Growing up in Japan, balanced meals were always provided at home, at schools and even at restaurants. Unfortunately, children are not going to choose balanced meals from the start, so this habit has to be instilled by parents and by the educational system until it eventually becomes a personal preference for children. If children are simply given the choice to eat whatever they want from the beginning, it is unlikely that this preference will ever be developed. The Massachusetts’ Farm-to-School Project has worked for years to bring local farmers and school districts together. Focused on improving the markets and economic stability of farmers, while also improving the quality of foods available to students, the project implemented the first annual “Massachusetts Harvest for Students Week” during the week of September 24, 2007. As part of Harvest Week, selected schools in Massachusetts purchased and served foods grown and made by local farmers. Marketing materials were used in the participating school cafeterias, and classroom education regarding local agriculture, nutrition, and sustainability was provided. Efficacy Of A Nutrition Education Program Designed For Grades K-3 Piloted In Johnson County Schools., Allison Nicole Lowry

The purpose of this study was to increase the nutrition knowledge of elementary school students by implementing nutrition education lessons. The subjects included 49 kindergarten through third grade students in Johnson County, Tennessee during the fall of 2004. Knowledge increase was measured by pretest and posttest scores. The tests were analyzed by paired t-tests. While all students showed an increase in mean score, kindergarten and first grade students did not show a significant increase in posttest scores. However, second and third grade students showed a significant increase in posttest scores, indicating an increase in nutrition knowledge.

Diabetes Stepping Up To The Plate: An Education Curriculum Focused On Food Portioning Skills, D. Pauline Williams, Heidi Leblanc, Nedra K. Christensen

The Diabetes Stepping up to the Plate program was developed to determine the effectiveness of food portion based diabetes education. One hundred fifty-one individuals enrolled in the diabetes series. Food portion knowledge and skills tests, height, weight, and waist-to-hip ratio (WHR) were measured pre- and post-program. Data was analyzed through paired t-tests and correlations. Evaluation showed a decrease in HbA1C, waist/hip circumference, WHR, and BMI, and an improvement in food portion knowledge and skills. Seventy-five participants completed pre- and post-data collection parameters, although more participants completed all classes in the series. Extension can play a role in successful diabetes education.

A study on the influence of nutrition education experiences was conducted in the Child Development Preschool Laboratory at Southern Utah State College in Cedar City, Utah, with thirty-two preschool children. Sixteen of the children were exposed to nutrition experiences through food activities and stories.

It was found that the sixteen children who were involved in the fifteen nutrition experiences significantly increased their knowledge of nutrition concepts and further modified their own personal food choices. The control group, which was not exposed to nutrition activities, made no significant change in knowledge of nutrition concepts and no modification of personal food choices. …

Edward C. Jackson was born on January 17, 1911, in Canfield, Braxton County, WV. In 1926, he moved to Fenwick, Nicholas County, WV, to pursue jobs in saw mills. In his interview, Mr. Jackson describes in great detail the design and structure of the log home he lived in as a child. He focuses on growing up on a farm and places emphasis on the type of work he did and food preparation and preservation. Mr. Jackson also discusses the tight-knit community in which he was raised.
