The Choose Health Action Teens (CHAT) program of Cornell Cooperative Extension engages teens to teach a nutrition curriculum to younger youth, with the goal of enhancing the leadership skills and health behaviors of the teen teachers. Due to COVID-19, an in-person CHAT program in New York City was converted to virtual and implemented online during Summer 2020. Twelve teens, mentored by eight college interns, taught youth virtually in their homes. Quantitative and qualitative assessments demonstrated improvement in teen leadership and facilitation skills and health behaviors, and suggest that converting this type of programming to a virtual environment can be successful.

Childhood obesity in American children has tripled in the last 20 years, and 85% of current healthcare spending is linked to diet-related diseases. The consumption of highly processed foods is linked to these trends and makes up more than half of an average American youths’ diet. Reducing the consumption of highly processed foods in children’s diets can be addressed, in part, by addressing childhood neophobia (willingness to try new foods) associated with whole foods like fruits and vegetables. The rapidly growing rate of the older adult population has created a need to better understand younger adults’ self-perceptions of aging and current trends of ageism. The purpose of this secondary data analysis research project was to determine changes, if any, in participants’ self-perception of aging after the Socially Nutritious facilitator or nutrition ambassador volunteer training, which aims to develop knowledge and skills related to aging trends, older adult nutrition, preventing ageism, and communication and educational considerations when working with older adults. Low birth weight (LBW) is a global public health issue with significant short and long-term consequences for individuals and societies. This study aims to examine the most dominant risk and variations in the proportion of LBW based on fetal factors, maternal and obstetric factors, and sociodemographic factors among toddlers in Central Java Province, utilizing the 2018 Basic Health Research (RISKESDAS) data. The study used a cross-sectional study conducted on 4255 samples, utilizing univariate, bivariate (chi-square), and multivariate analysis (multiple logistic regression). Excessive plate waste is generated in elementary school cafeterias. Adapting nutrition promotion strategies to target waste reduction and encouraging mindful and sustainable eating (MSE) are possible strategies to encourage students to reduce waste during school lunch. Farm to Tray, Tray to Farm is a 16-week intervention that aims to encourage elementary school students to develop mindful and sustainable eating behaviors. An educational curriculum was delivered to eight 5th-grade students, who served as peer leaders and disseminated messages throughout the school. A recent study conducted by PhD candidate Jacob Michels and Agricultural economist John Beghin delves into the question of whether global estimates of food insecure populations need a reevaluation of their methodology to account for increasing sedentarism. This reevaluation is prompted by the increasing prevalence of sedentary lifestyles worldwide, which calls for a redefinition of caloric thresholds indicating the onset of food insecurity. This report focuses only on dietary results from the Aztec Ruins and Salmon Ruins coprolites. The parasitological analysis was completed in 2018 and was the focus of several papers that were summarized by Camacho and Reinhard (2020). This did not include DNA analysis. The coprolites from these sites are not appropriate sources of DNA testing.

The main conclusion of the analysis are:

1) Two very distinct plant spectra are represented in Aztec Ruins West (ARW) room 219 and room 225.

The Nourish to Flourish study aimed to decrease the prevalence of obesity among food insecure children in Jacksonville, FL. Specifically, the program focused on nutrition education and access to healthy foods.
