The prevalence of childhood obesity remains high within the United States, which can lead to long-term harmful effects. During the first five years of children’s lives, healthy eating habits and physical activity patterns are formed, so the preschool years are a critical time to begin obesity prevention (4). Adults living in food insecure households consume fewer fruits and vegetables than adults living in food secure households (Hanson & Connor, 2014). The purpose of this study was to examine differences in fruit and vegetable behaviors (intakes; perceptions) of parents of elementary school children by food security status (food secure compared to food insecure; fully food secure compared to not fully food secure) in rural, Appalachian Mississippi. Taking advantage of inherent natural systems, aquaponic practices hold the potential to serve as an educational, sustainable, and profitable hobby for home gardeners facing common constraints such as temperature, space, and pests. The goal of this research was to assess the feasibility of implementing a small scale (4,542-liter) home -based aquaponic system in a small (48.768 square meter) greenhouse to produce fresh produce and fish protein. Polyunsaturated fatty acids (PUFAs), especially eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), are major maternal dietary supplements due to their positive benefits on neurological tissue growth during the first 12 weeks of gestation. Previous studies show that EPA and DHA inhibit muscle formation but promote adipogenesis. However, no research has addressed the question whether high intake of EPA and DHA affects brown fat development during gestation. Formation of harmful microbes and their associated mycotoxins on rough rice during storage presents negative socioeconomic impacts to producers and consumers. The objective for this study was to investigate the impact of treating rough rice with selected infrared (IR) wavelengths at different IR intensities and heating durations, followed by a tempering step for further inactivation of microbes (mold and bacteria) on the grain. Freshly-harvested long-grain, hybrid, rough rice (XL 745) with initial moisture content (IMC) of 18.4% wet basis (w.b.) was used. Submaximal exercise performance is, in part, limited by the accumulation of metabolic byproducts and energy system capacities. Curcumin and the combination of curcumin and fenugreek soluble fiber (CurQfen®) have been shown to increase endogenous antioxidants and metabolic byproduct clearance as well as reduce inflammation and lipid peroxidation, and therefore, may enhance submaximal aerobic thresholds. Sepsis is a leading cause of death among critically ill patients that results in metabolic alterations including hypercatabolism, lipoatrophy, and muscle wasting, contributing to the development of cachexia. Septic cachexia is associated with loss of body weight, fat mass, and lean mass and dysregulated immune function. There are currently no efficacious treatment strategies for septic cachexia, and nutritional interventions have limited success in preventing hypercatabolic wasting. Pyocyanin is a virulence factor produced by sepsis-causing Pseudomonas aeruginosa that has been shown to activate the aryl hydrocarbon receptor (AhR), increase inflammation, and produce reactive oxygen species. Background: College food insecurity (CFI) is a prevalent social justice and public health issue in the U.S. with the prevalence ranging between 15-59%. Though numerous quantitative studies were first conducted in the past decade, little qualitative research was conducted to assess CFI.
Objective: To explore and deeply understand the contexts of CFI at a land-grant university in Kentucky.
Methods: This qualitative study used a validated food insecurity survey tool and hour-long focus groups that were audio recorded and transcribed. Three theoretical models were combined into an adapted model and utilized for the thematic analysis.

High rates of obesity are seen across the country with rural areas disproportionately affected. Based on the socio-ecological model, policy, system, and environmental approaches targeted at the population level have the potential to create more sustainable health behavior change than individual level approaches. The Center for Disease Control and Prevention (CDC) reports indicate that 8% and 6.3% of Kentuckians consume enough fruits and vegetables, respectively. The Plate It Up! Kentucky Proud (PIUKP) project is a recipe-development project that aims to boost produce consumption by incorporating local fruits and vegetables. The purpose of this study was to implement promotional strategies using PIUKP recipes at farmers’ markets and determine their effects on consumers’ intent of purchasing and preparing the produce. The study was conducted at nine farmers’ markets across Kentucky (n=300) in collaboration with Cooperative Extension agents/assistants.

Selenium (Se) biofortification of plants has been suggested as a method for enhancing dietary Se intake. Popular herbs such as basil (Ocimum basilicum), cilantro (Coriandrum sativum), and scallions (Allium fistulosum) are used for enhancing flavors. Microgreens are young seedlings harvested with one to two true leaves and are increasingly popular in the consumer marketplace. Dietary compromises related to food insecurity profoundly undermine health and constitute a serious public health issue, even in developed nations. The aim of this study was to explore the impact of food labelling and product attributes on the purchasing choices of food-insecure households in Australia. An online survey containing 19 food choice and 28 purchasing behaviours questions was completed by 1056 adults responsible for household grocery shopping. Cancer is the disease that happens to occur in a high number of new cases each year. Even the choice of treatment is developing, but the adverse effects on cancer therapeutic drugs still challenging. To investigate the antitumor activities of Auricularia polytricha (AP) mushroom extract and active compounds, human cancer cell lines such as Hepatocellcular (HepG2) and Breast cancer cell lines (MCF-7 and MDA-MB-231) were interested. The crude hexane extract of AP (APH) and crude ethanol extract of AP (APE) were prepared by maceration and Soxhlet extraction, respectively. This commentary focuses on the question of the uniqueness of humans in comparison to other species and on the false assumption that single arguments support logical conclusions. Comparative analysis of genetic data in humans and nonhuman primates regarding the dopaminergic system of the subcortical mesolimbic reward system highlights homologous traits shared and modified by the process of evolution. Such an analytical approach is more relevant than claims of uniqueness.

Mg supplementation can maximize energy stores for exercise, decrease indicators of inflammation, and increase the rate of lactate clearance. While these functions of Mg can benefit exercise capabilities, research is lacking on their effects on specific performance parameters. The purpose of this study was to determine if Mg supplementation would increase performance parameters in NCAA Division-I football players. Eighty-one participants were separated into position groups and randomly assigned to receive a daily placebo, low dose of Mg (100 mg), or high dose of Mg (200 mg). Results: Survey responses indicated that the majority of directors rated themselves as skilled at several key areas of best practices, especially in creating a clean, pleasant place for the children to eat and in using program nutrition requirements to ensure that food and nutrition needs of the children are met. Analysis of the center menus proved the latter to be true as the recommendations for Vitamin A, Vitamin C, calcium, and iron were either met or exceeded for females 4-8 years-old, and males 4-8 years-old. In studies of eating behavior that have been conducted in humans, the tendency to consume more when given larger portions of food, known as the portion size effect (PSE), is one of the most robust and widely replicated findings. Despite this, the mechanisms that underpin it are still unknown. In particular, it is unclear whether the PSE arises from higher-order social and cognitive processes that are unique to humans or, instead, reflects more fundamental processes that drive feeding, such as conditioned food-seeking. College food environments can be obesogenic settings due to the availability of fast food restaurants and buffet style cafeteria’s accessible to the university community. These environments often foster eating behaviors that can contribute to rising obesity rates in the United States. The aim of this study was to identify university faculty’s perceptions of the campus food environment and access to healthy foods. Investigated were barriers to making healthy food choices on campus and strategies ion how to provide and encourage better food choices. Fruit and vegetable intake for children in the United States is low, which puts them at risk for poor health in the future. The National School Lunch Program meal pattern and nutrition standards for participating schools include increased fruits and vegetables, compared to previous standards. Using a pretest-posttest design, this study examined the effect of a fruit and vegetable intervention on fruit and vegetable food selection and consumption in a rural, Appalachian Mississippi elementary school. Plant secondary metabolites (PSMs) are compounds found in plant tissues designed to deter herbivores. Tannins, a type of PSM, can bind to proteins and reduce their availability to consumers. The detoxification limitation hypothesis suggests herbivores will prefer foods with lower amounts of PSMs and exhibit decreasing rates of feeding when PSM levels are high in order to stabilize the amount of PSMs ingested. Although this hypothesis has been supported by observations from other mammalian groups, it has not been tested in lemurs with regards to their consumption of tannins.

Posttraumatic stress disorder (PTSD) is a mental health condition faced by many veterans, and veterans with PTSD have higher rates of poor health and obesity than civilians. Evidence suggests mental health issues such as PTSD may be associated with disordered eating behaviors. In addition, veterans with PTSD may select a variety of coping behaviors to manage stress and emotions, some of which may negatively impact their health. The ketogenic diet is commonly used to control epilepsy, especially in cases when medications cannot. The diet typically consists of high fat, low carb, and adequate protein and produces a metabolite called acetoacetate. Seizure activity is characterized by glutamate excitotoxicity and therefore glutamate regulation is a point of research for control of these disorders. Acetoacetate is heavily implicated as the primary molecule responsible for decreasing glutamate in the synapse; it is believed that acetoacetate interferes with the transport of glutamate into the synaptic vesicles. Purpose: In this pilot study, researchers explore an online animated simulation as an educational tool for emerging health professionals to promote cultural competence of poverty, food insecurity, and the Supplemental Nutrition Assistance Program.Methods: Researchers recruited participants in the allied health sciences for focus groups to explore the effectiveness of an online animation in promoting cultural competence of poverty, food insecurity, and public assistance programs. A curvilinear relationship exists between physical activity (PA) and dietary energy intake (EI), which is reduced in moderately active when compared to inactive and highly active individuals, but the impact of PA on eating patterns remains poorly understood. Our goal was to establish the relationship between PA and intake of foods with varying energy and nutrient density. The Sodium Screener© (SS©), as developed by NutritionQuest (Berkeley, CA, USA), was designed to reduce the burden of repeated dietary or urinary sodium measurements, but the accuracy of daily sodium intake estimates has not been reported. Associations were examined between sodium intakes derived from the SS© scores and repeated 24-h recalls (24DR) in two studies with different administration modes. In one study, 102 registered dietitians (RD) completed three Automated Self-Administered 24DRs (ASA24©), version 2014, followed by the SS©; both were self-administered and web-based.
