The Effects Of Acute Post Exercise Consumption Of Two Cocoa-Based Beverages With Varying Flavanol Content On Indices Of Muscle Recovery Following Downhill Treadmill Running, Katelyn Peschek, Robert Pritchett, Ethan Bergman, Kelly Pritchett

Dietary flavanols have been associated with reduced oxidative stress, however their efficacy in promoting recovery after exercise induced muscle damage is unclear. This study examined the effectiveness of acute consumption of cocoa-flavanols on indices of muscle recovery including: subsequent exercise performance, creatine kinase, muscle tenderness, force, and self-perceived muscle soreness. Eight endurance-trained athletes (VO2max 64.4 ± 7.6 mL/kg/min) completed a downhill running protocol to induce muscle soreness, and 48-h later completed a 5-K (kilometer) time trial. Muscle recovery measurements were taken at PRE, 24 h-POST, 48 h-POST, and POST-5K. Participants consumed 1.0 g of carbohydrate per kilogram of body weight …

Controlling blood lipids is a major public health challenge of our time. The pleiotropic hormone-like polypeptide fibroblast growth factor 21 (FGF21) was recently recognized as a potent modulator of lipid and glucose metabolism and a promising treatment strategy for obesity related metabolic disorders, including dyslipidemia. A cost effective and practical alternative to the administration of recombinant FGF21 is to stimulate endogenous FGF21 production through diet. Our research identified (R)-a-lipoic acid (LA), a naturally occurring enzyme cofactor and dietary molecule found in green leafy vegetable and red meat, as an inducer of FGF21 expression. Biotin feeding in a Balb/c mouse model of breast cancer suggest that the tumor load is ~100% greater in biotin-deficient mice compared with biotin-sufficient controls, and that the increase is associated with metastasis rather than new tumors. The oncogenes c-Myc and COX-2 are implicated in cancer metastasis, and their expressions are repressed by binding of MBP-1 to the promoter. Mass spectrometry studies, designed to discover novel biotin-containing proteins, suggest that lysine residues K10 and K12 in the c-Myc promoter binding protein (MBP-1) contains covalently bound biotin (MBP-1bio). Adenocarcinoma of pancreas is recognized for its poor prognosis, as it progresses asymptomatically and is rarely diagnosed at early stage. According to American cancer society pancreatic cancer, it has lowest survival rate in all cancer types, with less than 6% five year survival rate. Surgical resection is only possible for 20% of diagnosed cases and current chemotherapy has only 15% response rate. Even the most favored drug, Gemcitabine, increases survival time only by a few months, depending on the stage at diagnosis. The purpose of this study was to develop and implement a culturally appropriate food safety educational program using the conceptual change teaching method while preparing a meal. The food safety educational program was based on the FightBac!™ concepts (CLEAN, SEPARATE, COOK AND CHILL). Quantitative and qualitative date were collected, compared, and analyzed. Two pilot studies were conducted with Native American participants on non-reservation sites in Omaha and Lincoln. When derivatives of oxygen occur and exist independently with one or more unpaired electrons they are known as “free radicals” (Halliwell and Gutteridge 2007). Since atoms possess electrons that are usually associated in pairs, free radicals have the potential to act negatively in the body. This research focuses on the health impacts of participation in the National School Lunch Program, a program providing free and reduced-cost lunches for income-eligible students and minimally subsidizing lunches for income-ineligible students. In the past decade, increasing incidence of childhood obesity, particularly among low-income individuals has drawn scrutiny over the NSLP's role in the health of student-aged children.

The amount and type of antioxidants present in raspberries is dependent upon cultivar, ripeness, and growing conditions. Previous research on raspberry jam has reported some color, antioxidant, and flavor loss after processing and storage, though it is unknown to what extent similar changes will occur in raspberries grown in Utah. Sugar concentration and heating temperature as well as storage time were evaluated in an effort to maximize color retention, flavor, antioxidant content, shelf life, and consumer acceptance of Utah-grown raspberry jam. INTRODUCTION: In general, most college-aged students live highly, and newly, independent lives. Although campuses offer wide varieties of food choices, most choices do not meet the standards set by the RDA or DRIs, per NHANES 1999-2000.
METHODS: In order to document these eating patterns, 1001 male (n=379) and female (n=622) college-aged students quantified dietary intake for three consecutive days using the food log method. Assessment reports were generated and analyzed in order to determine the percentage of the DRI in both males and females, and groups with a BMI of less than 20 and greater than 30. Purpose: The purposes of this study were first to assess the vitamin D status and bone mineral density (BMD) in male and triathletes (N=15), female triathletes (N=13), and non-athletes (N=14), and to determine if circulating vitamin D was correlated with body composition, BMD, dietary calcium and vitamin D intake in triathletes. The second purpose was to determine if triathletes have a different level of serum vitamin D, body composition, BMD, dietary calcium and vitamin D intake then non-athletes. The paper focuses on the impact of the change in food supply along with socio-economic factors, specifically access, time, and cost, and how these factors have affected the American obesity epidemic. This health behavior research study utilizes the theory of planned behavior (TPB) to explore female collegiate lightweight rowers' (FCLR) decision to use multivitamin/mineral supplements (MVS). This study aimed to determine the relationship between FCLR salient beliefs, attitudes, subjective norms, and perceived behavior control (PBC) towards MVS, intention to use MVS, and use of MVS. Subjects were recruited from sixteen collegiate lightweight women's rowing programs within the United States and Canada and asked to complete an online survey. Paleolithic nutrition can optimize serum lipids in adults with hyperlipidemia who have been on a heart-healthy diet based on the current recommendations by the Academy of Nutrition and Dietetics (the Academy) or the American Heart Association (AHA). Twenty subjects (10 male and 10 female) age 40 to 62 were selected based on the criteria of a diagnosis of hypercholesterolemia. Subjects were not taking any cholesterol lowering medication and had followed a calorie-controlled diet, based on either the dietary principles of the Academy or the AHA, for at least four months followed by a Paleolithic diet for four months. Calcium (Ca) is essential for multiple functions within the body including skeletal health. The level of Ca in the serum is tightly regulated. During periods of habitual low Ca intake, the body senses a decrease in serum Ca and increases renal conversion of 25 hydroxyvitamin D (25(OH)D) to 1,25 dihydroxyvitamin D (1,25(OH)2D). 1,25(OH)2D acts through the vitamin D receptor (VDR) to increase intestinal Ca absorption, renal Ca reabsorption and skeletal Ca resorption. Sirt5, localized in the mitochondria, is a member of sirtuin family of NAD1-dependent deacetylases. Sirt5 was shown to deacetylate and activate carbamoyl phosphate synthase 1. Most recently, Sirt5 was reported to be the predominant protein desuccinylase and demalonylase in the mitochondria because the ablation of Sirt5 enhanced the global succinylation and malonylation of mitochondrial proteins, including many metabolic enzymes. This article focuses on the prevalence among Massachusetts children and families of food insecurity, inadequate access to enough nutritious food for an active and healthy life. It summarizes research findings on the association of food insecurity with less optimal children’s health and development from the prenatal period through adolescence. Food insecurity also correlates with other material hardships, such as housing and energy insecurity. Data show families’ participation in public nutrition and other assistance program is associated with decreased prevalence of food insecurity and with mitigation of its impact on children’s health and well-being. This paper includes a brief history of the human food system. It includes an exploration of the formation of the food system, the development of the modernized food and agriculture system, and challenges arisen throughout. Additionally, a specific case study into Mongolia and the unique geography of its food system is highlighted. The purpose of providing the case study is to consider challenges of a food system in transition amidst development in one country. Recommendations for Mongolia anent sustainable development are provided.
