Conventional approaches for studying emulsions, such as microscopy and macroscopic phase tracking, present challenges when it comes to establishing detailed mechanistic descriptions of the impact of emulsifier and stabilizer additives. Additionally, while a combination of sizing methods and macroscopic phase tracking can provide insights into droplet size changes and concentration, the use of multiple measurements can be cumbersome and error-prone. It is the focus of this work, to present a new method for studying water in oil (W/O) emulsions that involves using diffusing wave spectroscopy (DWS) to examine the impact of three different surface stabilizing additives at varying concentrations. Pseudo Power Law Statistics In A Jammed, Amorphous Solid, Jacob Brian Hass

Simulations have shown that in many solid materials, rearrangements within the solid obey power-law statistics. A connection has been proposed between these statistics and the ability of a system to reach a limit cycle under cyclic driving. We study experimentally a 2D jammed solid that reaches such a limit cycle. Our solid consists of microscopic plastic beads adsorbed at an oil-water interface and cyclically sheared by a magnetically driven needle. We track each particles trajectory in the solid to identify rearrangements. By associating particles both spatially and temporally, we can measure the extent of each rearrangement. We measure the bending energy of double-stranded DNA in the nonlinear (sharply bent) regime. The measurements are obtained from the melting curves of stressed DNA ring molecules. The nonlinear elastic behavior is captured by a single parameter: the critical torque τc at which the molecule develops a kink. In this regime, the elastic energy is linear in the kink angle. This phenomenology is the same as for the previously reported case of nicked DNA. For the sequences examined, we find τc=31 pN×nm. This critical torque corresponds to a characteristic energy scale (π/2)τc=12 kT room relevant for molecular biology processes associated …
