Food As A Vector For Change: Lessons From The Third Sector On Improving Livelihoods With Nutritional Knowledge In Medellín And Bogotá, Solomon Treister

In this thesis I argue that improving diet in communities depends on building nutritional knowledge. In examining the role of community level organizations, I look specifically at how knowledge is conveyed through agriculture and gastronomy. This project analyzes how civil society organizations work to reintegrate individuals into food systems, compelling consumers to take agency over their diets and pursue better livelihoods. The industrialization of food systems has fundamentally changed the way humans connect with food and diet. Introduction: COVID-19 has challenged governments, healthcare systems, and individuals, drawing attention to the limits of modern technology and the extent of social inequity. Such challenges have directed attention to historical epidemics as repositories of data that could contribute to effective public health strategies and prognostic modeling. In light of the well-established correlation between frailty and mortality from COVID-19, this paper investigates the relationship between frailty, inequity, and mortality in the setting of the Black Death of 1346 – 1353, in order to identify trends over time in populations at the greatest risk of mortality during pandemics.

Obesity is a biosocial phenomenon in that it is shaped by both biological and social processes. On the biological level, excess body fat increases one’s risk of placing the body in a non-homeostatic state that can weaken the immune response. On the social level, social inequalities are linked to obesity in the United States where racial and ethnic minority communities with low education and high poverty rates bear the largest burden of obesity. Yerba mate, Ilex paranguariensis, is a shrub commonly found in the Atlantic Forest of South

America which covers part of northeast Argentina, eastern Paraguay, and southern Brazil. The

dried leaves and stem of the tree are used to make an infusion, called mate, used first by indigenous

Guaraní people. Today, yerba mate is widely consumed in the Southern Cone region and is

regarded as the national drink of Argentina, Paraguay, and Uruguay. I argue that yerba mate has

entered the U.S. as a “superfood,” marketed as a product with nutritional and symbolic medicinal

values.

Objective: To understand the perception of anemia among the women of childbearing age in Bolgatanga, Ghana, and to correlate the reasoning with the high incidence of anemia in the area.

Method: This research was a qualitative study consisting of 67 interviews over the course of the three weeks that were spent in Bolgatanga. 50 of these interviews were women of childbearing age (15-49), 6 were health professionals, and 11 were women older than the age range provided. The Maya, a once great civilization, seemingly vanished without an obvious reason, before the Spanish landed in the region. Some say that their downfall was a result of famine and inadequate nutrition. Surprisingly, most of the archaeological evidence surrounding the Classic Maya diet and subsistence methods indicates that they both adequately sustained the population to the point where there has been practically no change over hundreds of years. Food And Diet In The Andes: Changing Markets And Lives In Nuñoa, James A. Fisher

The town of Nuñoa, located in the southern Peruvian Andes, has been the ongoing focus of anthropological research. Household surveys of diet and food security (n=69) administered during 2012 are analyzed here and compared to past studies from previous decades. Study results show clearly that the amount and diversity of new foods available in the area has increased dramatically, but also gives evidence for continued disparate access to certain types of food along class lines. Socioeconomic status had a significant negative correlation with food insecurity and poor households more frequently consumed both potatoes and other cheap, high carbohydrate foods such …

This project involves interviewing French taxpayers in an attempt to see if there is a connection between nutritional decisions and the amount of taxes in France. France has the best healthcare system in the world but also some of the highest taxes. This study takes into consideration the quantitative but also the qualitative data from participants so as to understand the personal effects of taxes upon nutritional decisions.

School gardens have existed since the late nineteenth century and today are becoming increasingly popular in many parts of the world, including where I studied in Maine and Australia (AUS). Multiple organizations support school gardens in Maine, including the Maine School Garden Network, which has over 125 registered school gardens. In AUS, the Stephanie Alexander Kitchen Garden Foundation primarily supports the school garden movement and has over 800 registered school gardens. Many Africans living with HIV/AIDS also suffer from malnutrition. Together, HIV and malnutrition greatly compromise the immune system of an individual, with each condition increasing the effects of the other. This field study examines Maasai in the Arusha region of Tanzania where approximately 5.6% of the population is infected with HIV/AIDS and 45% of children exhibit stunted growth, indicating chronic malnutrition within the population. Cultural factors including gender inequality, knowledge levels, and traditions associated with Maasai (the predominant tribe in the Arusha region) were analyzed in their contributions to malnutrition and HIV. Obesity has reached epidemic proportions in the United States. Almost two-thirds of

our adult population is overweight, and more than one-third are obese. The

obesity rate is twice what it was in 1970. Most local health departments try to

address this problem with nutrition and weight control clinics, but these clinics are often

Sweetwater Organic Community Farm is an organic farm and environmental education center located in Tampa, Florida. The farm employs the community supported agriculture (CSA) model, in which members pay a single fee before the growing season begins and receive a weekly or biweekly share of the ongoing harvest in return. Using multiple ethnographic methods, this research aimed to understand the daily operations at Sweetwater as well as the perceptions of staff and CSA members. This study investigates adolescents' relationships with food and other community and household members' perceptions of youth and their food consumption to understand the multifactorial dynamic processes which create nutritional outcomes among urban and rural youth in central Tanzania. Studies on the effects of immigration are becoming more important as the number of immigrants into the United States continues to grow. This study was implemented in order to discover the infant feeding practices and beliefs of Haitians living in Central Florida. A food frequency card sort and interview were conducted with thirty-four Haitian mothers. Mothers were asked to identify which foods they fed their children. Foods pictured on the cards included a majority of Haitian staple foods, some of which are primary to the American diet as well. Foraging Responses To Nutritional Pressures In Two Species Of Cercopithecines: Macaca Mulatta And Papio Ursinus, Gretchen A. Clymer

Papio ursinus are dietary generalists that exploit a diverse repertoire of food resources. This study explored the foraging strategies of a group of Papio ursinus and the foraging differences between subgroups classified by age and sex. Food resource preference, nutritional properties of food resources, and nutritional demands were examined to test the hypotheses that the foraging strategies exhibited by the subgroups would differ and that food selection is driven by nutritional demands. Adult females and juveniles were found to seek out food resources higher in proteins, while adult males were found to prefer food resources higher in carbohydrates. The findings …
