This paper shares challenges faced and overcome by four African American women on their 2013 journey to secure USDA’s Produce Good Agricultural Practices (GAPs) Harmonized Food Safety Standards with the Global Addendum (Global Markets Primary Production Assessments: GMPPA). Collaboration, consistent training, and technical support from the Tuskegee University Extension and Research staff, and the Small Farmers Agricultural Cooperative undergirded the preparation of the farms for GAPs Certification. The timely sharing of staff expertise and experience from commercial partners (Walmart, Purivida, C.H. Robinson, W.P. Rawls), and support from the USDA (Strike Force Initiative) were important contributors to the positive outcomes described. …

This case study examined methods used in a food safety/Good Agricultural Practices (GAPs) educational program with small and limited resource produce farmers in Alabama to assist them with obtaining certification. Two methods were used, namely, the identification of challenges to food safety certification and development of strategies to address the challenges, and the enlistment of educational methods to facilitate food safety certification. As a result, there were four challenges to food safety certification identified; needs for motivation, information, clarification, and resources. In addition, the educational methods enlisted included group meetings, instructional material distribution, individual farm instruction, and expert instruction. The …

Candida yeasts are commensal members of the gastrointestinal, mucosal, oral and vaginal microbiota. Candida albicans and C. tropicalis can be found as a part of the normal human commensal flora, especially in all sections of the gastrointestinal tract. However, when the host defense system and microbiota are disturbed, Candida can become pathogenic and cause severe infection or candidiasis. Antifungal drugs used to treat candidiasis have been shown to result in treatment failures due to drug toxicity and/or development of resistance during long term antifungal therapy and, in recent years, the incidence of Candida infections has increased dramatically due to the …

Sleep-deprivation is thought to be a factor in the rising American obesity epidemic. Altered sleep cycles affect appetite-regulating hormone levels and enhance the hedonic effect of food consumption. As a result, sleep restriction has been associated with an increased daily energy intake of more than 500 calories and high-carbohydrate/high-fat consumption. However, past studies have not examined the relationship between sleep deprivation and decreased intake of nutrient-dense fruits and vegetables as a factor in increased energy consumption. The global fisheries crisis has led to an increasing recognition for the need to relieve pressure on overfished, popular food fish stocks. Opportunities exist to shift consumer demand toward more sustainable choices, including fish that may be locally abundant. Attempts have been made to market underused fish (sometimes termed “trash fish”) that represent more sustainable alternatives; however, it is unclear whether consumers will choose to purchase these more sustainable options, particularly if underused fish are also unfamiliar. Rheological, Foam, And Physical Properties Of Low Sucrose Meringue And Angel Food Cake Formulated With Non-Nutritive Sweeteners And Polydextrose, Kevin J. O'Niones

The object of this research was to determine if an acceptable angel food cake alternative could be produced that had reduced calories and sucrose content. This was accomplished through replacing sucrose in meringue, angel food cake batter, and baked angel food cakes with polydextrose and either sucralose, acesulfame-K, or Rebaudioside A at different replacement levels (25, 50, 75, 100%). Meringue and cake batter properties were measured using rheological techniques. Baked angel food cakes were analyzed based on height, weight loss, moisture content, color, and TPA analysis.
