This thesis provides a culturally-comprehensive review of the plants utilized for food in the Bitterroot Salish tribe of northwestern Montana. As part of the larger Confederated Salish and Kootenai Tribes (CS&KT) of the Flathead Indian Reservation, the Bitterroot Salish historically utilized hundreds of plants for food, medicine and hygiene. This thesis aims to highlight food plants and their important cultural components. The information herein is a combination of history, ethnography, linguistics, ethnobotany, and first-hand experience with the current Salish community to provide a holistic framework of understanding traditional food plants today. Recently published scientific articles have led to mixed nutritional advice on dietary saturated fatty acids. Lesser et. al (2007) identified that mixed conclusions in scientific articles on sweetened beverages might be attributed industry funding, as articles funded by the beverage industry are four to eight times more likely to report conclusions in favor of the sponsor’s products. This thesis applies Lesser’s methods to determine whether industry funding influences the inconsistent conclusions on saturated fatty acids. The purpose of this study is to determine the effects of a protein supplementation protocol through a period of muscular disuse in maintaining muscle mass, strength, jump force production, and cross-sectional area in the collegiate population. Two groups of healthy collegiate participants underwent two weeks of unilateral lower limb suspension (ULLS), during which the control group consumed a normal diet and the treatment group received an additional 75 g of protein supplementation. Lean mass, strength, and force production were measured between dietary intakes at baseline and following immobilization. Background: The DNA base excision repair (BER) pathway is responsible for processing of genomic uracil lesions however, in some tissue types the excisional and gap-filling steps performed by UNG2 and POLβ, respectively, are impaired by folate deficiency in human and murine models in vitro. The aim of this study was to investigate the effect of partial replacement of wheat flour with riceberry flour and unripe papaya flour on the physicochemical, functional properties and sensory evaluation of crackers. In the current study found that partial substitution of wheat flour with 5, 10, 15 and 20% riceberry flour (5, 10, 15 and 20%RBF) resulted in significantly increased in hardness and redness together with a decreased fracturability, lightness and yellowness of crackers. The aim of this study is to evaluate weight-related eating behaviors of participants with clinically significant weight loss (CSWL) in a proprietary weight loss program. A crosssectional sample of participants (n=1,454) enrolled in a proprietary weight-loss program that includes meal replacements and health coaching were queried for weight-related eating behaviors (using Weight Related Eating Questionnaire) of routine restraint (RR), compensatory restraint (CR), susceptibility to external cues (SEC), and emotional eating (EE) in relation to CSWL (defined as having achieved a weight loss greater than 10% of starting weight).
