Background: Increased intakes of ready-made and fast foods paralleled with decreased homemade food consumption have been associated with increased rates of obesity. Researchers have shown associations between cooking self-efficacy (SE) and cooking frequency (CF) with dietary quality and weight status. Some cooking interventions have shown positive associations with dietary outcomes, such as increased fruit and vegetable intake and decreased fast food consumption. There is still much unknown about SE and CF, especially among youth. Several schools in the Lincoln Public School district have afterschool programs for students from 3:30-5:00pm in order to provide a safe and fun place for students to play while their parents are still at work. For this Honors Thesis an afterschool nutrition club was created for students to learn about MyPlate and healthy living.

This manuscript describes the development of a “learn by actively participating” curriculum for youth and their adult caregivers (dyad pair) to increase gardening skills, culinary competence, and family meal time. The curriculum was developed by integrating “iCook 4-H” and Junior Masters Gardener “Health and Nutrition from the Garden”, and “Essential Elements of 4-H Youth Development” curriculums with additional resources for gardening activities from the USDA’s My Plate and garden-based recipes. The “Healthy Me, Healthy Earth” program was an eight week after-school program for first through fourth graders at the Woodman Park Elementary School in Dover, NH conducted during the Fall of 2017. The program used a cost-effective, food system-based curriculum to promote health and environmental literacy to students who participated. An interdisciplinary approach was used to assess the knowledge, attitude, and behavioral changes of the students. There was a noted improvement in comprehension of food system concepts.

Angka kematian ibu di Indonesia berdasarkan Survei Demografi dan Kesehatan Indonesia (SDKI) tahun 2012 sebanyak 359 per 100.000 kelahiran hidup. Penyebab kematian ibu tersebut masih didominasi oleh pendarahan, pre-eklampsia/eklampsia, dan infeksi. Salah satu penyebab infeksi adalah ketuban pecah dini (KPD). KPD dapat meningkatkan morbiditas dan mortalitas pada ibu dan anak. Insiden kejadian KPD sekitar 10,7% dari seluruh persalinan. major health problem among the elderly population that contributes to adverse drug side events,

health risks, hospital readmissions, morbidity, and mortality. Therefore, a staff education

program geared toward reduction of such adverse drug events was implemented at a single site.

Namun, prevalensi KB di Indonesia selama satu dekade terakhir (2002-2012) tidak meningkat secara signifikan, walaupun pelbagai kegiatan KIE KB telah dilaksanakan. This qualitative study assessed consumers’ current methods of determining portion sizing of chicken products and examined their perceptions of how effectively three package designs communicate portion size. Everett M. Rogers’ Diffusion of Innovations (DI) Theory analyzes the characteristics of the consumer of the innovation (adopter) and the impact these characteristics have on adopting new innovations. The innovation in this study will be the prototype packaging. Focusing on Rogers’ adopter characteristics and defined proprietary consumer segmentation characteristics, this study will be pivotal for future package design projects targeting nutrition education.

Objective: The purpose of this study was to evaluate whether a week-long SNAP Challenge completed by university participants influenced perceptions about poverty. Design: Pretest and posttest questionnaires measured changes in attitudes toward poverty after the SNAP Challenge using the Attitude Toward Poverty Short Form scale comprised of three factors: Personal Deficiency, Stigma, and Structural Perspective. Dispositional empathy was measured with the Interpersonal Reactivity Index and analyzed as a potential mediating variable of attitude change. Objective: Multiple peer-reviewed studies have found an association between fruit and vegetable consumption and lower risk for diseases such as hypertension, stroke and cancer. In other related studies, education level, retail food environment, and fruit and vegetable consumption were also examined together to discover patterns and associations. Currently, Black males have a higher risk for poor health outcomes. Limited research has focused specifically on Black men's fruit and vegetable consumption. Food neophobia, the fear of new foods, has been identified as a significant barrier to the intake of healthy foods, including fruits and vegetables in young children. Food neophobia can hinder dietary quality as well as dietary variety by limiting the development of food preferences. Utah State University in the collaboration with the Supplemental Nutrition Assistance Program-Education (SNAP-Ed) proposes to develop and implement a program to help families develop healthy eating habits and lifestyle behaviors. Recently, childhood overweight and obesity has reached epidemic proportions. The diseases associated with adult obesity are now being seen in the pediatric population; therefore, there is a call for preventative efforts. Each year approximately 73,000 refugees are resettled into the United States because it is unsafe for them to return to their country of origin. Resettlement agencies help refugees learn about their new environment and provide assistance with housing, food, English classes, and job skills training. The goal of resettlement programs is to help refugees become self-sufficient as quickly as possible.

Recently resettled refugees face many challenges that make it difficult to eat healthy food. Transportation, English skills, and conflicting work hours are some of the barriers to receiving nutrition education. This research evaluated the integration of nutrition lessons into English …
