In August 2015, The Walt Disney Company announced its plans for two new 14-acre additions to their already expansive theme parks: Galaxy’s Edge. The new additions, which opened in the Summer of 2019, are themed as a never-before-seen planet within the multi-billion-dollar Star Wars franchise. Each park was designed to transport fans and tourists to a galaxy far, far way to experience foreign topographies, activities, adventures, and even food. This project looks at the representations of food and consumption across the Star Wars multimedia galaxy. This paper explores the intersections between memory and food-making and how they inform a Norwegian-American cultural identity. Based on fieldwork done in June and July of 2019 in Fosston, Minnesota, I use lefse, a Norwegian potato-based flatbread, as a focal point, for analysis. I argue that lefse-making in Fosston acts as a medium through which residents engage with a collective memory of an immigrant heritage. This traditional food-making, I assert, relies on knowledge passed down through and across family lines allowing food-makers and eaters to experience an embodied connection to their cultural past. The project content was collected through food culture research, interviews, and observation and then mediated through Instagram. This paper analyzes the effects of the hegemonic food system on low income consumers in Salta, Argentina. Results from previous literature indicate a relationship between the dominant agroindustrial model in Argentina and the concentration of power in the food production system. This paper seeks to contextualize the reports of malnutrition in Salta, a province in northwest Argentina, within larger social, cultural, and nutritional trends. Through comparing the Hollywood films Arrival and The Shape of Water, this article explicates the films’ similar portrayals of gender, social collaboration, and monstrosity. Although the mainstream media in the United States has linked the idea of the monstrous to larger global forces, the two films suggest that “the monster” exists much closer to home. Hence, this article makes the case that monstrosity occurs in a variety of formulations such as the actions of national authorities like governmental officials that oppress and endanger a myriad of American citizens as well as newcomers. Text production indexes a set of values as semiotics are utilized to market gastronomic products. These values are referenced through the language used, various font styles and sizes, and the food being promoted. The Basque Country has become a “Culinary nation,” world-renowned for its unique culture and gastronomy. This paper looks at how semiotics are used to create value in marketing locally-made wine and cider. A ubiquitously seen Basque font is used for both cider and wine to reference traditional components of Basque culture, while font size on Rioja Alavesa wine labels stresses the distinction between neighboring regions. An analysis of the history of Puerto Rican cuisine from first contact between Indigenous Taínos and Spanish explorers to present day Chicago-Puerto Rican cuisine. This thesis will examine the development of Puerto Rican national cuisine as part of growing nationalism in the late nineteenth century and again in the early twentieth century. As Puerto Rican migrants settle in Chicago, they bring their cuisine with them and Puerto Rican national cuisine changes in their new context to become Chicago-Puerto Rican cuisine. Food-related artworks are as crucial to understanding culture as other mediums in art like painting, installation, sculpture, and drawings. From Greek and Roman mosaics, Egyptian banquet scenes, to Renaissance frescoes and Flemish still-life paintings, the depiction of food and meals has had multiple meanings. Food as a medium in Western contemporary art was introduced in the 1930s by the Italian Futurists’ banquets, which celebrated modernity and technology underlying social and political commentary. It continued throughout the 1960s with performance art, conceptual art, and happenings, and in the 1970s with the Fluxus movement’s exploration of the boundaries between art and life. …

Over the past four years the Food Justice Lab, now housed within the Center for Resilient Communities at West Virginia University, hosted a series of food access planning workshops across the state of West Virginia. Mobilizing more than 200 participants, the Nourishing Networks workshop training program was designed to build grassroots capacity for food system change. Eighty-percent of workshop participants were women and dialogues recorded at these events revealed how women are disproportionately impacted by food insecurity and disproportionately labor to repair a broken food system. Yet while the imaginative links to nature in his poetry have already been critically explored, little attention has been paid so far to his rendering of local food and foodways. From ploughing, digging potatoes and butter-churning to picking blackberries, Heaney sketches not only the everyday activities of mid-20th century rural Ireland, but also the social dynamics of community and identity and the socio-cultural symbiosis embedded in those practices. Recent representations of slavery, however well intentioned, have provoked discussions about who should represent black pain and oppression and what purpose such representations serve. Also evoking such questions are contemporary plantation tours, most of which are white-centered, “moonlight and magnolia” recreations. There have been efforts to represent slavery more accurately at plantations such as Oak Alley, and most notably, the Whitney Plantation, which opened in 2014 in Wallace, Louisiana.

This study is an examination of how women participate in agriculture in Samoa as farmers and growers, what hardships women encounter and how they overcome these, and the organizations that influence people’s experiences. Censuses have historically undercounted the number of women in agriculture in developing countries, largely due to rigid international definitions of what counts as labor, which overlook cultural nuances, and this study aims to fill this gap in research. The animal liberation movement, among other goals, seeks an end to the use of animals for food. Philosophers who write against animal exploitation agree on the goal but differ in their approaches: Deontologists argue that rearing animals for food infringes animals’ inherent right to life. Utilitarians claim that discontinuing the use of animals for food will result in the maximization of utility. Virtue-oriented theorists argue that using animals for food is an unvirtuous practice. Introduction: Framing is an important aspect of the policy process that helps the public and decision makers sort through and resolve highly charged claims about an issue. Through slight changes in the presentation of issues, a framing effect may alter public support. The way a proposed sugary drink tax is discussed in public discourse and by the media significantly influences policy acceptance. Given the public health significance of obesity and diabetes in West Virginia (WV) the study of media frames employed to represent a sugary drink tax policy is useful.

All this changed with the Celtic Tiger when the Irish public was introduced to Caesar salad, tomato and fennel bread, tapenade and Chardonnay. From 1989 to 1993, Restaurant Patrick Guilbaud was like a lone beacon of consistency in the Irish edition of the Michelin Guide. In her paper ‘A Cultural Field in the Making: Gastronomy in 19th-Century France’, Priscilla Parkhurst Ferguson argues that the field of gastronomy came into existence in the middle of the nineteenth century in France. This field of gastronomy was constructed from two elements, the significance that gastronomy, defined at the time as a structured set of culinary practices, had attained in France by the nineteenth century, but also, the contribution of writers of culinary discourse who wrote about this gastronomy.
