Objective: The purpose of this research study was to determine whether a 1-hour online continuing medical education (CME) course focused on nutrition for type 2 diabetes would result in a gain in nutrition knowledge by practicing physicians. Methods: A practicing physician and dietitian collaborated to develop an online CME course (both webinar and self-study versions) on type 2 diabetes. This 1-hour accredited course was launched through the state-level medical association’s education library, available to all physicians. Results: Physicians (n=43) registered for the course, and of those, 31 completed the course in its entirety. A gain in knowledge …

Background — National childhood obesity prevention policies recommend that childcare providers educate young children about nutrition to improve their nutrition knowledge and eating habits. Yet, the provision of nutrition education (NE) to children in child-care settings is limited.
Objective — Using the 2011 Academy of Nutrition and Dietetics benchmarks for NE in child care as a guiding framework, researchers assessed child-care providers’ perspectives regarding delivery of NE through books, posters, mealtime conversations, handson learning, and sensory exploration of foods to young children (aged 2 to 5 years).

The Islamic Foundation of Lincoln is a growing population within Lincoln including many different racial backgrounds, ethnic identities, and languages. Due to these various backgrounds communication may impair the education of families as well as their attitudes and behaviors. Although there are programs developed for many other minority groups, the Muslim (population comprising the Islamic Foundation of Lincoln) population does not have any data obtained from the community in terms of nutrition and physical activity behaviors, attitudes, and knowledge. BACKGROUND: Gestational Diabetes Mellitus (GDM) is defined by glucose intolerance detected with the onset of pregnancy, and if gone undetected and untreated, can lead to morbidities for the mother and baby. Implementation of nutrition counseling can work to reduce the risk of complications through dietary modification promoted and adopted during pregnancy. Follow-up is important, as individual assessment is used to modify recommendations. GDM class and follow-up provided through the Diabetes Center of Nebraska Medicine covers and promotes proper management of blood glucose (BG) during pregnancy for women with GDM.

This descriptive study explored the views of food pantry directors in four states regarding pantry fruit and vegetable stock and supply, nutrition education offered, and current practices and perceived barriers to providing access to food pantries to low-income individuals and families in need. This study examined these variables by surveying staff at the food pantries who have direct contact with the individuals and families who utilize the pantries. All survey responses were collected utilizing Qualtrics software and then analyzed in SPSS. There were 87 respondents from four different states, California, Maine, Mississippi, and South Dakota.

The provision of a nutritious diet in a child’s early years can have an immense effect on their future health and wellbeing. Due to the increasing number of children attending child care, this setting is strategically placed for teaching children important food literacy skills and establishing positive eating habits, which remain through to adulthood. However, food served in child care facilities is often not of the best nutritional quality (Zuercher, Grace, & Kranz, 2011) and there is lack of positive role modelling among staff. This project is a community-based program conducted in a local community center, First Glance. It specifically worked with the Teen Mom and Young Mom programs as well as with their children in the Tiny Glancers program. Over the course of a year the authors planned, created, and implemented an interdisciplinary nutrition education unit with the objective of increasing their nutrition and health awareness while providing support in education fundamentals such as math skills and social-cultural awareness. In the U.S., the weight status of overweight and obesity in children is increasing from recent decades (Carrol & Ogden, 2010). Whole grains play a cost-effective role in the treatment and prevention of type 2 diabetes, yet consumption remains well below recommendations. This pilot study showed that nonfamilial environmental factors have a strong influence on whole grain consumption among type 2 diabetics of German descent. Dietary records and grain questionnaires were used to probe subjects’ knowledge of the benefits of whole grains, reasons for grain preferences, and actual consumption. For this population (n=18), mean whole grain consumption ( = 48±30 g/d = 3±2 servings/d) was much higher than the national average (μ ≤ 1 serving/d). Obesity and eating disorders are major public health problems in the U.S. Prevention of these problems in childhood and adolescence is crucial to avoid medical complications and costs associated with these conditions. The objectives of this study were to determine the nutrition knowledge of students in grades K-6 (n = 62,324) participating in Supplemental Nutrition Assistance Program-Education (SNAP-Ed), to determine if the nutrition information provided by the program impacts youth nutrition knowledge and behaviors, and to determine if there is a difference in the impact of the school enrichment program versus the non-school enrichment program. Without proper nutrition and physical activity the tendency for children to gain weight increases; therefore, increasing the likelihood of becoming obese.
