Type 2 diabetes mellitus (T2D) is one of the leading causes of morbidity and mortality in the United States, with approximately 25% of healthcare expenditures directed toward its management and associated metabolic complications. In response to the urgent need for novel therapeutic strategies, recent research has focused on bioactive compounds derived from dietary sources. In light of that, we identified the plant lignan matairesinol (MA) and its gut-derived metabolite, enterolactone (ENL), as agents capable of enhancing glucose uptake in 3T3-L1 differentiated adipocytes. Kentucky has the highest incidence and mortality rate of all site cancers, and Kentuckians residing in the Appalachian region often have worse outcomes, where cancer is a leading cause of death. Focusing on colorectal cancer (CRC) specifically, Kentucky ranks first nationwide for incidence (50 cases per 100,000 people) and fifth for mortality (about 17 deaths per 100,000 people). The Kentucky Colon Cancer Screening Program increased screening rates and reduced mortality since its launch. Yet, CRC remains a leading cause of death for Kentuckians. To understand the connection between nutrition through diet, growth and/or proliferation, we need to study the phenotypes resulting from the activation and inhibition of central metabolic pathways. Although the root is widely consumed, sweetpotato leaves (SPL) are often discarded and are only consumed in a few countries. In the United States, SPL consumption is limited to private gardens, particularly in the Southeastern United States. Not only are SPL a good source of nutrients such as vitamins and minerals, but they also contain polyphenol compounds including the caffeoylquinic acid derivatives and carotenoids such as lutein. Developmental plasticity is the phenotypic variation between organisms that is caused by environmental interactions affecting the developmental systems of organisms. The research focused primarily on nutrition-responsive developmental plasticity. In this research we used the nutritionally determined head horn development of Onthophagus taurus to better understand the developmental mechanisms and genetic underpinnings of nutrition-responsive trait development. An organism’s phenotype can be affected in development by alterations to gene expression based on environmental inputs. Nutrition is one such environmental input and the central regulator of development of large horn or small horn phenotypes in the dung beetle species, Onthophagus taurus. However, little is known about the nature of chemical compounds that are critical to this plastic horn development. To better understand these compounds, we are utilizing an untargeted metabolomic approach as well as a targeted gene approach. Background: The purpose of this study was to examine relationships among biomarkers of iron status, athletic performance, growth and development, and dietary intakes in pre-adolescent and adolescent male and female athletes.

Methods: Two-hundred and forty-nine male (n = 179) (mean ± standard deviation for age = 12.0 ± 2.1 years, height = 156.3 ± 13.9 cm, and weight = 49.1 ± 16.5 kg) and female (n = 70) (12.0 ± 2.2 years, 152.4 ± 12.3 cm, 45.3 ± 14.5 kg) athletes volunteered for capillary blood sample, anthropometric, athletic performance, and dietary intake assessments. Background: Increased intakes of ready-made and fast foods paralleled with decreased homemade food consumption have been associated with increased rates of obesity. Researchers have shown associations between cooking self-efficacy (SE) and cooking frequency (CF) with dietary quality and weight status. Some cooking interventions have shown positive associations with dietary outcomes, such as increased fruit and vegetable intake and decreased fast food consumption. There is still much unknown about SE and CF, especially among youth.

Epidemiological studies have shown an association between high carrot consumption and low prevalence of cancer. This observation has been thought to be attributed to carrot carotenoids. Despite this, various intervention trials have displayed no changes in incidence or increased incidence of cancer with carotenoid supplementation. This manuscript describes the development of a “learn by actively participating” curriculum for youth and their adult caregivers (dyad pair) to increase gardening skills, culinary competence, and family meal time. The curriculum was developed by integrating “iCook 4-H” and Junior Masters Gardener “Health and Nutrition from the Garden”, and “Essential Elements of 4-H Youth Development” curriculums with additional resources for gardening activities from the USDA’s My Plate and garden-based recipes. Exposure to environmental pollutants poses numerous risk factors for human health, including increasing incidence of cardiovascular disease and diabetes. Persistent organic pollutants, such as polychlorinated biphenyls (PCBs) have been strongly linked to the development of these chronic inflammatory diseases and the primary route of exposure is through consumption of contaminated food products. Background: Rural communities experience unique barriers to food access when compared to urban areas and food security is a public health issue in rural, high poverty communities. A multi-leveled socio-ecological intervention to develop food policy councils (FPCs), and improve food security in rural communities was created. Methods to carry out such an intervention were developed and are described.

Obesity is associated with a number of complications that may increase the risk for chronic disease, including inflammation and dysfunctional high-density lipoprotein (HDL) particles. Scavenger receptor class B member 1 (SR-B1) is an HDL receptor found in the cell plasma membrane involved in cholesterol exchange and the initiation of intracellular signaling cascades. During the process of adipocyte (fat cell) formation (adipogenesis), there is a delicate balance of transcriptional programs that affect cholesterol transport and facilitate lipid accumulation. The ingestion of exogenous carbohydrates (CHO) during prolonged endurance exercise, such as long-distance triathlon, is considered beneficial with regard to performance. However, little is known about whether this performance benefit differs among different forms of CHO administration. To this end, the purpose of our study was to determine the impact of CHO ingestion from a semisolid source (GEL) on measures of performance and gastrointestinal (GI) comfort compared with CHO ingestion from a liquid source (LIQ). It is well documented that vitamin D and DHA have antiproliferative effects on a variety of human cancers, including breast cancer. Studies have shown that a combination approach to cancer treatment is more effective than any one treatment administered alone. In this study, human mammary epithelial cells from the MCF-7 cell line were treated with 25 μM DHA, 1 μM calcitriol, and 15 μM 5-Fluorourocil alone and in multiple combinations for 72 hours. Both DHA and 5-Fluorouracil slowed growth significantly (p < 0.05). In contrast, vitamin D did not inhibit cell growth at 1 μM. The combination of vitamin D and DHA inhibited cell growth slightly more than DHA alone. Interestingly, DHA was just as effective as 5-Fluorouracil at inhibiting cell growth. These results suggest that DHA may be just as efficacious as 5-Fluorouracil in slowing breast cancer progression and therefore may suggest a dietary approach to breast cancer treatment with low toxicity.

Nutrition knowledge has been shown to be increasingly critical in physician practice. Therefore, education has also become very critical. Medical schools have been working over the last few decades to include nutrition education in their curriculum, but due to many barriers, it is difficult to fulfil requirements. It is the purpose of this descriptive study to determine the nutrition knowledge of pre-medical students at the University of Arkansas and conclude if a nutrition class for these students would be beneficial. The average score of the nutrition knowledge assessment was 11.2 ± 3.04 out of a possible 23. Because the literature …
