The two articles presented in this thesis used a researcher-developed literature-based survey instrument to collect data on the Expanded Food and Nutrition Education Program (EFNEP) in the United States. Data was collected on methods of teaching, communication technologies used, recruitment strategies, barriers to attending classes, and program assistant demographic data. There were 803 program assistants working during the 2018-2019 program year. There were 346 program assistants who completed the 35-question survey instrument during data collection.

In the instance of agriculture, the genes introduced provide advantages for the farmer and consumer by yielding plants that produce greater yields, longer growing seasons, longer shelf lives, greater concentrations of vitamins or add additional vitamins that are novel to the plant. This paper aims to integrate experiential, interdisciplinary approaches into environmental economics courses through a stated preference analysis for eelgrass beds harboring aquatic plants foundational to many estuaries and coastal zones. It argues that such approaches are necessary in undergraduate education to support real-world needs in oceans and climate policy. Through collaboration with ecologists and peers, students developed willingness-to-pay measures of $35 and $42 for a 10-year restoration program for 200 acres of eelgrass (Zostera marina) in the San Francisco Bay based on open- and closed-ended elicitation formats. This dissertation studied the adoption of agricultural technologies and the value of information for the allocation of resources in agriculture. Chapter 1 studied traditional (e.g., land and labor) and commercial (e.g., machinery and fertilizers) inputs in South American agriculture. Acemoglu’s directed technical change was used to estimate the process of induced innovation using deforestation as source of exogenous variation for the agricultural land supply. The results indicated that larger availability of land in intensive deforestation countries caused more land-complementary inputs (machinery) to be used relative to labor-complementary inputs (fertilizers). This study analyzes the voluntary approach to agriculture promotion programs through the lens of the Nebraska Livestock Friendly County (LFC) Program. In 2003, the Nebraska Department of Agriculture (NDA) launched the LFC program to bolster the livestock sector in participating counties. The program is unique because of its voluntary nature and targeted agricultural promotion efforts. The NDA designates counties as “Livestock Friendly,” and assists them in streamlining approval processes for livestock feeding operations. The Philippine aquaculture sector is primarily dominated by milkfish, with the province of Iloilo as one of the key producing areas. However, the production in the province has exhibited a decreasing trend since 2011. In this light, this study is undertaken to determine the technical efficiency of milkfish production in the province of Iloilo and identify the factors that significantly affect such efficiency. Utilizing the maximum likelihood estimation method, a Cobb-Douglas production function was specified to estimate farm-level efficiency using the data from 181 milkfish producers interviewed. This study aimed to explore the impact of the farmgate price of hogs, the volume of hog production, the volume of imported pork, the market retail price per kilo of dressed chicken, the quantity of pork consumed by the population, the GDP per capita, and African Swine Fever (ASF) on the pork market retail price in the Philippines. The Autoregressive Distributed Lag (ARDL) approach was implemented to model the pork price using quarterly data from 2000 to 2020. This study examined the antecedents of Filipino engineering students’ intention to work overseas, applying the theory of planned behavior (TPB) (involving attitude, subjective norm, and perceived behavioral control) extended with migration push and pull factors (PPF) (involving salary and compensation, career prospects, and quality of life). Structural equation modeling using 1,706 questionnaire responses proved that the PPF dimensions were indistinguishable, while another factor distinct from attitude, evoking the perceived enjoyment of working overseas (PEJ), emerged. The TPB and PPF were identified as important antecedents of intention (R2 = 0.667). PEJ had no direct effect on it but was significant along …

The international development community is off-track from meeting targets for alleviating global malnutrition. Meanwhile, there is growing consensus across scientific disciplines that fish plays a crucial role in food and nutrition security. However, this ‘fish as food’ perspective has yet to translate into policy and development funding priorities. We argue that the traditional framing of fish as a natural resource emphasizes economic development and biodiversity conservation objectives, whereas situating fish within a food systems perspective can lead to innovative policies and investments that promote nutrition-sensitive and socially equitable capture fisheries and aquaculture. Obesity disproportionately affects rural communities, and Appalachia has some of the highest obesity rates in the nation. Successful policy, systems, and environmental (PSE) interventions to reduce obesity must reflect the circumstances of the population. We used a health equity lens to identify barriers and facilitators for healthy food access in Martin County, Kentucky, to design interventions responsive to social, cultural, and historical contexts.
