Objective: To extract natural flavonoid compounds (MDZK) from peony seed husks for composition analysis and antioxidant research. Methods: The total flavonoids of peony seed shell were extracted by solvent reflux extraction method. The ultraviolet-visible spectrophotometer method was used to determine the MDZK content and antioxidant properties; The total flavonoids extracted were analyzed by LC-MS method. Results: When the solvent was 70% ethanol, the extraction temperature was 70 ℃, the feed-to-liquid ratio was 1∶25 (g/mL), and the extraction time was 60 min, the MDZK yield was the highest, which was (10.54±0.13)%. Objective: This study aimed to investigate the technological conditions for the preparation of antioxidant hydrolysate of Agaricus blazei Murill and analyze the nutritional components of the hydrolysate. Methods: Papain, cellulase and pectinase were prepared in mpapain∶mcellulase∶mpectinase ratio of 3∶4∶4 to dissolve the fruiting bodies of A. blazei. Response surface test was used to optimize the enzymatic hydrolysis process of A. blazei. Methods: On the basis of solid-phase synthesis of GYLEQ antioxidant peptide, the conditions of chelation reaction between casein GYLEQ antioxidant peptide and Ca2+ were optimized by single factor and orthogonal experiment. The structure of GYLEQ-Ca chelate was characterized by IR and SEM. Objective: This study aimed to optimize the extraction process of Porphyra haitanensis polyphenols to develop natural hypoglycemic foods. Methods: The Box-Behnken response surface method was used to optimize the extraction process of P. haitanensis polyphenols. The α-glucosidase inhibition activity was applied to evaluate the hypoglycemic activity of P. haitanensis polyphenols at different harvest periods, and the antioxidant activities of them were evaluated based on DPPH, ABTS+ radical scavenging rate and ORAC value. Taking the mung bean sprouts after drying as raw materials, the changes in the extraction amount, antioxidant activity and physical properties of mung bean sprouts polyphenols after airflow ultrafine crushing treatment were compared. The results show that the best conditions for ultrafine pulverization of air flow were as followed: pressure 0.5 MPa and speed 5 000 r/min. Compared with conventional crushing, the extraction of mung bean sprouts polyphenols increased by 10.74%. Herein, the enzymatic hydrolysis polypeptide solution with antioxidant activity was prepared by enzymatic hydrolysis with alkaline protease using sheep bone powder as raw material. Taking hydrolysis degree as index, response surface optimization was carried out on the basis of single factor tests of enzymolysis time, enzymolysis temperature, enzyme dosage and enzymolysis pH. Taking sheep bone meal solution which has not been hydrolyzed by alkaline protease as the control group, the antioxidant capacity of the hydrolysate was determined. On the basis of single factor experiment, the concentration of polyethylene glycol, liquid/solid ratio, ultrasonic power and extraction time were optimized by Box-Behnken response surface analysis. Result: The results showed that the optimal extraction conditions were concentration of polyethylene glycol 68%, liquid/solid ratio 46∶1 (mL/g), ultrasonic power 157 W and extraction time 67 min. Under these conditions, the yield of polyphenols from perilla leaves reached 18.38 mg GAE/g·DW, while the predicted value was 18.21 mg GAE/g·DW, and the accuracy of the model reached 99.08%. Oyster oligopeptides were prepared by enzymolysis from shelled oyster meat. The molecular weight distribution, DPPH radical scavenging capacity, hydroxyl free radical (·OH) scavenging capacity, ABTS free radical scavenging capacity and oxygen radical absorption capacity (ORAC) of oyster oligopeptides were compared before and after digestion in vitro. The changes of antioxidant activity of the oligopeptides after digestion in simulated stomach and intestine were explored. Objective: This study aimed to investigate the phenolic compounds profile and antioxidant activities of different fractions of Tartary buckwheat. Methods: Tartary buckwheat was ground and sieved into shell, bran and powder. Phenolic compounds in tartary buckwheat were extracted with 70% ethanol, and phenolic compounds composition and antioxidant activity of the extract were analyzed. Results: In Tartary buckwheat bran, the total phenolics and flavonoids were (3 042±31) mg GAE/100 g·DW and (5 290±233) mg RE/100 g·DW, accounting for 60.8%, 67.7% of the total Tartary buckwheat, respectively. Objective: This study focused on the antioxidant activities of eight edible fungiproteins and their hydrolysates. Methods: Eight edible fungi proteins were hydrolyzed using alkaline protease. DPPH free radical scavenging activity, ABTS free radical scavenging activity, Fe2+ chelation rate and reducing power were used to evaluate antioxidant activity. Objective:This study aimed to explore the relationship between the structure and antioxidant activity of purified red date polysaccharide ZJP-1 and sulfated red date polysaccharide S-ZJP-1.Methods:Using remnant jujube as raw material, jujube polysaccharide (ZJP-1) was purified by hot water extraction, and then separated by DEAE-52 ion exchange chromatography and Sephadex-200 dextran gel column chromatography. In this study, the water-extracted ethanol precipitation method was used to extract Polysaccharides in Pyropolyporus Formentarius (PFPS), and the capacities of scavenging DPPH and ABTS were analyzed. Different concentrations of PFPS were used to detect the resistant abilities against Escherichia coli, Staphylococcus aureus, and Bacillus subtilis, and Micrococcus tetragenus, and the relative minimum inhibitory concentration (MIC) were also determined. The results showed that PFPS could eliminate DPPH and ABTS.
