Sleep-deprivation is thought to be a factor in the rising American obesity epidemic. Altered sleep cycles affect appetite-regulating hormone levels and enhance the hedonic effect of food consumption. As a result, sleep restriction has been associated with an increased daily energy intake of more than 500 calories and high-carbohydrate/high-fat consumption. However, past studies have not examined the relationship between sleep deprivation and decreased intake of nutrient-dense fruits and vegetables as a factor in increased energy consumption. In order to examine and obtain a better understanding of the local food system within Adams County, Pennsylvania, this study explores the characteristics and perspectives of the customers and vendors at the farmers markets in Gettysburg, Pennsylvania. Survey findings from the Gettysburg Farmers Market and the three Adams County Farmers Markets include customer demographic information, perspectives and shopping behavior as well as vendor product information, farm size and location and preference for market management. The Local Food Movement has arisen in recent decades as a proposed solution to problems in the current food distribution system. Proponents of the movement look to solve problems such as unsustainable farming practices, greenhouse gas emissions, and unhealthy communities. Skeptics raise questions as to whether local food is truly capable of accomplishing any of those. The author proposes that as a solution, aspects of the Local Food Movement such as urban agriculture and attempts at community development should be taken more seriously in order to create a better future for the land and people alike.

There are many reasons why issues of food insecurity and hunger exist. Individuals, families, and households have various barriers to food security, often facing more than one at a time. Barriers include limited fixed incomes, minimum wage not equaling a livable wage, unemployment and underemployment, poverty, lack of personal transportation and/or access to public transportation, limited access to shopping areas (food deserts), and health and medical issues.

Diabetes has become a cultural problem across America, but particularly in the Midwest and Southern regions. For my film, I explored these two areas and compared the food and exercise culture to one of the healthier regions, the West. Having moved from Indiana to Colorado, I used my own personal experiences to analyze why people in the Midwest struggle with diabetes and obesity at such a higher rate than those nearer to the Pacific Ocean. Americans do not receive enough n-3 fatty acids (F. A.) in their diets. Walnuts are good source of α-linolenic acid (ALA), while n-3 F.A. enriched eggs provide a dietary source of DHA. Whether ALA and DHA have equivalent effects modifying cardiovascular risk factors is not known. This study compared the changes in blood and erythrocyte membrane lipids in twenty free-living lacto-ovo vegetarians following the consumption of regular eggs (6/wk), n-3 F.A. enriched eggs (6/wk), or walnuts (6 oz/wk) in a triple crossover design.

Eating disorders are a debilitating mental illness that affects young people including those in the field of dietetics. Literature suggests that dietetic students have a higher prevalence of eating disorders than other students. Seventy-seven college student in Southern West Virginia enrolled in either dietetics or another major were included in a sample to determine if dietetic students have higher prevalence of disordered eating attitudes and behaviors. The participants completed a survey that included a general information section, a 26-item questionnaire concerning eating attitudes, and a behavioral information section.
