Purpose: Orthorexia nervosa (Orthorexia) is an eating attitude and behavior associated with a fixation on healthy eating, while eating disorders (EDs) are clinically diagnosed psychiatric disorders associated with marked disturbances in eating that may cause impairment to psychosocial and physical health. The purpose of this study was to examine risk for Orthorexia and EDs in student-athletes across sex and sport type and determine the association between the two.

Many of the molecular and cellular mechanisms discovered to regulate skeletal muscle hypertrophy were first identified using the rodent synergist ablation model. This model reveals the intrinsic capability and necessary pathways of skeletal muscle growth in response to mechanical overload (MOV). Reminiscent of the rapid cellular growth observed with cancer, we hypothesized that in response to MOV, skeletal muscle would undergo metabolic programming to sustain increased demands to support hypertrophy. To test this hypothesis, we analyzed the gene expression of specific metabolic pathways taken from transcriptomic microarray data of a MOV time course. We found an upregulation of genes involved …

Food-coping strategies (FCS) are often measured as direct indicators of food insecurity, as they allow for an assessment of the vulnerability and sustainability of attempts to maintain a sufficient food supply by limited-resource individuals. They are often easier to assess than other household indicators of sufficiency, including income and food consumption. Because vulnerability is considered, food-security policies and programs that account for FCS can broaden their efforts from addressing current constraints to food consumption, to include actions that also address future threats to food security. Background: QuPath is an open‑source digital image analyzer notable for its user‑friendly design, cross‑platform compatibility, and customizable functionality. Since it was first released in 2016, at least 624 publications have reported its use, and it has been applied in a wide spectrum of settings. However, there are currently limited reports of its use in placental tissue. This study aimed to evaluate the status of dietary diversity and nutrient intake among Han and Dongxiang smallholder farmers in poor rural areas of northwest China. In this cross-sectional study, dietary intake was assessed in 499 smallholder farmers aged 18–75 years from two nationally designated impoverished counties in Gansu Province, China, using three consecutive 24 h dietary recalls. The dietary diversity score (DDS) and nutrient adequacy ratio (NAR) were adopted to assess dietary diversity and micronutrient adequacy, respectively. Background: There is increasing recognition that morning or evening preference is associated with time of eating, metabolic health, and morbidity. However, few studies have examined the association of time of eating with mortality.

Objective: To examine the association of time of first recalled ingestive episode with prospective risk of all-cause mortality.

Design: We used mortality-linked data from the National Health and Nutrition Examination Surveys (NHANES) conducted in 1988-1994 and 1999-2014 (n=34609; age >40 y). Every mother has a unique breastfeeding experience. Breastfeeding is natural, but that does not mean it comes naturally to every mother. The benefits of exclusively breastfeeding for the first six months and supplemental breastfeeding through the second year of life are well documented (Lessen & Kavanagh, 2015). In Spring 2021, the librarian presenters partnered with Laura Bauer, a Nutrition faculty member, to teach students in introductory Nutrition classes information evaluation skills. The instructor's assignment originally asked the class of non-science major students to find a recipe online that met a personal nutrition goal based on current recommendations. The assignment evolved for a class of pre-health science students into an evaluative assignment where students were asked to research a fad diet online and compare those findings with the scholarly literature, all while considering diet culture through a social justice lens. Through a survey conducted in 2020, we investigated changes in eating, shopping, and dietary behaviors of Maine adults by age group before COVID-19 (prior to March 2020) and during COVID-19 (August/September 2020). This investigation was part of a larger investigation to assess food security, access, and food systems during COVID-19.6 The survey was conducted in Maine between August and September 2020 and illustrates responses from a sample of 618 Maine adults aged 18 years and older. Findings include:

• Respondents who were 55 years and older were less likely to reduce fruit, vegetable and seafood consumption during COVID-19.

The purpose of this program evaluation was to develop nutrition-based educational modules for the coaches and student-athletes at the University of Windsor and to investigate their effectiveness, usefulness, and applicability. The nutrition-based educational modules were a collaborative effort between the Community Health, Environment, and Wellness (CHEW) lab and the Centre for Human Performance and Health (CHPH). Eight teams voluntarily participated in the 6-week implementation period with the nutrition-based educational modules. This study provides a mixed-methods approach in analyzing a potential closed-loop system between renewable biogas production from anaerobic digestion, vermiculture production, aquaculture production, and organic wastes with a particular focus on stillage wastes. Such system may hold significant promise for significantly reducing organic carbon and methane emissions from its components, and should be assessed for such. The 2021 IPCC report essentially identified methane reduction as the single fastest way to slow global warming (IPCC, 2021), making the study and implementation of methane-reducing systems and supportive policy for them critical. Fiber is an important part of a healthful diet that provides numerous benefits when adequately consumed. Yet, many individuals do not know what fiber is, let alone how to eat enough. Thus, it is no surprise that fiber has been a dietary concern among children and adolescents for over a decade, with less than 10% of youth meeting recommended fiber intakes (Finn et al., 2019; Kranz et al., 2012; McGill et al., 2015). In this fact sheet, we will discuss what fiber is, along with its health benefits, current recommendations, and strategies for incorporating fiber into your child’s diet.

In her presentation Dr. Børsheim will focus on childhood obesity and show that this can increase risk for later life metabolic dysfunction. She will discuss if physical fitness can attenuate negative effects of obesity in children and if there are critical windows of development where physical activity is of specific importance. Aberrant activation of the nucleotide-binding domain and leucine-rich repeat related (NLR) family, pyrin domain containing 3 (NLRP3) inflammasome drives the development of many complex inflammatory diseases, such as obesity, Alzheimer’s disease, and atherosclerosis. However, no medications specifically targeting the NLRP3 inflammasome have become clinically available. Therefore, we aim to identify new inhibitors of the NLRP3 inflammasome in this study. Methods: Vesicle-like nanoparticles (VLNs) were extracted from garlic chives and other Allium vegetables and their effects on the NLRP3 inflammasome were evaluated in primary macrophages. The aim of this study is to ascertain if the living environment (type of residential neighborhood and number of household members) will elucidate differences in obesity risk reduction behaviors and self-efficacy in Chinese Americans. A cross-sectional survey design was used to recruit participants from Los Angeles County and New York City metropolitan areas. A total of 650 adults were recruited from diverse socioeconomic backgrounds. Descriptive statistics were measured for 19 behaviors reflecting food intake and portion size control and items measuring self-efficacy and attitudes. Objective: To assess the relationship between food insecurity, sleep quality, and days with mental and physical health issues among college students. Design: An online survey was administered. Food insecurity was assessed using the ten-item Adult Food Security Survey Module. Sleep was measured using the nineteen-item Pittsburgh Sleep Quality Index (PSQI). Mental health and physical health were measured using three items from the Healthy Days Core Module. Multivariate logistic regression was conducted to assess the relationship between food insecurity, sleep quality, and days with poor mental and physical health. Knowledge of measured energy expenditure (EE) during walking and running is important for exercise prescription. Further, research on the EE comparison and EE predicted equation during walking or running among different ethnicities is limited. The purpose of the current study was to compare EE to walk or run 1 mile in Caucasian, African American and Asian adults and to develop a regression equation to predict EE to walk or run 1 mile. With the emerging popularity of online food delivery (OFD) services, this research examined predictors affecting customer intention to use OFD services amid the Coronavirus disease (COVID-19) pandemic. Specifically, Study 1 examined the moderating effect of the pandemic on the relationship between six predictors (perceived usefulness, perceived ease of use, price saving benefit, time saving benefit, food safety risk perception, and trust) and OFD usage intention, and Study 2 extended the model by adding customer perceptions of COVID-19 (perceived severity and vulnerability) during the pandemic.
