To assess accelerometer-derived physical activity and sedentary time from 0 to 24- months in youth in the iCook 4-H program. The iCook 4-H Program was a 5-state, randomized, control-treatment, family-based childhood obesity prevention intervention promoting cooking, eating and playing together. Youth, 9-10 years old, and their main adult meal preparer, participated in the 12-week program followed by monthly newsletters and bi-yearly booster sessions until 24-months. Physical activity and sedentary time were determined for youth who wore an Actigraph GT3X+ accelerometer for 7 days at 0, 4, 12, and 24-months and met defined accelerometer compliance standards. Background: Along with the United States obesity epidemic comes extensive weight loss attempts. One way people are attempting to lose weight is through meal replacement programs. Much work has been done to study strategies of structured weight loss programs and examine their success. Limited work has been done to study the specific barriers and facilitators of the real life participants who join weight loss programs. To examine the relationship between baseline, post, and follow-up accelerometer derived physical activity (PA) in 9-10 year old children participating in iCook 4-H, a 16-week, 5- state, randomized control family centered childhood obesity prevention program. This family focus intervention was designed to promote PA through lifestyle modifications. Between group differences in minutes-per-day and intensity of PA were determined on accelerometer compliant participants. Background: While it is well established that dietary nitrate reduces the metabolic cost of exercise, recent evidence suggests this effect is maintained 24 h following the final nitrate dose when plasma nitrite levels have returned to baseline. In addition, acute dietary nitrate was recently reported to enhance peak power production. Our purpose was to examine whether chronic dietary nitrate supplementation enhanced peak power 24 h following the final dose and if this impacted performance in a heavily power-dependent sport.

Objective: To observe outcomes of a community-centered approach to identifying behavioral and environmental factors that influence overweight and obesity in 6th-8th grade youth in selected low income, racial/ethnic communities.
Design: Five-year, tri-state, quasi-experimental design with environmental assessments and a questionnaire measuring nutrition and physical activity knowledge and behavior conducted in all communities at pre and post.
Setting: Low-income, minority communities targeting 6th-8th grade youth. Participants: One experimental and one control communities will be selected via each state’s Cooperative Extension network through an application and review process with the random selection of participating communities.

Sedentary lifestyles are a contributor to obesity and urban adolescents are less physically active than rural adolescents. Supportive physical activity environments, understood as the geography, observations, and perceptions of features such as recreational facilities, sidewalks, bike lanes, traffic patterns, etc., have been positively associated with adolescent physical activity behaviors within urban settings. As part of a Socio-Ecological intervention to improve physical activity behavior, the Physical Activity Resource Assessment (PARA), the Active Neighborhood Checklist (ANC), and focus groups were used to assess the physical activity influences within an urban middle school and surrounding community. The purpose of this research was to determine whether there were differences in estimated means and rates of change in BMC, bone area, BMD and measures of bone geometry among men (n=544) from three distinct populations (Hutterite [rural], rural non-Hutterite, non-rural), and whether activity levels or calcium intake explain these population differences. Men were enrolled in the South Dakota Rural Bone Health Study and followed for 7.5 years to estimate means and rates of change in bone mass, density, size and geometry. Grocery stores can serve as a location to promote increased fruit and vegetable consumption. Pick it! Try it! Like it! is a collection of resources providing information on 43 different fruits and vegetables that can be grown in Midwestern climates, being used in grocery stores as point-of-purchase education. An evaluation of individuals who shopped in grocery stores where materials were being used showed program recognition increased before and after implementation. Information obtained regarding shopping and food preparation habits will allow for further refining of materials. These materials, in addition to materials targeting youth and seniors, promote fruits and vegetables community-wide.

Introduction: Currently there are no interactive tools that allow school communities to assess their school wellness needs and foster interest in wellness efforts. PhotoVoice is a participatory action research methodology commonly used in public health that utilizes photography to document and showcase community strengths and weaknesses in order to promote change. OBJECTIVE: This study examined associations between college students' self-report and measured height and weight.
METHODS: Participants (N = 1,686) were 77% white, 62% female, aged 18-24 years (mean ± SD, 19.1 ± 1.1 years), and enrolled at 8 US universities. Body mass index (BMI) was calculated for self-report (via online survey); trained researchers measured height and weight and categorized them as normal (18.5 to < 25), overweight (25 to < 30), obese (30 to < 35), and morbidly obese (≥ 35).
RESULTS: Concordance of self-report vs objectively measured BMI groups using chi-square revealed that 93% were accurate, 4% were underestimated, and 2.7% were overestimated. Pearson correlations and adjusted linear regression revealed significant associations between self-report and measured …

A metabolic health crisis is evident as cardiovascular diseases (CVD) remain the leading cause of mortality in the United States. Effects of resistant starch type 4 (RS4), a prebiotic fiber, in comprehensive management of metabolic syndrome (MetS) remain unknown. This study examined the effects of a blinded exchange of RS4-enriched flour (30% v/v) with regular/control flour (CF) diet on multiple MetS comorbidities. In a double blind (participants-investigators), placebo-controlled, cluster cross-over intervention (n = 86, age≥18, 2-12 week interventions, 2-week washout) in the United States, individuals were classified as having MetS (With-MetS) or not (No-MetS) following International Diabetes Federation (IDF)-criteria. The health status of South Dakotans is commonly reported from public health surveillance surveys. Surveys such as the Behavioral Risk Factor Surveillance System (BRFSS) provide information that is used by policy makers, public health professionals, advocacy groups, health care organizations, and others to develop initiatives to improve the health of the population. PURPOSE: To examine the effectiveness of videoconferencing technology for delivering comprehensive weight management treatment.
METHODS: This retrospective cohort study was conducted by extraction of data from medical records for the years 2008-2010. The treatment included a series of 12 weekly MOVE!® classes delivered using videoconferencing. Data were extracted from the time of baseline weight to 1 year after baseline weight for the MOVE! participants (n = 60) and from a concurrent control group (n = 60) that did not participate in MOVE! treatment.

Background: Lower habitual physical activity and poor cardiorespiratory fitness are common features of the metabolically abnormal obese (MAO) phenotype that contribute to increased cardiovascular disease risk. The aims of the present study were to determine 1) whether community-based exercise training transitions MAO adults to metabolically healthy, and 2) whether the odds of transition to metabolically healthy were larger for obese individuals who performed higher volumes of exercise and/or experienced greater increases in fitness. Introduction: As a means to combat the childhood obesity epidemic, congress enacted the Child Nutrition and WIC Reauthorization Act of 2004. This act required all school districts participating in the Healthy School Lunch or Breakfast Program to create and implement a school wellness policy. In 2010 the Healthy, Hunger- Free Kids Act required additional components be added to school wellness policies, such as public notification of wellness policy initiatives. CONTEXT: The National Children's Study (NCS) is a longitudinal study of environmental influences on children's health. Recruitment of a representative birth cohort that will be followed until 21 years of age requires unique approaches across the nationwide study communities.
PURPOSE: To describe community outreach and engagement in preparation for household recruitment of women of childbearing age at a rural-classified NCS location that includes 4 adjacent Northern Plains counties spanning 2,500 square miles.

Background: The purpose of this project was to determine if differences exist in strength, comprehensiveness, perceived implementation, and barriers of school wellness policies between public school districts of varying size in South Dakota. Methods: All public school districts within South Dakota (N=151) were contacted and asked to submit their current wellness policy. The strength and comprehensiveness of each written policy was assessed via WellSAT. An electronic invitation to complete the School Nutrition and Physical Activity Practices Survey was sent to all Kindergarten-12th grade school principals (N=96) to assess perceived policy implementation and barriers. In a cross-sectional pilot study, we examined eating behaviors in patients (N= 24) approximately 6 years after gastric bypass surgery. Anthropometric measures, personal interviews, and 7 days of food records were collected. A mean body mass index of 33.7±8 was reported, with 75%(18/24) sustaining a weight loss 50% or more of their excess body weight. A mean total caloric intake of 1429±411 cal was reported: 43% carbohydrate, 17% protein, and 39% fat. The purpose of this study was to determine whether weekly supplementation with nine ounces of prepackaged lean beef sticks could maintain the iron status of college endurance athletes. Thirty-four college endurance athletes (20 female, 14 male) were stratified by sex, baseline serum ferritin concentration, and use of iron supplements, and randomized into an intervention (n = 18) or control (n = 16) group. The participants in the intervention group supplemented their usual diet with nine ounces of prepackaged lean beef sticks per week and a daily multivitamin/mineral supplement containing 18 mg iron. Iron deficiency is prevalent among endurance athletes, particularly females. Low iron may compromise oxygen delivery and physical performance. Vegetarianism, desire for convenience, and perceived health risks associated with red meat contribute to low bioavailable iron intakes. The purpose of this study was to examine if lean beef supplementation would maintain iron status, improve body composition and increase performance of distance runners after 8 weeks. Background: In contrast to the traditional open-bay–type design of the neonatal intensive care unit (tNICU), infants in developmentally appropriate NICU (dNICU) are housed in individual rooms with greater control of light and noise. Previous reports have documented positive influence of the dNICU in cardiorespiratory status, physiologic stability, and weight gain of the infants. Purpose: To determine wheather ot not the nutritional supplement PreRace containing L-Taurine, Citrulline Malate, Quercetin, DiMethyl Amino Ethanol, Caffeine, Metabromine, Catechin, and Malic acid will improve performance in an indoor 40 Kilometer cycling time trial.
Methods: Seven male cyclists ages 21-58 participated in a placebo-controlled investigation which consisted of two trials in which they consumed either the supplement PreRace or aloe vera juice. OBJECTIVE: To elucidate the relationship between bone geometry and onset of walking in former term and preterm children.
STUDY DESIGN: We conducted a cross-sectional study of 128 preschool children aged 3 to 5 years who underwent peripheral quantitative computerized tomography measures of bone size at the distal tibia. Linear models were developed, stratifying by sex, to determine whether bone differences between children born term and preterm were caused by differences in walking age.
RESULTS: Children with a history of preterm birth walked later than children born at term (12.4 +/- 0.5 versus 10.9 +/- 0.2 months; P = .004); however, …

BACKGROUND: Dietary calcium may play a role in the stimulation of lipolysis and the inhibition of lipogenesis, thereby reducing body fat.
OBJECTIVE: The aim was to determine whether an association existed between change in percentage body fat (%BF) or fat mass and calcium intake in children aged 3-5 y.
DESIGN: A secondary analysis of a 1-y randomized calcium and activity trial in 178 children was conducted. Three-day diet records and 48-h accelerometer readings were obtained at 0, 6, and 12 mo. Body composition was measured by dual-energy X-ray absorptiometry at 0 and 12 mo.

Food choices have changed among Native American populations. Healthy food choices are subject to lifestyles, cooking skills, nutrition knowledge and the availability of healthy foods. There is a paucity of nutritional information on traditional and cultural Native American foods. Sixteen traditional Dakota recipes were prepared by members of the Sisseton Wahpeton Oyate, Sisseton, South Dakota. These foods were pureed, lyophilized and analyzed for moisture, ash, fat, protein, carbohydrate and individual mineral content using officially accepted methods. Alice white wheat is a new cultivar of white wheat that has many desirable attributes for the baking industry. Its main appeal is the reduction in bittering compounds and pigments. White wheat is in demand in the booming Asian noodle market. The purpose of this study was to analyze rheological properties of white wheat flours using the Mixolab, a state of the art dough rheology instrument. Additional objectives included sensory testing of various reduced-sugar bread formulations and the determination of physico-chemical properties of flours and of bread made with them.
