Because of the growing evidence of the cardio protective effect of nuts, examining the potential of nuts as a healthy food choice for the larger population should be considered. The purpose of this 12-month crossover study was to evaluate the impact on diet, eating patterns, and satiety of supplementing a self-selected diet (with little or no nuts) with ~52 g of almonds in free-living healthy males (43) and females (38) between the ages 25 and 70 years. Aside from genetics and training, no factor plays as important a role in exercise performance as nutrition. What athletes consume before exercise longer than 60 min influences fuel use, perceived exertion (RPE), heart rate (HR) and time-to-exhaustion (TE). Ingesting carbohydrates (CHO) before exercise can delay exhaustion over placebo, but less is known about combinations of CHO and fat on fuel use and endurance. The purpose of this study was to determine if two different amounts of almonds added to a heart healthy diet would increase vitamin E concentrations in healthy men and women, and reflect positive fatty acid profiles in serum lipids and erythrocytes. Twenty three subjects participated in a crossover metabolic study for a 14 week period. Subjects consumed one of three diets for 4 weeks each, a control diet, a low almond diet and a high almond diet after a 2 week run-in period. A cross-sectional study on fasting serum and 24-hour urine samples were used to determine whether biochemical markers of bone turnover, resorption and formation, differed in a group of 50 healthy premenopausal Caucasian women eating vegan, lactoovovegetarian(LOV) and omnivorous diets.

The women, ages 20-42, had participated in a study of bone mineral density(BMD). The three groups were comparable in mean age, BMI, calorie intake, calories spent in exercise, kcal/kg body weight, protein/day, protein/kg body weight and urinary creatinine.

Background: The frequent consumption of nuts is inversely associated with the incidence of cardiovascular disease. Nuts are known to decrease the risk of cardiovascular disease by reducing serum total and low-density lipoprotein (LDL) cholesterol. Markers of inflammation including C-reactive protein, E-selectin and interleukin-6 have been proposed to be newer risk factors for cardiovascular disease. Adolescents have increased nutrition needs and report frequent meal skipping and snacking, but there are few studies that examine the determinants of unhealthy eating, especially among ethnic minority groups. This study investigated dietary intake and snacking behavior among Korean-American adolescents in the Los Angeles area. We determined the relationship between dietary fat intake and overall quality of the diet as assessed by two healthy eating indices: the Healthy Eating Index (HEl) and Mean Nutrient Adequacy Ratio (MNAR). A total of 756 female adolescents, aged 13 to 18 years, from five public high schools in Antelope Valley Union High School District located in North Los Angeles County participated in this study between February 1999 and March 1999. The ethnic composition was 53.3% White/Anglo Americans, 19.3% Hispanics or Latinos and 10.2% Black/African Americans. The constructs of the Theory of Planned Behavior (attitude, subjective norm, and perceived behavioral control and their underlying beliefs) were assessed to determine the predictors of low-fat milk and regular soda consumption. A cross-sectional design with group-administered questionnaires was utilized.

The prevalence of cobalamin (Obi) deficiency among older adults is higher than among younger adults, and is estimated to be between 14% and 23%. Persistent Cbl deficiency can cause a variety of neurological deficits. Neurological dysfunction occurs commonly among older adults, raising the research question whether or not there is a relationship between the high prevalence of Cbl deficiency and neurological dysfunction among older adults.

Dietary habits are believed to be major determinants of risk of coronary heart disease (CHD). Studies of high and low risk populations have suggested several nutrients to be protective or hazardous against CHD. Most published work since 1984 on diet and CHD in the Adventist Health Study (AHS) population examined either foods or food groups. This study investigated ten nutrients as exposure variables and their relationship to CHD risk. Few studies have examined the risk factors associated with reduced bone mass in Asians, but none specifically investigated Singaporean Chinese women. The subjects in this study were 16 premenopausal, 8 perimenopausal and 13 postmenopausal women who participated in a larger study which began in 1986. Bone density was measured in 1986 and 1992. Dietary and lifestyle data were collected for this study by personal interview. Association between dietary and lifestyle factors and bone density variables and change in bone density at the end of the 6 year period were assessed by univariate regression analyses.

Numerous scientific bodies have made the recommendation to increase consumption of whole-grain breads and cereals. This study used a telephone survey to assess the availability of whole-grain foods in a random selection of 109 military installations and 30 military hospitals. Surveyed installations represent over 70% of the active duty military population assigned in the continental United States.

Military food service specialists were asked questions regarding the availability of the following whole-grain products: bread, rolls, buns, flour, pancake mix, brown rice, and ready-to-eat cereals (RTE). Birth records show that San Bernardino County has the highest black infant mortality rate of the 16 counties in California with the largest proportion of African-Americans births. Although total infant deaths in San Bernardino County had fallen to 8.6 per 1,000 live births by 1992, the infant mortality rate among the black population of the county was close to two times higher at 16.8 per 1,000. This is the first study to address the high infant mortality rate among blacks in San Bernardino County. Factors which may affect the black infant mortality rate were examined.

The purpose of this research project was threefold: 1) to determine the present serum vitamin B-12 status in a select group of strict or total vegetarians all of whom had been vegetarian for six months or more. 2) to determine the daily intake of vitamin B-12, total calories, protein, % calories as fat, folic acid, and crude fiber on a total vegetarian diet. 3) to observe if subjects with low serum vitamin B-12 levels and low intakes of oral vitamin B-12 also had elevated methylmalonic acid (MMA) in the urine.

The relationship between moderate exercise training (five 45 min sessions/week, brisk walking at 62+2% V02max for 15 weeks) and changes in nutrient intake was investigated in a group of 36 sedentary, mildly obese women, conducted using a two (exercise, EX and nonexercise, NEX groups) x three (baseline, six-, 15-week testing sessions) factorial design, with data analyzed using repeated measures ANOVA. The pattern of change over time between groups for kilocalorie intake tended to be different between groups [F(2,68)=2.50,p=0.089] with the EX group experiencing a significant decrease versus baseline by 15 weeks. The purpose of this research was to determine whether whole wheat and lentils, food staples consumed in the Middle East, will exhibit delayed protein complementation when fed in alternating meals. Lentils are limiting in sulfur containing amino acids, especially methionine, while whole wheat is limiting in lysine, and when these proteins are fed together they supplement one another.

The effect of disulfiram and/or serotonin rich foods (SRF) on the urinary excretion of 5-hydroxytryptophol (5-HTOL) and 5-hydroxyindoleacetic acid (5-HIAA) in normal male subjects was investigated. Urine collections were obtained on 1) regular serotonin free diet, 2) SRF, 3) serotonin free diet with disulfiram, and 4) SRF with disulfiram. Urinary excretion of 5-HTOL in ug/gm creatinine during disulfiram administration was 112.0 ± 24.1. Five HTOL (ug/gm creatinine) with disulfiram and SRF increased to 1532 ± 352.0 (p < 0.001). Five-HIAA (mg/g creatinine) before and after SRF was 3.4 ± .44 and 33.1 ± 6.1 respectively, p < 0.001. With disulfiram and SRF the excretion of was 24.2 ± 3.2 mg/g creatinine which was significantly greater than when on the regular diet (p < 0.001) than the excretion on SRF alone (p < 0.05)

Concerns have been expressed for the ability of some vegetarian diets to support normal growth of children. Animal protein or meat intake showed a positive relationship to attained height in children from developing countries. In this study, the relationship between meat intake/vegetarian status and physical growth was investigated in children living in California.

Height and weight were collected on 2,272 Caucasian children aged 6-18 years attending Seventh-day Adventist (SDA) or public schools who participated in a two year longitudinal study. Relationships between dietary nutrients and plasma and fecal estrone, estradiol-17β, testosterone, and plasma prolactin levels were studied in young Seventh-day Adventist men: 18 nonvegetarians (NV), 20 lacto-ovovegetarians (LOV), and 15 vegans (V). Blood samples and 3 d dietary records were obtained. Contemporaneously collected diet composites and stool samples were analyzed for fiber. The vegetarians consumed significantly more fiber than the omnivores, while NVs and LOVs consumed more saturated fat than the Vs. Although plasma steroid hormone status did not differ, the Vs had significantly higher fecal estrogen levels than the NVs or LOVs. Plasma prolactin levels were significantly higher in …

Three-day food records from a large group of marathon runners were analyzed and compared to various standards of dietary quality. Nutrient intake by the runners exceeded two-thirds the Recommended Dietary Allowance for all nutrients except for vitamin D and zinc in female runners. Energy and nutrient intake levels in the marathon runners were higher than those of the general US population except for fat and zinc in both males and females, and vitamin B12 in females. Twenty-five pregnant women were recruited for this study as they presented for elective cesarean section at term. Comparison was made between 10 diabetic women and 15 nondiabetic women: 13 nondiabetic women with normal weight babies and six diabetic women with macrosomic babies. Radial artery, uterine vein, umbilical vein, and umbilical artery blood samples were analyzed in the fasting state for lipoprotein composition. Diabetic and diabetic-macrosomic infants had greater birth weight and skinfold measurements but not greater birth length.

Five men with non-insulin-dependent diabetes mellitus and fourteen nondiabetic men, were given test meals with soy protein, casein or additional carbohydrate in place of protein. Blood levels of insulin, glucagon, glucose and lipids were measured at fasting, one-half hour and two hours postprandial. To all meals, the nondiabetic subjects responded with a quick rise of the insulin level which decreased at two hours. In contrast, the diabetics showed a significantly lower insulin response at one-half hour (p < 0.05), but a tendency to higher levels at two hours. The same pattern was observed in the insulin to glucagon ratio. No significant difference between the meals was found in regard to insulin or glucagon responses, suggests that a sustained, although delayed postprandial insulin response, may be a precursor to the higher cholesterol and increased risk for cardiovascular disease among diabetics.

Problem drinkers (N=7) were given 500mg disulfiram daily for one week. Urine was collected before and after disulfiram intake. 5-Hydroxytryptophol (5-HTOL) was determined by a modification of the method of Davis et al. and adapted to high-performance liquid chromatography (HPLC) with an electrochemical detector setting of 0.75V. 5-Hydroxy-indoleacetic acid (5- HIAA) was determined using the HPLC method of Shihabi et al. (1980). Urinary excretion of 5-HTOL in ug/gm creatinine before and after disulfiram was 25.4± 3.3 and 110.5± 27.1 respectively, p < 0.02. 5-HIAA in mg/gm creatinine before and after disulfiram was 4.9±0.9 and 3.6±0.8 respectively, p > 0.16. The data shows that disulfiram administration alters serotonin metabolism resulting in increased 5-HTOL which is known to increase …

The association of fasting plasma amino acids with serum lipids was studied in 23 healthy human male subjects with ages ranging from 31 to 62 years (45±9, mean± SD). There were 12 normocholesterolemic (serum cholesterol = 183±17 mg/dL) and 11 hypercholesterolemic (271±27 mg/dL) subjects. Venous blood samples were drawn three times at weekly intervals. Plasma amino acids were determined by ion-exchange chromatography, and serum cholesterol and triglycerides by enzymatic methods. Hypercholesterolemic subjects had significantly higher lysine and lower serine levels than normocholesterolemic subjects (p < .05). Serum cholesterol levels were positively correlated with plasma levels of lysine, ornithine and the lysine/arginine ratio (p < .04); and negatively correlated with phenylalanine and urea (p < .05). Serum triglyceride levels were positively correlated with plasma levels of lysine, glutamic acid, and valine (p <. 02); and negatively correlated with serine, glutamine, and asparagine (p < .04). These results add support to the hypothesis that specific plasma amino acids are associated with the metabolism of serum lipids.

Nine male marathon runners were exercised to exhaustion to determine the effects of a 27-hour fast on endurance performance. Each subject completed two exercise tests at 72% peak oxygen uptake (Vo2max), one following a 27-hour fast and one three hours after a pre-exercise meal, in random order. Fasting caused a 44.7±5.8% (±SE) decrease in endurance performance (p2(9.3±2.0%), heart rate (8.4±2.4%), rating of perceived exertion (RPE), and psychological fatigue, evident within the first 60 minutes of exercise. Colon cancer is responsible for a high percentage of cancer deaths in developing countries, and there is convincing epidemiological evidence that meat protein and fat in the diet increase the incidence of this form of cancer. An animal tumor model which has been used by many investigators interested in colon cancer is the 1,2-dimethylhydrazine (DMH)-rat or DMH-mouse tumor model. There is evidence that specific nutrients may modify hormonal balance and contribute to breast cancer etiology. To investigate the relationship between dietary nutrients and plasma reproductive hormones and to determine hormone-nutrient interrelationships, we measured plasma estrogens, androgens. progesterone and prolactin levels in 10 premenopausal Seventh-day Adventist (SDA) vegetarian and 10 premenopausal SDA nonvegetarian women. Over three days in each of three consecutive months. diet records and fasting midluteal blood samples were collected. The nonvegetarians consumed significantly more protein, total and saturated fats, oleic and linoleic acids, and cholesterol than did the vegetarians. Hormonal status of the two groups did not …

There is evidence that homocysteine may be a factor in increasing the risk of coronary heart disease (CHD). To explore this relationship further, we assessed the interrelation of dietary vitamins B-6, B-12 and folate, and plasma pyridoxal-5'-phosphate and vitamin B-12 with plasma free and protein-bound homocysteine levels. Fasting blood and three-day dietary records were obtained from nine men low-risk (LR) and five at high-risk (HR) for CHD. The HR mean systolic blood pressure, total cholesterol (TC), and TC/cholesterol ratios were significantly higher than LR levels. Eight healthy male lacto-ovo-vegetarian subjects averaging 28.0 ± 3.6 years of age (22 to 53 years) were fed a diet rich in α-linolenic acid (18:3 ω 3) for four weeks. Arterial blood pressure and body weight were recorded each week. Plasma 6-keto-prostaglandin F (6-keto- PGF ), thromboxane B2 (TXB2), total cholesterol, triglyceride, and total phospholipid fatty acid composition were analyzed at 0, 2 and 4 weeks.

Systolic blood pressure increased significantly between weeks 0 and 1 (106.5 ± 2.7 mmHg to 114.0 ± 3.7 mmHg; p < 0.003), but decreased to 107.3 t 2.6 mrHg (p < 0.02) at week 2. There was an insignificant increase in both systolic and diastolic blood pressures after four weeks. There was no significant change in either total cholesterol or triglyceride levels during the four weeks.
