Weanling male rats were made anemic and fed diets supplemented with 20 ppm iron and/or 2 ppm molybdenum. A decrease in serum iron was observed in the rats supplemented only with iron and a significant decrease in hemoglobin was observed in rats given no supplementation.
In a second experiment, pregnant female rats were also fed diets supplemented with 20 ppm iron and/or 2 ppm molybdenum. An inverse relationship was apparent between iron and copper in both the serum and the liver of the female rats. Milko-Tester Analysis Of Milkfat Content Of Churned And Nonchurned Samples From Jersey And Holstein Dairy Cattle, Kazuko Monobe

Milk samples from three Jersey and three Holstein herds were used to determine if the degree of churning correlated with the initial milkfat assay, and also to determine if the churned milkfat could be measured as accurately as the initial milkfat using the Milko-Tester.
Regression lines for the initial milkfat test versus churned milk- fat test fit polynomial curves. The degree of churning was greater for Jerseys than Holsteins and correlated with the initial milkfat test.
The repeatability of initial milkfat tests vas 0.98 for Jerseys and 0.99 for Holsteins. However, the repeatability of churned milkfat tests was lower for …

A Field Study In The Use Of Dietary And Urinary Variables In Determining Osteoporosis In Elderly People, Jane Steger Osborn

Three-day dietary records were analyzed for nutrient content and 24 hour urine samples were analyzed for calcium, phosphorous, total nitrogen, and free alpha-amino nitrogen for 210 elderly people. Dietaries and urine samples were collected twice, October and March at five month intervals, for each subject. Increases were found in both dietary intake and urinary components October to March. Based on a criteria of high dietary protein, low dietary calcium, high urinary nitrogen and low calcium, 23 subjects were selected as osteoporotic and and 25 were selected as non-osteoporotic. This method of prediction was not supported by radiological evaluations.

For three weeks the plate waste from the students at the Edith Bowen Laboratory School was collected. The students were divided into three units by grade; Unit I, kindergarten and first grade, Unit II, second and third grade; and Unit III, fourth through sixth grade. The total waste of the individual menu items in the three units was weighed to determine the total waste of each food item for the unit. In each unit individual food items from three control trays weighed together, and an average serving portion for the item in each of the three units was obtained.

The effect of nitrogen intake, nitrogen source, calorie intake, body weight, adaptation time, research group and sex on the nitrogen balance of human adults was investigated. Data from studies reported in the literature were combined and analyzed statistically by multiple regression techniques. Analyses were made separately for six sources of nitrogen: egg, beef, rice, corn, wheat and wheat gluten.
Nitrogen intake, caloric intake and body weight exerted significant effects on nitrogen balance (5% level of confidence) for six, three and two of the six nitrogen sources, respectively. Other variables were not significant at the 5% level. Although differences were not …

Forty-nine female rats initially weighing about 95 grams were used in this experiment to determine the effect of contraceptive hormones on body composition in zinc deficient and zinc supplemented rats. Four treatment groups were: 2 ppm of dietary zinc with daily contraceptive steroid injections, or with placebo injection, and 140 ppm of dietary zinc with contraceptive steroid injection or with placebo. The daily injected steroids consisted of 0.1ug of Ethynyl Estradiol and 0.1mg of Medroxyprogesterone in 0.1ml of corn oil. Non-hormone treated groups received 0.1ml of plain corn oil. The Honey Sweet carrots were canned with Ethyienediamine tetracetic acid (CaNa2EDTA) and Sodium hexametaphosphate (Ha-HMP) at five different water hardness (0 , 20, 40, 80, 160 ppm of calcium and 20 of magnesium) , then stored at temperatures of 70 and 100 F. Evaluations were made at sixty-day i intervals for six months. Firmness and color degradation decreased significantly when water hardness or storage time increased. Under storage at 100 F and 0 hardness of water, the decrease of color and firmness was constantly accelerated.

The effect of oven temperature, dry-roasting, and breed on the eating quality of beef was determined by sensory and objective methods. Two adjacent standing rib and two adjacent chuck roasts of prime, choice, and good grades from animals of Hereford, Shorthorn, and Charolais breeding were dry-roasted. Control roasts (9-12th ribs) were cooked at 325 F. Experimental roasts (6-8th rib and two chucks) were assigned an oven temperature of 325 or 250 F at random. All roasts were allowed to reach ah internal temperature of 155 F as recorded on a potentiometer.

Venison is an important food item in the diet of the people of the United States. Deer is hunted both as sport and for food. Annually, nearly 180,000 hunters go afield in Utah in search of deer. Over 130,000 animals are killed which amounts to an annual harvest of over 15,000,000 pounds of dressed venison. This contributes about 10 1/2 million dollars to the economy of the state from licenses, lodgings, transportation, and other expenses of hunting.
