowledge of cooking a healthy recipe using vegetables; and (d) desire for farm fresh foods at school.
