Calcium needs increase as a child grows. Actual intake often decreases as a child gets older, leaving his/her developing bones at risk for injury during childhood and increasing the risk of developing osteoporosis later in life. The purpose of this study was to investigate relationships between psychosocial factors influencing consumption of calcium and vitamin D-rich foods and actual intakes of these nutrients. We examined the dietary calcium and vitamin D intakes, determined serum vitamin D levels, and assessed nutrition knowledge and perception of a sample of 20 young girls participating in competitive cheerleading in Omaha, Nebraska. Folate is important in the prevention of birth defects and in the maintenance of general health. Even after mandatory fortification, many people are still not consuming the RDA of 400 mcg/day. Consuming a diet rich in naturally high-folate foods, as opposed to supplementation, may offer additional health benefits and promote an overall healthy diet.

Background: The purpose of this study was to determine whether sedentary obese women with knee OA initiating an exercise and weight loss program may experience more beneficial changes in body composition, functional capacity, and/or markers of health following a higher protein diet compared to a higher carbohydrate diet with or without GCM supplementation.

Methods: Thirty sedentary women (54 ± 9 yrs, 163 ± 6 cm, 88.6 ± 13 kg, 46.1 ± 3% fat, 33.3 ± 5 kg/m2) with clinically diagnosed knee OA participated in a 14-week exercise and weight loss program. Participants followed an isoenergenic low fat higher …

During the preschool years, obesigenic eating habits are formed which are strongly associated with risk of developing chronic diseases later in life particularly cardiovascular disease. Docosahexaenoic acid (DHA) omega-3 fatty acid is a polyunsaturated fat with known benefits for heart health, brain cell structure, and retinal development. Current intakes of DHA are below recommended levels. United States (US) Midwestern children may be particularly at risk for suboptimal intakes of DHA. However, foods fortified with life’sDHATM, a product of Martek Biosciences and omega-3 eggs may provide culturally acceptable sources of DHA to Midwestern children.

Comparison Of Nutritional Intake Of Home School Children And Public School Children: A Comparison Study, Stephen D. Perry

Purpose: To compare selected food /nutrient consumption between families that educate their children at home with those that educate their children in the public school system.

Methods: The study sample included 112 children aged 7-11 years in Fayette Co Kentucky. The children were divided into groups according type of education. There were 65 home-schooled children and 47 children who attend public school. Subjects recorded their dietary intake for one week. The data were analyzed using Nutrition Data Software for Research (2006). Comparisons were made for the intake of selected nutrients using two tailed independent sample t-tests.

Increasing numbers of people worldwide are being diagnosed with Celiac Disease, an intestinal disorder caused by ingestion of foods containing gluten. Traditional baked goods are prepared using wheat flour that contains gluten. Literature suggests that the absorptive surface of the small intestine is damaged in people susceptible to gluten. Alternative gluten-free products are needed to improve the health of people with this disease. In 1999, the FDA approved a health claim for a relationship between intake of 25 grams of soy protein per day and reduced risk of heart disease. Literature suggests that consumers are increasingly krtowledgeable about diet and disease risk factors. While gender, age, race, and family history cannot be altered, diet may be changed to decrease risks. Data from forty-eight medical records of phenylketonuria children under treatment were investigated to determine if growth, as measured by stature, was normal; and to determine if the state of control or the age at beginning of treatment had an effect on growth.
