Food And Identity Formation Among Jain Laywomen, Kristin Mcconnell Dec 2014

Food And Identity Formation Among Jain Laywomen, Kristin Mcconnell

Independent Study Project (ISP) Collection

The Jains are a small but influential minority community in India. Their religion is structured around the concept of ahimsa, the strict adherence to nonviolence in one’s every under taking. The ideal Jain diet does the least amount of harm to both oneself and one’s environment, including plants and microscopic organisms. Many foods — including meat, honey, alcohol, and underground vegetables — are forbidden. While Jain philosophy is adamant about avoiding foods that are obtained through violence, it says little about the perspectives and lifestyles of those most often charged with maintaining this diet: Jain laywomen. Because these women are …

Food wastage is the leading cause of food insecurity and malnutrition in the world today. A huge amount of food gets wasted along the food supply chain from the time it is harvested to the time it gets to our plates. A significant amount of the food wasted happens in the home as well as on farms, in restaurants and supermarkets across the globe.

In Sub-Saharan Africa, many families and communities are facing severe food shortages due to lack of electricity for refrigeration, poor storage facilities and limited access to markets.

However for many centuries, different cultures around the world …

Urban Farm And Community Garden Hybrid Models: A Case Study Of The Huerta Del Valle Community Garden, Leah Hochberg May 2014

Urban Farm And Community Garden Hybrid Models: A Case Study Of The Huerta Del Valle Community Garden, Leah Hochberg

Scripps Senior Theses

This study examines models of community gardens and urban farms and determined a successful hybrid model for future implementation at the Huerta del Valle Community Garden. This was accomplished through analyzing the unique benefits and drawbacks of community gardens and urban farms as defined by the author, and then determining the components of each model that would maximize Huerta del Valle’s social and economic potential. Community gardens are defined in this thesis as places where community members can grow their own food in individual plots, and these spaces often contribute to community building, hands-on gardening education, and improved food access. …

Physio-Chemical And Sensory Properties Of A Nutrient-Fortified Extruded Product, Tajudini Lassissi Akande May 2013

Physio-Chemical And Sensory Properties Of A Nutrient-Fortified Extruded Product, Tajudini Lassissi Akande

Graduate Theses and Dissertations

Protein malnutrition is responsible for half the deaths of children under the age of five each year in developing countries. More than 4%, 26%, and 70% of children with protein malnutrition live in Latin America/the Caribbean, Africa, and Asia, respectively. The objective of this research was to develop a novel snack made with millet, black eye bean (from Niger Republic), and rice flour fortified with soybean meal protein using extrusion technology. Proximate analysis of the four flours was carried out to determine their chemical composition. Central composite design (CCD) was used to obtain best extrusion conditions to develop a protein-enriched …

Cultural Diabetes, Keri E. Noll Jan 2012

Cultural Diabetes, Keri E. Noll

Electronic Theses and Dissertations

Diabetes has become a cultural problem across America, but particularly in the Midwest and Southern regions. For my film, I explored these two areas and compared the food and exercise culture to one of the healthier regions, the West. Having moved from Indiana to Colorado, I used my own personal experiences to analyze why people in the Midwest struggle with diabetes and obesity at such a higher rate than those nearer to the Pacific Ocean. Through a series of interviews with close friends and observational analysis of each state, I came to learn something very important about health: our food …

Kentucky Wic Participants’ Knowledge, Attitudes, And Beliefs Regarding Grains, Dustin Tyler Reed

Theses and Dissertations--Nutrition and Food Systems

Obesity, diabetes, cardiovascular disease, and poor dietary habits are major healthcare problems in the United States. These issues are especially prevalent in the state of Kentucky and among at-risk populations such as Women, Infants, and Children (WIC) participants. Studies have found that whole grains play a role in weight maintenance, protection against type 2 diabetes, and lowering cholesterol. Interventions aimed at improving WIC participant dietary behavior and intake has been successful as well. This study assessed Kentucky WIC participants’ knowledge of the benefits of consuming grains, attitudes and beliefs regarding food purchasing and grains, and identified grains consumed in a …

A Sensory-Based Multi-Component School-Based Nutrition Intervention Among Fifth-Grade Students, Stacy Lyn Bevan Aug 2011

A Sensory-Based Multi-Component School-Based Nutrition Intervention Among Fifth-Grade Students, Stacy Lyn Bevan

All Graduate Theses and Dissertations, Spring 1920 to Summer 2023

The nutritional status of children is declining as evidenced by the steady rise in childhood obesity rates over the last three decades. Consuming five servings of fruit and vegetables (FV) daily has shown to help with weight maintenance, but children are consuming far less than the recommended servings. This study was designed to test the efficacy of a sensory-focused multi-component school-based program at increasing vegetable intake among fifth-graders. Classroom, family, and community components allowed children to explore thirteen target vegetables with their senses including taste. Vegetable consumption was measured by digitalized observations of lunchtime vegetable selection and consumption. Vegetable acceptance …

The Prospects Of Using Athrospira Platensis As A Malnutrition Treatment In Kenya, Kari N. Harris Oct 2010

The Prospects Of Using Athrospira Platensis As A Malnutrition Treatment In Kenya, Kari N. Harris

Independent Study Project (ISP) Collection

The purpose of this research was to explore the current efforts using spirulina as a malnutrition treatment in Kenya. There are currently five spirulina cultivation sites that growing spirulina, four of which are located in the Nyanza Province. Their production and scope of advocacy efforts are limited. Some of the cultivation sites have a better quality control measures and strategic plan in place for expanding cultivation. Significant efforts need to be made to improve the scope of production and create links with nutrition experts in other non-governmental organizations and at the national level.

Assessment Of Calcium, Milk, And Non-Milk Beverage Intake Of Multiethnic Youth Aged 10 To 18 Years, J. Keith Jensen May 2004

Assessment Of Calcium, Milk, And Non-Milk Beverage Intake Of Multiethnic Youth Aged 10 To 18 Years, J. Keith Jensen

All Graduate Theses and Dissertations, Spring 1920 to Summer 2023

Achieving and maintaining maximal peak bone mass is critical to the prevention of osteoporosis. Adequate calcium intake during youth is a major aspect of proper bone mass development. Because of the importance of calcium, a food frequency questionnaire (FFQ) that estimates calcium intake of 10- to 18-year-old Asian, Hispanic, and white youth living in the western United States was developed. This new FFQ was shown to accurately and reliably estimate calcium intake of these youth. Accuracy among Hispanics, however, was low and requires further evaluation. A second study examined intake of calcium, milk, and non-milk beverages of Hispanic and non-Hispanic …

The Contribution Of Meats To Energy And Essential Nutrient Intakes Of Women In The United States, C. Dian Martin

All Graduate Theses and Dissertations, Spring 1920 to Summer 2023

This study used the 1987-88 USDA Nationwide Food Consumption Survey to investigate the contribution meat products make to intakes of nutrients at risk of inadequate or excessive consumption by women. The study is unique in that meat nutrients were extracted from mixed dishes, providing a more accurate picture of consumption. Cluster analysis was used to classify nonpregnant, nonlactating women 19 years and older based on their consumption patterns of total meat and individual meats (beef, poultry, processed meats, pork and seafoods) as percent of caloric intake.

Total fat and SFA intakes exceeded National Research Council (NRC) goals regardless of meat …
