Farmers' Markets In Kentucky: A Geospatial, Statistical, And Cultural Analysis, Elizabeth Ann Schmitz
Masters Theses & Specialist Projects
To assess what factors are driving the exponential growth of farmers’ markets in Kentucky, geospatial and statistical analysis of a database of 121 farmers’ markets was conducted. A statewide survey of market leaders and a case study of a single farmers’ market both identified reasons for growing support of farmers’ markets in Kentucky.
Market distribution, vendor levels, and gross sales were mapped against a backdrop of county urban classification, median household income, and education levels. Kruskal-Wallace analysis was used to identify if Kentucky’s rural, micropolitan, and metropolitan markets differ significantly in terms of their age, number of vendors, and market …

‘Food For Life’: Looking Beyond The Horizon, Charles A. Francis, John W. Doran

Our real challenge appears to be anticipating what the major challenges and constraints will be to food production and distribution a decade or more into the future. This could be called ‘Beyond the Horizon’ thinking. Today there is little disagreement over the massive depletion on a global scale of two essential inputs to agriculture: fossil fuels and fresh water. We also recognize that phosphorus is found in concentrated form in only a few deposits in nature, and that agriculture is rapidly using this limited resource and dispersing it through harvested products and soil loss from fields in forms that make …

Organic farming includes growing food and fiber—animals, agronomic crops, horticultural fruits and vegetables, related products—as one dynamic and rapidly evolving component of our complex U.S. food system. Even as more farmers are moving toward organic certification and participation in an environmentally sound and economically lucrative market, questions arise about the long-term social impacts and sustainability of a set of practices that has gone from a movement to an industry. Consolidations in the organic trade have brought multinational corporations to the table, as they have observed a grassroots activity that has grown by 20% per year for the past two decades, …
