OBJECTIVE: Parents have been proven to shape their children’s health through their growing years.1-6 Extensive research has been done on the correlation between adolescent’s health status and parent’s role modeling behaviors. However, little research has been done in preschool-aged children. The purpose of this study was to test the hypothesis that muscular fitness is preserved in older adults who consumed pork daily as a part of the DASH dietary pattern. A controlled feeding pilot study was used to test this. Eight healthy older men and women were randomly assigned to consume either 3 ounces or 6 ounces of pork daily as a part of the DASH diet for a total of 12 weeks. Background: Green Eating is a multidisciplinary approach to health in economic, public health, and environmental issues. GE has an evident impact on the quality of life in young adults, especially those on college campuses. Current evidence already supports an improved dietary intake in those who adopt GE behaviors. Rural communities experience unique barriers to food security. Developing food policy councils (FPCs) is a systematic approach to address food security. FPCs bring together a diverse network of community stakeholders to address local food system strengths and concerns. A six-state team developed new or provided support to existing FPCs in rural communities. Photovoice is a project component used to engage youths, helped identify community food issues, such as food access and affordability in studied communities. The first objective of this research was to enhance nutritional, rheological, sensory profiles, and shelf life of wheat-based pita bread using chickpea (CP) and food grade distiller’s dried grains (FDDG) as fortification ingredients. CP and FDDG are both high-protein and high-fiber ingredients. Nutritional efficacy was evaluated. Dough rheology and product texture were also analyzed. Chemical, physical, and rheological properties of blends, doughs and finished products were evaluated and the results showed an increase in protein, fat, ash, and total dietary fiber with an increase of FDDG and CP in the wheat-based food formulation. A systematic review and meta-analysis determined the effect of restaurant menu labeling on calories and nutrients chosen in laboratory and away-from-home settings in U.S. adults. Cochrane-based criteria adherent, peer-reviewed study designs conducted and published in the English language from 1950 to 2014 were collected in 2015, analyzed in 2016, and used to evaluate the effect of nutrition labeling on calories and nutrients ordered or consumed. OBJECTIVE: The study purpose was to identify clusters of weight-related behaviors by sex in a college student populations.

METHODS: We conducted secondary data analysis from online surveys and physical assessments collected in Project Young Adults Eating and Active for Health (YEAH) with a convenience sample of students on 13 college campuses in the United States. We performed 2-step cluster analysis by sex to identify subgroups with homogeneous characteristics and behaviors. We used 8 derivation variables: healthy eating; eating restraints; external cues; stress; fruit/vegetable intake; calories from fat; calories from sugar-sweetened beverages; and physical activity. This study set out to explore what factors in a campus environment influence students’ eating behaviors through qualitative methods. The student researcher developed questions based on a similar study and with the help of the faculty advisors. Researchers conducted focus groups and asked 9 open-ended questions. This study utilized a qualitative focus group approach along with a demographic survey that yielded quantitative data. Findings in the present study suggest that students eat unhealthier options when healthier options are available because of time, convenience, and cost. The purpose of this paper was to systematically review the current literature and evaluate the overall efficacy of nitrate supplementation on exercise tolerance and performance by meta-analysis. Studies were eligible for inclusion if they met the following criteria: 1) were an experimental trial published in an English peer-reviewed journal; 2) compared the effects of inorganic nitrate consumption with a non-bioactive supplement control or placebo; 3) used a quantifiable measure of exercise performance; and 4) was carried out in apparently healthy participants without disease. Objective: The goal of this study was to determine if there is an association between educational interventions by a RD and weight in the twelve months’ post-transplantation. A secondary aim is to study trends in blood lipid profiles in participants and the number of times visited with a RD.

Stress and sleep deprivation are two important lifestyle elements that affect eating habits. The purpose of this study was to evaluate stress and sleep deprivation as factors contributing to poor dietary choices of college-aged students. To determine the effects of a diet that provides 30% energy from protein with ½ as lean, red meat on risk factors of metabolic syndrome in humans. This pilot study was a 3- month, randomized, control, intervention trial with 33 participants (Beef-Intervention n=18; DASH-Control n=15) who displayed markers of metabolic syndrome. This study investigated the influence of utilizing a collegiate mascot as a marketing tool for the promotion of fruit and vegetable intake and physical activity among 4th grade students. The program utilized service learning and formative research for the development of a social marketing campaign comprised of nutrition education and brand marketing. A pre-test/post-test design was used to measure fruit and vegetable intake and physical activity in participants in intervention and control schools. Purpose: Meal replacement programs (MRPs) facilitate weight loss. Unfortunately, a large percentage of individuals that lose weight through MRP are not successful at maintaining their weight. Weight regain one year following weight loss via meal replacements has been as high as 40-50%, demonstrating a critical need to improve weight maintenance in MRP participants. The purpose of this study is to determine the availability of “more” versus “less healthful” entrée items in the campus dining environment and also to determine if students’ purchases are reflective of what is offered.
Entrée items were categorized as either “more” or “less healthful” according to the American Heart Association guidelines. The purpose of this study is to determine influencers and barriers to healthful dietary intake in rural youth in context of the bioecological model. Four focus groups as part of Ignite, a tri-state, five-year, community based partipatory research (CBPR) intervention were conducted with 6th to 8th grade adolescents from an economically disadvantaged community of rural South Dakota. Background/Purpose: Physical activity is commonly prescribed to reduce childhood obesity. However, due to differences in mechanics during low-impact activities, such as walking, obese children may be more prone to negative physical complications during high-impact activities, such as running. Therefore, this study analyzed the mechanical differences in running mechanics between healthy weight (HW) and overweight/obese (OV/OB) children. We hypothesized that when compared to HW children, OV/OB children would display higher vertical loading, greater joint moments and greater joint angular impulses during running.
