Abstract

Over 30% of adults in the US are obese. A primary contributor to obesity is an unhealthy diet related to imbalanced macronutrients. Diets higher in protein (PRO) are associated with increased energy expenditure (EE) and reduced food intake. The objective of this pilot study was to determine if protein source at breakfast influences EE in young men (n=4; ages 18-35). Participants consumed three isocaloric (whey (WP), pea (PP), beef (BP); 275 kcal, 62% PRO, 23% CHO, 15% Fat) drinks in randomized, crossover design with a one-week washout period. Estimating nutrient and energy requirements of exotic animals is a necessary component of nutrition management in zoos and other wildlife facilities. In the absence of species-specific data, domestic animal models are often referenced. Herbivorous hindgut fermenters, such as horses, zebra, and rhinoceros, rely on microbial fermentation in the cecum and colon to utilize dietary structural carbohydrates. The study objective was to measure the digestible energy of two (LOW, HIGH) complete pelleted diets by the horse as a model for nondomestic hindgut fermenters. Previous research has shown that acute dehydration can result in changes in mood. These changes have been reported in less than a 1% loss in total body water. However, the effect of hypohydration (i.e., reflected through high urine concentration) on mood in free-living conditions has not been studied. PURPOSE: The present study was designed to determine if hydration status is associated with mood within the general population under free-living conditions. METHODS: A group of 103 apparently healthy subjects (49 male, 54 female, 41±14 y, 1.7±0.1 m, 76.1±16.9 kg) completed three visits separated by a week. Mood was assessed by the …

College is a time of emerging identity and habit formation for students. One hundred and sixty-two (162) college students were surveyed via an internet based survey. The survey asked questions regarding dietary habits such as consumption of dairy, vegetables, fruit, and protein. The survey also examined dietary knowledge such as ability to read food labels. The students were divided into two groups for analysis, nutrition majors and non-nutrition majors. The two groups differed in Body Mass Index (BMI) (p=0.004), but not nutrition knowledge (p=0.082). The nutrition students had an average BMI of 22.0+/-2.42 and a nutrition knowledge score of 2.44+/-0.60, …

The DeepWater Horizon (DWH) oil spill contaminated a large area in the Gulf of Mexico in summer 2010. It is likely that many aquatic species in the Gulf were affected by the spill. Crude oil contains polycyclic aromatic hydrocarbon (PAHs). Some PAHs are carcinogenic to fish and humans. The purpose of this project was to develop menhaden fish oil as a biomonitoring tool for crude oil contaminants such as PAHs using scanning fluorescence spectroscopy (SFS). Exploring The Relationship Between Emotional Brain Training, Stress, Depression, Food Addiction, And Weight, Bailey Regina Adams

Obesity is a complex issue; stress, depression, and food addiction, are several psychological conditions that can accompany an obesity diagnosis. Emotional Brain Training (EBT) was evaluated as a new approach to these conditions. Stress, depression, food addiction, and weight were assessed at baseline, after a seven week active intervention, and after a seven week no contact period. The final sample consisted of 26 obese adults. At seven week assessments, EBT participants experienced significant weight loss (p-value = 0.05) and decreased perceived stress (p-value = 0.035). Food addiction also decreased from 50% to 8.3% (or one participant). At fourteen week assessments, …

Alzheimer’s disease (AD), the most common form of senile dementia, currently affects over 35 million people worldwide. While there is no cure or effective treatment, early intervention programs hold considerable promise. Following particular dietary patterns represents one potential intervention strategy accessible to all.

Results from previous studies investigating the association of diet, cognition and biomarkers of AD are inconsistent: Positive results have been reported (1-7), whilst others have shown no associations. Metabolic hormones and their axes, including the target tissues and receptors, regulate the tissue specific utilization of nutrients with in the body. The purpose of this research was to understand the hormonal control of complex nutrient partitioning mechanisms involved in young, growing animals. Specifically, this involved the investigation of metabolic hormones and the regulation of growth in two common species of phocids (true seals): harbor seal (Phoca vitulina) and Northern elephant seal (Mirounga angustirostris) pups. Interest in organic milk is increasing. By USDA Certified Organic standards, animals must be fed on pasture for a minimum of 120 days. Research indicates that various factors such as diet impact the nutritional quality and composition of milk. The objective of this study was to understand how feeding practices affected bovine plasma carotenoid concentrations over time. Plasma samples were collected from 9 cows fed on pasture at an organic dairy and from 9 cows fed total mixed ration (TMR) at a conventional dairy. The influence of feeding juvenile female leopard tortoises (Geochelone pardalis, n=18) a commercially available, complete, extruded feed three (3) or seven days (7) per week on dry matter and digestible energy intake, apparent digestibility of dry matter, organic matter, gross energy and fiber fractions, animal body weight and measurements, digesta transit time, rate of passage, and indigestible fill was evaluated. The Nutricise 4 Life Program (N4L) is a school-based physical activity and nutrition education program for adolescents. It was hypothesized that dietary intake, nutrition knowledge, fitness assessment measurements and motivation/confidence to make healthier lifestyle choices would be improved in students participating in the N4L group compared to a control group. Twenty-eight students in 10th to 12th grade from 2 high schools in Pennsylvania participated. This quasi-experimental trial collected data over 19 weeks to assess program impact on dietary intake, nutrition knowledge, fitness assessment measurements, and motivation/confidence levels. A cross-sectional study on fasting serum and 24-hour urine samples were used to determine whether biochemical markers of bone turnover, resorption and formation, differed in a group of 50 healthy premenopausal Caucasian women eating vegan, lactoovovegetarian(LOV) and omnivorous diets.

The women, ages 20-42, had participated in a study of bone mineral density(BMD). The three groups were comparable in mean age, BMI, calorie intake, calories spent in exercise, kcal/kg body weight, protein/day, protein/kg body weight and urinary creatinine.

Eating disorders are a debilitating mental illness that affects young people including those in the field of dietetics. Literature suggests that dietetic students have a higher prevalence of eating disorders than other students. Seventy-seven college student in Southern West Virginia enrolled in either dietetics or another major were included in a sample to determine if dietetic students have higher prevalence of disordered eating attitudes and behaviors. The effects of altering pH and calcium level during whey protein extrusion were assessed by measuring the protein solubility and WHC of the textured whey protein (TWP). TWP samples were produced by extruding dry mixtures of 2/3 WPC 80 (80% protein) and 1/3 cornstarch using screw speed of 200 rpms, feed rate of 23 g/min, water flow rate of 11 g/min, and product temperature of 150°C. The aim of this study was to investigate the very-low-calorie diet, Optifast 70. Measurements for resting energy expenditure (REE} and body composition via circumference measurements (CBF} and infrared photospectromerty (NIR} with a Futrex 5000 were collected at weeks 1, 7, 13, 19, and 25. The fact that people are living longer has heightened awareness of the elderly and many of their special needs. Due to this trend, experts have begun to more closely investigate caloric and nutrient needs of the elderly as well as factors that may alter dietary intake. Forty-two older persons in Lincoln County, West Virginia agreed to participate in research designed to explore the relationship between dietary intake and food availability among rural, community-based elderly. Osteoporosis is responsible for approximately 1.3 to 1.5 million fractures per year in the United States. The risk of osteoporosis increases with age, especially among postmenopausal women, and with lifestyle factors such as the use of certain drugs, heavy alcohol consumption, cigarette smoking, high caffeine intake, and sedentary living. Genetic factors that may influence susceptibility to osteoporosis include a positive family history of the disease, or a low weight - for-height ratio. Fasting and ketogenic diet prevent seizures in epileptic children, magnesium-deficient rats and other animal models of seizure disorders. Nutrition labeling research suggests consumers want nutrition information on the label; however, many do not comprehend it. The purpose of Phase I was to determine the effect of: 1. two levels of nutrition label formats; 2. three levels of nutrition information load on consumers' preference for product choice using adaptive conjoint analysis. A computer interactive interview was conducted on 252 consumers in Crossroads Mall, Salt Lake City, Utah. label alternatives were printed on soup cans to realistically portray the information. Colon cancer is responsible for a high percentage of cancer deaths in developing countries, and there is convincing epidemiological evidence that meat protein and fat in the diet increase the incidence of this form of cancer. An animal tumor model which has been used by many investigators interested in colon cancer is the 1,2-dimethylhydrazine (DMH)-rat or DMH-mouse tumor model.
