We previously demonstrated a regulatory role for intracellular Ca2+([Ca2+]i) in human and murine adipocyte metabolism, with increased [Ca2+]i coordinately stimulating lipogenesis and inhibiting lipolysis, thereby expanding adipocyte lipid mass. More recently, we reported that 1∝, 25-dihydroxyvitamin D3 [1∝, 25-(OH)2-D3] stimulates adipocyte membrane vitamin D receptor (mVDR)-mediated Ca2+ influx, resulting in a similar Ca2+-mediated modulation of adipocyte lipid metabolism. 1∝, 25-(OH)2-D3 also exerts an inhibitory effect on adipocyte uncoupling protein 2 (UCP2) mRNA and protein levels via the nuclear vitamin D receptor (nVDR), independent …

Physical activity is recorded in bone mineralization studies because physical activity increases bone mass and decreases the risk of osteoporosis. The purpose of this research was to validate a method of physical activity recording used in a longitudinal bone study of adolescent girls. The physical activity recording method was a combination of a diary and an interview-administered recall. The method was validated against an objective measure of physical activity. Twenty-four adolescent girls between the ages of 9.8 and 14.1 wore Stayhealthy RT3 Research Trackers (tri-axial accelerometers) arid recorded their activity for 24 hours on a diary form. Incidence rates for esophageal adenocarcinoma have increased >350% since the mid-1970s. Rates for gastric cardia adenocarcinoma have also increased, although less steeply. This led to the initiation of large population-based case-control studies, particularly in the United States and Sweden, aimed at identifying risk factors for these cancers. Results have been emerging from these studies, with the consistent finding that obesity and gastroesophageal reflux disease are important risk factors for these cancers. Analyses of dietary factors are also available and indicate that diets high in total fat, saturated fat and cholesterol are associated with an increased risk of these cancers, whereas …

Crystallization kinetics and rhelogical behavior of blends of high-melting milk-fat fraction (HMF) and sunflower oil (SFO) with and without addition of the sucrose esters P-170, S-170, and P-1670 were investigated. Addition of sucrose esters delayed crystallization, as was evidenced by the longer induction times of crystallization (t) and the lower maximum solid fat content (Smax). Values of penetration force and time corresponding to the 1st peak of curves force compared with time also diminished with addition of SFO. When sucrose esters were added, a solid fat content greater than 10% at the 1st crystallization temperature was necessary to give a …

The effects of sunflower oil (SFO) and the sucrose esters (SE) P-1670, P-170, and S-170 on crystalline microstructure of a high-melting milk fat fraction (HMF) was studied by polarized-light microscopy (PLM) and confocal laser scanning microsopy (CLSM). The addition of SFO markedly diminished crystal size and delayed crystallization kinetics, as observed in PLM images. Addition of P-1670 modified crystallization behavior only slightly. Addition of P-170 and S-170, however, markedly diminished crystal size and led to more transparent crystals, with lower amount of solids in each crystal. These results show that the microstructural properties of HMF were modifed by addition of …

The effect of processing conditions on the crystallization of blends of a high-melting milk fat fraction and sunflower oil was investigated. Two cooling rates were selected for all studies: 0.1°C/min (slow rate) and 5.5°C/min (fast rate). Blends were crystallized in two conditions: (i) with agitation in an 80-mL crystallizer (dynamic), and (ii) on a microscope slide without agitation (static). The selected crystallization temperatures were 25, 30, and 35°C for both cooling rates. Photographs of the development of crystals with time were taken in both static and dynamic conditions, and the crystal size distribution was determined at the moment that the …

Starches from garden orach (Atriplex hortensis) and sweet quinoa (Chenopodium quinoa Willd. "Surumi") seeds were isolated, examined for compositional characteristics, and compared with bitter quinoa (Cheno-podium quinoa Willd.) starch. Garden orach and sweet quinoa seeds were similar in fat and ash contents, while garden orach seeds contained 10% more protein. Starches were isolated from seeds following a 12-hr soak in dilute alkaline solution using a series of grinding, screening, centrifugation, and washing steps. Isolated starches viewed by scanning electron microscopy yielded angular, polygonal granules 2 m in diameter. High hydrostatic pressure (HHP) at 500 MPa and 50 °C induces β-LG into the molten globule state. Retinol, cis-parinaric acid (CPA), and 1-anilino-naphthalene-8-sulfonate (ANS) fluorescence from pH 2.5 to 10.5 in the presence of the native and molten globule states of β-LG indicate that retinol binds to β-LG in the calyx, CPA at the surface hydrophobic site, and ANS in multiple hydrophobic sites. HHP treatment results in a decrease of β-LG affinity for retinol and CPA, suggesting conformational changes in the calyx and surface hydrophobic site of β-LG during HHP treatment. β-LG treated by HHP in the presence of N-ethylmaleimide …

Hexazinone, a systemic herbicide registered for use on wild blueberries in 1983 is credited with increasing Maine's wild blueberry crop by three-fold over a 10 year period, while also increasing overall fruit quality. Unfortunately, the high water solubility of hexazinone gives it a high leaching potential. This solubility factor is exacerbated by the sandy soils where wild blueberries are commonly propagated. In 1991 a routine screen for pesticides used in blueberry agriculture revealed traces of hexazinone in water samples from property formerly used for blueberry production. There is a market for dehydrated foods, such as nonfat dry milk (NFDM), that are packaged for long-term storage in case of natural disasters or other emergencies. To maintain quality and optimize shelf-life, NFDM must be properly processed from good quality milk, well-packaged (minimizing moisture, light and oxygen), and stored appropriately. Research is needed to determine the variation in quality that exists in dried milk products intended for retail sale. Diabetes affects approximately 250 million people worldwide and health care costs related to diabetes equal approximately $98 billion each year. Aldose reductase has been shown to contribute to the side effects of diabetes including kidney disease, nerve disease, and retinopathy. Cranberries contain anthocyanins and other flavonoids that have been shown in vitro to inhibit the enzyme aldose reductase and to inhibit protein glycosylation. It is believed that daily cranberry supplementation could reduce side effects of diabetes. Calcium is an essential nutrient required for normal growth and development of the skeleton and teeth. Adequate calcium intake is critical during early adolescence to optimize peak bone mass and decrease the risk of osteoporosis later in life. Previous researchers, however, have concluded that adolescent girls consume insufficient calcium to meet the demands of rapid skeletal growth. National surveys conducted prior to 1997 showed that t.he major sources of calcium for adolescent girls were milk and milk products. The effect of chemical parameters on cheese structure and functionality was studied by modifying the calcium, salt content, and pH of cheese. Cheese blocks were high-pressure injected from zero to five times with water, solutions of different salts, or an acid solution 14 d after manufacture. Successive injections were performed 24 h apart. After 40-42 d of refrigerated storage, cheese structure was studied by using scanning electron microscopy and digital image analysis, and cheese functionality was characterized by texture profile analysis and melting test.

Protein is an important component of bone, but the role of dietary protein intake in osteoporosis remains controversial. The Utah picture-sort food frequency questionnaire was found to produce a useful estimation of usual dietary intake in the elderly. This method of dietary assessment was used in a population-based case-control study to examine the relationship between protein intake and risk of osteoporotic hip fracture in elderly Utah residents. Analyses of risk of hip fracture across increasing quartiles of protein intake were stratified by age-group. Higher protein intake was associated with a reduced risk of hip fracture in men and women aged …

It is well established that l,25(OH)2D3 is a major regulator of calcium homeostasis. The steroid exerts its effects on its target organs by two mechanisms, a slow mechanism mediated by nuclear vitamin D receptors (nVDR), and a rapid mechanism mediated by the l,25(OH)2D3 membrane-associated rapid response steroid binding protein (l,25D3-MARRS bp). X-ray diffraction technique is one of the best methods to study polymorphism of fats systems. The only information authors usually report is the interplanar distances calculated from the angles at which diffraction lines appear; these clearly determine the polymorphic form. However, in many other fields using crystallography, X-ray patterns are also used to determine crystal size from the broadening of the diffraction line at half the line of maximum intensity. Inasmuch as virtually all studies on mortality and reproduction in insects are conducted under conditions in which food availability is constant, little is known about the demographic response of insects to variable food environments. For example, it is not known if and to what extent the life expectancy of insects subjected to shortages of high-quality food will increase and/or whether this increase is associated with major decreases in lifetime reproduction.

The article discusses the moral aspects of vegetarianism. This will make vegetarians more compassionate and caring for animals and will result in better health and less finances. The virtue theory or the vegetarian justifying principle connotes that one should not support even symbolically bad practices to animals when good alternatives are readily available. Regression equations between skinfold (SKF) measurements and air displacement plethysmography (ADP) were determined 6 to 18 year old athletes (80 males / 34 females) using Pearson r correlation coefficients. Triceps and mid-calf SKF and percent body fat (%BF) by ADP were measured during an Athletic Ability Assessment at The HIT Center (Huntington, WV). A high relationship was found between SKF and %BF by ADP (males; r2 = .76, females; r2 = .74, all; r2 = .77). Data from the subjects were compared with similar correlations determined between SKF and %BF by hydrostatic weighing (HW) from another study …

Low-moisture part-skim Mozzarella cheeses were manufactured from 2% fat milk and aged for 21 d. Treatments included cheeses made with one of three different strains of Lactobacillus delbrueckii ssp. bulgaricus in combination with a single strain of Streptococcus thermophilus. A fourth, control treatment consisted of cheeses made with only S. thermophilus. Although total proteolytic ability of these strains, as indicated by the o-phthaldialdehyde analysis, was similar in each of the three strains of L. bulgaricus, these strains exhibited different proteolytic specificities toward the peptide, αs1-CN (f 1-23). Despite the steady improvement in the health status of Americans, Hispanics are a minority in the United States with greater prevalence of several infectious and chronic diseases and less health knowledge than the average citizen. A cross-sectional study on fasting serum and 24-hour urine samples were used to determine whether biochemical markers of bone turnover, resorption and formation, differed in a group of 50 healthy premenopausal Caucasian women eating vegan, lactoovovegetarian(LOV) and omnivorous diets.
The women, ages 20-42, had participated in a study of bone mineral density(BMD). The three groups were comparable in mean age, BMI, calorie intake, calories spent in exercise, kcal/kg body weight, protein/day, protein/kg body weight and urinary creatinine.
Biomarkers included those of bone resorption—pyridinoline, deoxypyridinoline, and N-telopeptides, and of bone turnover—serum and urinary osteocalcin(OC), skeletal alkaline phosphatase, and propeptide-type-I-carboxyterminal-procollagen(PICP). In all …
