It is widely assumed that laws governing dairy productioninclude substantial protection of animals’ interests—that in some way the state is regulating the treatment of farmed animals and protecting them against the worst excesses of their owners’ selfinterest. In fact, across jurisdictions in Canada and the United States, the standards governing farmed animal protection are not established by elected lawmakers or appointed regulators, but are instead primarily defined by private, interested parties, including producers themselves. By the end of the 20th Century, the industry was dominated by large-scale producers marketing products via large cooperatives. Improvements in transportation, advances in animal breeding and feeding technologies, and scale economies have allowed the industry to be more competitive on global markets, where there is now active international trade in dairy products. A series of greenhouse-based, rotary-drum bioreactor experiments was designed to study microbial dynamics and enzyme activity during optimization of food waste composting. This work aims to optimize food waste composting by defining the best food waste-to-bulking agent proportion controlling conditions and by evaluating the food waste composting process when inoculated by a bacterial inoculant product compared to uninoculated compost. Three experiments were run in total. The two first experiments were conducted for 48 days with sampling at each step of composting, while the third experiment last 50 days and included one extra sampling date. The coronavirus (COVID-19) pandemic is disrupting the global economy in unprecedented ways, and the agricultural sector is no exception. Prices of most commodities decreased since the pandemic began, which are affecting farm revenues and production costs. We assess the impact of COVID-19 on Arkansas field crop farms using the Representative Farm models, calibrated to the latest baseline published by the Food and Agricultural Policy Research Institute. The results show that COVID-19 decreases the net cash farm incomes of all five farms, increases the probability of having a negative net cash farm income, and increases the cost of commodity programs. When harvested, paddy rice is typically at a moisture content (HMC) between 15 and 22%. Upon delivery, the rice is subsequently dried by the mill to a moisture content (MC) of 12.5%. Riceland Foods Inc., the largest miller of rice in the world, uses a stair-step pricing model to charge farmers to dry in price/unit as the MC of grain decreases from a range of +22% to 13.5%. Arkansas also has one of the highest percentages of food insecurity and obesity in the United States. Low-income households, such as Supplemental Nutrition Assistance Program (SNAP) recipients, are at a higher risk of these issues. Financial assistance programs have been implemented to help in aiding these problems. The Double Up Food Bucks program (DUFB) is one of these programs. In Arkansas, 26.3% of children are food insecure, meaning they do not have enough or lack the ability to obtain enough food for adequate nutrition (Miller 2019). In recent years, a new phenomenon has been taking place called lunch shaming where children are sometimes forced to wear signs or handstamps that say the child’s lunch account is overdue. This research analyzes how the media frames food insecurity and how perceived social stigmas affect a student’s willingness to seek out help when struggling with food security.

Conversion of private lands, particularly agricultural tracts in marginal areas, to forests can bolster carbon abatement. The United States government agencies administer some voluntary, incentive-based programs to encourage landowners to adopt production practices with positive environmental outcomes. Rice consumption in Benin is increasing along with shifting consumer demand toward higher quality rice. In this context of changing demands, experimental estimation methods provide an effective way to estimate the current state of consumer preferences. We conducted a hypothetical choice experiment in 15 open markets in Benin to analyze the demand for rice and its substitutes. The results reveal that consumers value quality rice, even those in the low-income class. This project utilized a mixed-method needs assessment approach to urban agriculture in Arkansas, a predominately-rural state. Chapter II was a qualitative study, using semi-structured, in-depth interviews, that investigated the perceptions, needs, and experiences of Arkansas urban farmers and their interactions with the University of Arkansas Division of Agriculture Cooperative Extension Service (CES). Interviews were conducted with 16 urban farmers in Northwest and Central Arkansas. The interview data revealed individualized needs based on the size, years in operation, and mission of each urban farmer interviewed. We use a bivariate sample selection model to address peer network effects on participation in and/or intensity of use of land being irrigated by alternative irrigation practices in the state of Arkansas. As groundwater in the state becomes more limited, the use of scientific scheduling, flowmeters, and more efficient row crop water application systems will allow producers to better manage water resources. We find relatively large, positive relationships between belonging to a peer network of the same irrigation practice and participation in that practice. Evaluating the global environmental impacts of the current and future energy policies in Saudi Arabia using Life cycle assessment (LCA) method was the main objective of this dissertation. First, the attributional life cycle assessment (ALCA) framework was used to evaluate the Saudi’s air conditioning systems, as they are responsible for about 70% of the total Saudi residential electricity consumption. The ALCA’s results showed that the AC use phase produces the largest share of the environmental impact and the magnitude of the environmental impacts is influenced by the type of primary fuel used for electricity generation.
