Objective: The purpose of this study was to evaluate the relationship between anthropometric measures with heart rates (HR) at specific blood lactate concentrations [bLa] during exercise.

Method: Participants and data for this study were collected by an orthopedic rehabilitation center in Central Illinois. Participants underwent lactate testing following METHOD CRA protocol on an upright cycle and an optional DEXA scan. Heart rate values at Prime (2 mmol/L), Anaerobic (4 mmol/L) and Peak (6 mmol//L) blood lactate concentrations were recorded. Data was analyzed using Pearson correlations.

A Qualitative Study Of The Genesis Of A Community Food Pantry For Students Of Higher Education, Elizabeth Fast

Objective: The purpose of this case study was to understand the development of a food pantry for students of higher education at a Midwestern university.

Methods: The researchers recruited 11 individuals on the food pantry’s board using a snowball sampling method to participate in a 30-minute interview about the food pantry’s development from conception to implementation. The interviews were transcribed and then qualitatively analyzed by two researchers. The researchers coded interviews separately to identify frequent commonalities between participant responses. The researchers then organized the codes into themes, which were then summarized in the results of this study.

The strength of leaf fibers and the nutritional value of the edible fruit of several yucca species native to the U.S. southwest were studied to aid in the determination of species best suited for commercial cultivation by the Navajo Nation. The leaves were softened in an autoclave to facilitate the removal of the leaf matrix, conditioned in environmentally controlled chambers, and the fibers were broken using a texture analyzer. This study is an observation of the various physicochemical changes that occur in enzyme-modified cheese (EMC) during the incubation step of production. The purpose of this study was an attempt to gain a better understanding of the changes that occur due to enzymatic reactions during EMC production. Fortified and unfortified soymilk were produced from the same production batches for comparative evaluation. Fortification included a comprehensive array of micronutrients of interest to community and humanitarian nutrition programs. The effects of time after fortification prior to cooling, cooling method, and light or dark refrigerated storage on the stability of 5 vitamins (vitamin A, vitamin C, thiamine, riboflavin, and folate) were investigated for both fortified and unfortified soymilk. Objective: The purpose of this study was to determine the effects of highlighting healthy food options on consumer food choices in a food bank setting.

Methods: Two community food banks participated in this study. One food bank served as the control, while a second food bank was rearranged so that fresh produce and other healthy products were the first options that shoppers encountered upon entering. After shopping, carts were inventoried for healthy vs non-healthy products. Three dried cricket products – Oven-roasted Cricket Meal (ORCM), Oven-roasted Cricket Powder (ORCP), and Spray-dried Cricket Powder (SDCP) – were prepared and compared to assess their relative nutritional, functional, and sensory properties. The range of particle sizes in SDCP was wider than that of ORCP; while SDCP had more particles in the 7.78-22.0 µm range, it also had more particles in the 176-498 µm range, which contributed to differences in functional and sensory properties. Objective: Investigate the impacts of individual liberalized renal diet counseling in conjunction with a volume reduction hemodialysis (HD) protocol.

Design & Methods: Twenty-three maintenance HD patients (age = 55.7 ± 13.3y, 47.8% female), consented and completed this pilot intervention. Across the six-month intervention, participants received thrice weekly dietary counseling about a liberalized renal diet. Liberalized renal dietary guidelines promoted a low sodium diet with greater unprocessed food consumption, decreasing foods eaten outside the home, and increased food label reading. Participant HD sessions were conducted per a volume reduction protocol, gradually decreasing patient post-dialysis weight by removing an additional 200-300 mL/session. …

Background: College students often develop unhealthy eating habits. Poor eating habits can lead to chronic disease.

Methods: Energy intake and physical activity data from 35 undergraduate students enrolled in a 100-level kinesiology class were recorded and analyzed. Energy intake data was self-reported, while physical activity data was recorded via an activity tracker.

Results: Data points were analyzed twice: each day separately and as averages for each participant. When analyzed as averages, grams of total fat and grams of carbohydrate were the most significantly correlated with minutes of moderate to vigorous+ physical activity (both p<0.01). When analyzed by day, grams of protein, total fat, saturated fat, carbohydrate, sugar, and fiber were all found to be significantly correlated with minutes of moderate to vigorous physical activity to the p≤0.01 level.

The purpose of this study was to ascertain the perceptions of elementary school staff in regards to scheduling recess after or before lunch and the effect each schedule had on students.

Methods

This research was conducted in Fall 2016 when a Midwestern elementary school had recess after lunch (RAL) and in Spring 2017 when the same school had recess before lunch (RBL). The renal diet is often regarded as challenging to teach and follow, and can easily lead to additional complications, including malnutrition. Recent trends in the literature have suggested a liberalization in the renal diet, though no studies have assessed whether Registered Dietitian Nutritionists (RDNs) are comfortable making this change. An original, cross-sectional survey was created for this study. 187 renal dietitians completed the survey which revealed that only 15.3% of participants felt it is acceptable to liberalize the standard dietary restriction on fruits and vegetables, and 13.6% said the same about the bean and legume restriction. 19.9% are extremely likely …

A hallmark of type 2 diabetes (T2D) is β-cell dysfunction and the eventual loss of functional β-cell mass. Therefore, mechanisms that improve or preserve β-cell function could be used to improve the quality of life of individuals with T2D. Studies have shown that monomeric, oligomeric and polymeric cocoa flavanols have different effects on obesity, insulin resistance and glucose tolerance. We hypothesized that these cocoa flavanols may have beneficial effects on β-cell function. The objective of this study was to identify differences in teacher perceptions of benefits, challenges, and preferences to different School Breakfast Program (SBP) service models. A survey instrument was developed, pilot tested, and then distributed electronically to K-12 teachers throughout the state of Utah, who were part of the Utah Education Association. Demographics and factors influencing SBP models in Utah were gathered. Frequencies and ANOVA tests were performed and a significance level of <0.01 was chosen to protect for multiple comparisons. Results indicated that traditional breakfast was the most preferred model with a mean score of 2.80 and breakfast in the classroom was the least preferred model by teachers with a mean of -1.32. Children not going hungry was identified as the greatest benefit (95.4%, n=352) to SBP and food waste was identified as the greatest challenge (45.8%, n=168). This study concluded that increased awareness and education amongst teachers regarding different models of SBP service could lead to increased efficiency, increased participation in SBP, decreased costs, decreased food waste, and increased academic performance and health benefits for students.

Curcumin is a natural compound that improves blood glucose management. While some evidence from isolated mitochondria indicates that curcumin uncouples electron transport from oxidative phosphorylation, the effects of curcumin on mitochondrial respiration and hydrogen peroxide emission in intact skeletal muscle cells are not known. By assessing rates of oxygen consumption, we demonstrated for the first time that curcumin (40 µM) reduced the mitochondrial coupling efficiency (percentage of oxygen consumption that supports ATP synthesis) of intact skeletal muscle cells. A 30-minute incubation with curcumin decreased mitochondrial coupling efficiency by 17.0 ± 0.4% relative to vehicle (p < 0.008). Curcumin also decreased the rate of hydrogen peroxide emission by 43 ± 13% compared to vehicle (p < 0.05). Analysis of cell respiration in the presence of curcumin revealed a 40 ± 4% increase in the rate of oxygen consumption upon curcumin administration (p < 0.05 compared to vehicle). In additional experiments, no difference in mitochondrial coupling efficiency was observed between vehicle- and curcumin-pretreated cells after permeabilization of cell membranes (p > 0.7). The acceptability of whole grain flours during storage varies widely, as does the estimated shelf life of such flours, in part because acceptability is typically determined using subjective human sensory testing. Research is needed to establish more objective measures of acceptability. This study correlated the quantitative results of a descriptive odor sensory panel with volatile compounds determined by solid-phase microextraction-gas chromatograph-mass spectrometry (SPME-GC-MS). The National Bioengineered Food Disclosure Standard (PL 114-216) will require nearly all foods sold in the U.S. to bear a statement disclosing whether they contain genetically modified (GM) material. Past studies suggest the presence of such a statement could have profound effects on consumers; however, research comparing consumer response towards different GM-disclosure statements is scarce. PL 114-216 states that GM foods shall not be considered more or less safe than their non-bioengineered counterparts, nevertheless it would benefit regulators and food manufacturers to be aware of the possible effects such disclosures might have on consumers.
