Food Fortification Improves The Intake Of All Fortified Nutrients, But Fails To Meet The Estimated Dietary Requirements For Vitamins A And B6, In Lactating South African Women, Peggy C. Papathakis, Kerry E. Pearson

Objective To investigate the impact of fortification by comparing food records and selected biochemical indicators of nutritional status pre- and post-fortification.
Design Mean intake from 24 h recalls (n 142) was compared with the Estimated Average Requirement (EAR) to determine the proportion with inadequate intake. In a subsample (n 34), diet and serum retinol, folate, ferritin and Zn were compared pre- and post-fortification for fortified nutrients vitamin A, thiamin, riboflavin, niacin, folic acid, Fe and Zn.

This Independent Study project sought to identify the changes in nutrition from the traditional Luo culture to the new urban setting and explore the management, perceptions and prevalence of Type II diabetes in an increasingly urban area. The focus was on Type II diabetes since the majority of disease burden stems from this acquired form of the diabetes. Sarapan pagi merupakan kegiatan makan yang paling penting dalam memenuhi kebutuhan energi dan zat gizi dalam sehari. Kegiatan ini bertujuan untuk mengetahui pengaruh komunikasi, informasi, dan edukasi (KIE) gizi terhadap perilaku sarapan pagi siswa sekolah dasar di Kabupaten Bogor. Desain studi penelitian ini adalah kuasi-eksperimental, pre-post intervention. Hasil penelitian menunjukkan bahwa setelah dilakukan kegiatan KIE gizi diperoleh peningkatan skor rata-rata pengetahuan dan perilaku siswa terhadap kebiasaan sarapan pagi (nilai p < 0,05). Media yang digunakan adalah kartu bergambar, kartu kuartet, ular tangga, tebak gambar, teka teki silang (TTS), leaflet, poster, dan lomba cerdas cermat. Peran ibu sebagai penyedia sarapan pagi bagi siswa sangat penting terutama dalam menghindari kebosanan siswa terhadap menu yang disediakan. Sebaiknya pihak sekolah bekerja sama dengan Persatuan Orang Tua Murid dan puskesmas untuk menggiatkan kembali Usaha Kesehatan Sekolah dengan melakukan kegiatan promosi kesehatan bagi ibu/pengasuh siswa, khususnya tentang bagaimana merencanakan menu sarapan pagi yang enak, praktis, dan sehat bagi siswa.

Data from Continuous Glucose Monitoring (CGM) systems may help improve overall daily glycemia; however, the accuracy of CGM during exercise remains questionable. The objective of this single group experimental study was to compare CGM-estimated values to venous plasma glucose (VPG) and capillary plasma glucose (CPG) during steady-state exercise. Twelve recreationally active females without diabetes (aged 21.8 ± 2.4 years), from Central Washington University completed the study. CGM is used by individuals with diabetes, however the purpose of this study was to first validate the use of this device during exercise for anyone. Objective: To develop an online certification program for nutrition education paraprofessionals to increase knowledge and confidence and to overcome training barriers of programming time and travel expenses. Design: An online interactive certification course based on Supplemental Nutrition Assistance Program-Education and Expanded Food and Nutrition Education Program core competencies was delivered to employees of both programs. Traditional vs online training was compared. Course content validity was determined through expert review by registered dietitians. Vitamin D is an essential vitamin that is synthesized when the body is exposed to sunlight or after the consumption of fortified foods and supplements. The purpose of this research was to increase the retention of vitamin D3 in Cheddar cheese by incorporating it as part of an oil-in-water emulsion using a milk protein emulsifier to obtain a fortification level of 280 IU/serving. Four oil-in-water vitamin D emulsions were made using sodium caseinate, calcium caseinate, nonfat dry milk (NDM), or whey protein. By identifying the relationship between calcium location in the plant cell and nutrient bioavailability, the plant characteristics leading to maximal calcium absorption by humans can be identified. Knowledge of plant cellular and molecular targets controlling calcium location in plants is emerging. These insights should allow for better strategies for increasing the nutritional content of foods. In particular, the use of preparation-free elemental imaging technologies such as synchrotron X-ray fluorescence (SXRF) microscopy in plant biology may allow researchers to understand the relationship between subcellular location and nutrient bioavailability. Primary care practitioners (PCPs) have a role to play in the primary and secondary prevention of diet/weight-related chronic disease through nutrition assessment, education, counseling, and referral. Although PCPs tend to have positive attitudes about nutrition, many do not engage in nutrition related practice behaviors. Background: Consuming beans and staggering meals may control energy intake. We examined the effect of consuming 0.5 cup of beans 15 minutes before a meal on gastrointestinal (GI) peptides concentrations in obese men and women.
Methods: A randomized crossover design was used to measure GI peptides response to two test meals in 28 healthy obese adults. Children are at a heightened risk for foodborne illness. Handling leftover food safely was identified as a concern from focus groups with the main food preparer in families with young children in two Midwestern states. To design, implement, and evaluate a theory-based food safety education intervention to raise awareness of the USDA guideline for handling leftover food. The food safety social marketing campaign “4 Day Throw Away” launched in towns throughout Nebraska and Iowa. The Local Food Movement has arisen in recent decades as a proposed solution to problems in the current food distribution system. Proponents of the movement look to solve problems such as unsustainable farming practices, greenhouse gas emissions, and unhealthy communities. Skeptics raise questions as to whether local food is truly capable of accomplishing any of those. The author proposes that as a solution, aspects of the Local Food Movement such as urban agriculture and attempts at community development should be taken more seriously in order to create a better future for the land and people alike.

An adult Rhinoceros Auklet (Cerorhinca monocerata) can only catch and carry a limited amount of prey to their nestlings after a foraging trip. The auklets therefore must maximize their efficiency by bringing back the most proportionally nutritious prey items to their nestlings. The prey carried back to the nesting sites (known as a ‘bill load’) can contain whole fish, as well as parts, most commonly fish heads. The prevalence of obesity has continued to rise over the last several decades in the United States lending to overall increases in risk for chronic diseases including many types of cancer. In contrast, reduction in energy consumption via calorie restriction (CR) has been shown to be a potent inhibitor of carcinogenesis across a broad range of species and tumor types. Heart disease and stroke are leading causes of death in America. In 2008, not only are more than 0.6 million people dying of heart disease, but it is estimated that almost 1 in every 4 Americans with heart disease die. Consuming excess salt has been associated with increasing risk of high blood pressure, heart attacks, and stroke. Americans consume 40% more salt than the USDA recommended level -- 1500 mg. Therefore, it is important to reduce the amount of salt in foods such as cheese to reduce salt consumption that may lead to heart disease.

This thesis examines whether children's food environment, especially food stores that have fresh produce, affects obesity prevalence among elementary school children in the state of Arkansas. Misclassified food outlet types in the Dun and Bradstreet commercial data set were first corrected and then food environment measures were computed and aggregated to geographic regions corresponding to school attendance areas. After applying classical panel estimation, it was found that the fixed effects model fit the data best. Results indicate that an additional supermarket within a one-mile radial of the census neighborhood block center will bring down childhood obesity prevalence by 0.58 percent, …

Diet and exercise are key components to overall health maintenance. Aspects contributing to weight maintenance include the thermic effect of food (TEF) and total energy expenditure (TEE), with TEF contributing to upwards of 10% TEE. PURPOSE: The purpose of this study was to determine the interaction between TEF and exercise on TEE in moderately active females. The purpose of this study was to determine whether weekly supplementation with nine ounces of prepackaged lean beef sticks could maintain the iron status of college endurance athletes. Thirty-four college endurance athletes (20 female, 14 male) were stratified by sex, baseline serum ferritin concentration, and use of iron supplements, and randomized into an intervention (n = 18) or control (n = 16) group. The participants in the intervention group supplemented their usual diet with nine ounces of prepackaged lean beef sticks per week and a daily multivitamin/mineral supplement containing 18 mg iron. The healthy microbiota show remarkable variability within and among individuals. In addition to external exposures, ecological relationships (both oppositional and symbiotic) between microbial inhabitants are important contributors to this variation. It is thus of interest to assess what relationships might exist among microbes and determine their underlying reasons. The initial Human Microbiome Project (HMP) cohort, comprising 239 individuals and 18 different microbial habitats, provides an unprecedented resource to detect, catalog, and analyze such relationships.
