Objective: Dietetics education transitioned to competency-based education (CBE) in July 2022. Despite its benefits, managing competencies may be a challenging aspect of CBE for dietetics program and internship directors (PDIDs), yet it is unclear what specific aspects of competency management are difficult. Using design thinking, this study sought to capture the impact recent CBE implementation had on PDIDs by identifying specific pain points (i.e., challenges) related to competency management. Characterized by recurrent hospitalizations, heart failure significantly contributes to morbidity, mortality, and healthcare costs in the United States and worldwide. Because malnutrition is prevalent in the heart failure population, healthcare providers must perform nutritional assessments on admission to intervene in the case of malnutrition, prevent deterioration, and improve patient prognosis. This qualitative phenomenological study explored physical wellness during pregnancy using the theoretic framework of Social Cognitive Theory to show perceptions and lived experiences of women who are pregnant or who have been pregnant in the past three years. Does the empowerment of women improve a child’s long-term health outcome? Although the relationship seems intuitive in daily life, most studies done globally have found no association. This paper explicates the relationship between women’s empowerment and children’s malnutrition by taking Cambodia as a case study and adding new empirical evidence to the debate. Data were drawn from the Cambodia Demographic and Health Survey (DHS) 2014, with a sample of 4,118 children nationwide. America’s diet-related illness crisis intersects with a lack of nutrition literacy, nutrition security, and systemic inequities. The Cooperative Extension Service’s (CES) national infrastructure could potentially provide equitable access to quality nutrition education in the US utilizing a Master Food Volunteer (MFV) model. This research brief examined preliminary evidence for the MFV model as a support for CES agents and paraprofessionals, and results show a paucity of evidence. Further research and a pilot program with pre-established measures for health-related knowledge and behaviors could elucidate the model’s potential to increase equitable access to evidence-based programming, nutrition, and implementation guidance.

Many young children in Ecuador suffer from high rates of malnutrition and stunting that affect their long-term growth and development. Little is known about the dietary patterns of children from the Amazon region who experience some of the highest rates of stunting (height-for-age) within Ecuador. Semi-structured interviews were conducted with 50 mothers of young children living in the Ecuadorian Amazon. In addition to descriptions of overall dietary patterns, three themes emerged from the interviews relating to strengths mothers have in feeding their children healthy diets: knowledge, autonomous and independent children, and supportive and responsive parenting. Fifty-six percent of school-aged children participate in team sports, yet there is limited evidence on how participation in youth sports impacts the dietary behaviors of participants and their families. Our team surveyed parents and caregivers of children participating in recreation league youth sports (n = 178) to assess the foods and beverages offered as team snacks and factors that influence team snack choices. Juice was the most popular beverage, and crackers were the most popular snack reported by parents. This research aimed to explore the roles of food security status (FSS), financial literacy (FL), and nutrition literacy (NL) on the diet quality (DQ) of college students at the University of Maine. This research additionally sought to understand mediational relationships among these factors that could impact DQ.

A cross-sectional convenience sample of college students completed an online questionnaire assessing sociodemographic factors, short healthy eating index (sHEI)-score, FSS, FL, and NL. Participants' continuous data were analyzed using a Pearson correlation. Dementia is defined as gradual, progressive loss of cognitive functioning, greater than what is expected of normal aging, resulting in functional impairment. There are several types of dementia clinical syndromes that are accompanied by unique patterns of cognitive dysfunction and neuropathological changes. Alzheimer’s disease (AD) is the most common type of clinical dementia syndrome, accounting for approximately 60-70% of cases. Neuropathological mechanisms associated with AD include the disruption of the cholinergic system, accumulation of amyloid-beta plaques and hyperphosphorylated tau, as well as vascular pathology. First essay: This paper studies the impact of Nepal’s 1996-2006 Maoist insurgency on the nutritional status of children. We employ the difference-in-difference (DID) model. The proxy for conflict intensity is killings per thousand population (KPT). The finding of our study is that a marginal increase in KPT decreases the height-for-age (HAZ) of the children by 0.0844. The loss in child health was statistically not significant in both non-poor and poor households. Therefore, the impact of the insurgency on child health is largely driven by the negative effect of the insurgency on Janajaties, irrespective of their economic status.

Abstract: The purpose of this collective case study was to explore the diffusion of interprofessional education (IPE) in response to specific Future Education Model (FEM) Graduate Program accreditation standards and performance indicators. Data were collected via semi-structured interviews with a purposive sample of 12 FEM program directors from geographically diverse US states. However, it is unclear how this new benefit redemption model may impact participants’ welfare since vendors may have an asymmetric information advantage compared with WIC customers. This study used data from a diverse set of undergraduates from the Claremont Colleges to examine the relationship between cognitive control (impulsivity and response inhibition) and self-regulatory ability as an indicator of sustained early childhood parental feeding behaviors in adulthood. In addition, the current study explored if early childhood parental feeding behaviors predicted food decision-making in adulthood as a result of perceived taste and nutritional value of food items. In this thesis I argue that improving diet in communities depends on building nutritional knowledge. In examining the role of community level organizations, I look specifically at how knowledge is conveyed through agriculture and gastronomy. This project analyzes how civil society organizations work to reintegrate individuals into food systems, compelling consumers to take agency over their diets and pursue better livelihoods. This research review addresses food insecurity among veterans, linking it to adverse health outcomes and increased suicide risk. Despite routine screenings by the U.S. Department of Veterans Affairs, food-insecure veterans have lower enrollment in the Supplemental Nutrition Assistance Program (SNAP) than nonveterans. The research examines nuanced reasons for veterans' SNAP participation, highlighting disparities in initiation, termination, and benefit utilization patterns. Older veterans and those with disabilities are identified as underserved groups, emphasizing the need to improve SNAP accessibility for them.
